Omelette curry is one of the simple egg recipes which is regularly prepared in different subcontinents of India with their own variations. It is the most succulent and satisfying homemade Egg recipes. In this preparation, tender Egg Omelettes are simmered in spicy Onion-Tomato gravy. It is mostly accompanied with Rice items like Steamed Rice, Jeera Rice, Pulao or with any Indian Flat bread.
Indian Egg recipes are mostly prepared with boiled Eggs. But, this preparation is completely different from them. It is a very reliable recipe which can get prepared with leftover Omelettes too rather than freshly cooked Omelettes.
Egg curries are always a great option for bachelors, students and newly married homemakers. They are easy to make as compared to other non-vegetarian dishes like fish and meat.
Egg recipes are always my favourite, but Omelette curry is really close to my heart. I have grown up eating this comfort dish. My Mom used to prepare varieties of Egg curries to bring smile on my face. I am sure many Egg lovers surrounding us would have the same story to share. Egg is the favourite item for most of the kids because it is so easy to eat. This dish will be a treat to the Egg lovers.
I have learnt this epic Egg curry recipe from my Mom. Initially she used to prepare this magical dish when she got lesser number of Eggs than the family members. But me and my elder brother used to be so enchanted that it became a ritual to cook this dish once in a week.
Omelette curry with step by step photos and instructions has been provided in the ’Instructions’ section of the recipe. But before jumping into the recipe, let me share few interesting facts of the recipe.
Omelette Curry – Reason for its popularity
- It’s a very simple and easy recipe.
- It gets prepared very quickly with very less difficulty level of cooking.
- It gets prepared with very easily available common ingredients which are always present in any Indian kitchen.
- It is a highly versatile dish and can easily hook up with Parathas, Naan, Kulcha, Rotis, Pooris and even with rice items like Steamed rice, Jeera rice, Pulao etc.
- It can also be prepared with leftover Omelettes without wasting them.
How to make Omelette curry?
In this preparation, after breaking the Eggs, I have added Yogurt in them to prepare the Omelettes. It gives extra softness and fluffiness to the Omelettes. I have also added green Chillies in the Egg mixture to make the Omelettes spicy. But you can wish to ignore them if you want.
For the gravy of the curry, I have used both chopped Onions and Onion paste. Sliced Onions give better flavour to the dish and Onion paste helps for a smooth and thick gravy. For the masala paste, other than Onions, I have also used Ginger, Garlic, Tomato and green Chillies.
I have added Sugar into the gravy. It adds a mild sweetness into the gravy which helps to balance the chilli hot spice of the dish and enhances the taste. But if you are trying to avoid Sugar, then you can skip it.
I have used Bay leaves and Cumin seeds for the tempering of the dish. To flavour up the dish, I have used Cumin powder, Coriander powder, Garam Masala powder and fresh Cilantro herbs.

Ingredients:
For Omelette
- 4 Eggs
- 1 large Onion, finely chopped
- 1 Green Chilli, finely chopped
- 1 tablespoon Yogurt, whipped
- Salt to taste
For the Masala Paste
- 1 large Onion, roughly diced
- 1 Tomato, deseeded and roughly diced
- 1-inch Ginger
- 4 cloves of Garlic
- 2 Green Chillies
For the Curry
- 1 large Onion, small diced or sliced
- 2 tablespoons Cilantro, finely chopped
- 2 tablespoons Yogurt, whipped
- ½ teaspoon Cumin seeds (jeera)
- 2 Bay leaves (tejpatta)
- 1 teaspoon Turmeric powder
- 2 teaspoons Cumin powder (jeera)
- 2 teaspoons Coriander powder (dhania)
- 1 teaspoon Garam Masala powder
- 1 teaspoon sugar (Optional)
- Salt to taste
- Oil for cooking
- 1.5 cups of Water, for gravy (Quantity may vary for desire consistency)
Instructions:
- Break the Eggs and pour them into a bowl.
- Add chopped Onions, green Chilli, Salt and Yogurt into the bowl.
- Beat them nicely until all the ingredients get mixed evenly.
- Put 1 teaspoon oil into the pan and spread it to the bottom of the pan evenly.
- Once the pan is hot, pour 1/3 portion of the Omelette mixture (Step 3) into the pan.
- Cook it for some time in low flame until the bottom side is done.
- Then roll it carefully with the help of a spatula.
- Put the end edge at the bottom of the pan and cook for few seconds to seal the Omelette nicely.
- Transfer the Omelette carefully on a plate.
- Repeat the process twice and make three Omelettes.
- Cut the Omelettes into diamond pieces.
For the Masala Paste
- Put the diced Onions, Tomatoes, Ginger, Garlic and green Chillies into the jar of a grinder or blender.
- Grind them and make a smooth paste.
- Add 1-2 tablespoons water, if required and keep the masala paste aside.For the Curry
- Add oil into the same pan and put the flame in high flame.
- Once the oil is hot, add Cumin seeds (Jeera), Bay leaves (Tejpatta) and let them crackle.
- Add Onions and cook it for 2-3 minutes till it become translucent.
- Add the masala paste (Step 14) into pan and mix it nicely.
- Cook it in low flame initially for 1-2 minutes to resist the masala to splatter. Use lid if required.
- Then cook it in medium flame until it starts releasing oil.
- Add beaten Yogurt and give a nice mix.
- Cook it in low flame for 2 minutes and stir occasionally.
- Add Salt, Turmeric powder and mix it nicely.
- Cook it for another minute in low flame.
- Add Coriander powder, Cumin powder into the pan and mix it well.
- Let it cook for 1 minute in low flame.
- Add 1 cup of water into the pan and put the flame in high.
- Cover the pan and cook it till the gravy simmers.
- Put the flame in low and add the pieces of Omelettes into the pan.
- Sprinkle some Garam Masala powder on the top.
- Add chopped Cilantros and give a nice stir.
- Cover the pan and cook it for 2-3 minutes in low flame.
- Switch off the flame and put the pan down.
For Omelette
Serving Instruction
Transfer the Omelette Curry in a serving bowl or Serving plate. Serve hot or warm for the best taste. Pair up the comfort dish with rice or any Indian bread and enjoy your meal.
