Spicy Courgette (Zucchini) Curry is a delicious comfort food during summer. It is an excellent side and goes superb with rice items as well as flat breads. In this preparation, Courgettes are cooked in Onion, Ginger-Garlic paste, Tomatoes, Spices and some fresh Cilantros.
What is Courgette (Zucchini)?
Courgettes are summer squash with very thin edible skin. They are also known as Baby Marrow. It is a very famous squash which is used to prepare savouries in different continents.
Health benefits of Courgette (Zucchini)
Courgettes are low in calorie and full of water which helps us to be hydrated in summer. They are full of nutrients and contains very less fat. If you are looking for weight loss, then courgettes can become your best friend. They are good source of Vitamin A. They are full of fibre and very good for our digestive system. It helps to reduce blood pressure and blood sugar level.
How to use Courgette (Zucchini)?
Courgettes are one of the very versatile squashes and they are used in numbers of preparations. They can be eaten as raw, boiled, baked, roasted, deep fried, stir fried and many more. They are used in soups, sandwiches, salads and even in pastas.
They are very easy to digest and so are very frequently used in baby foods.
Courgettes are not the primary choice of vegetables. As they are full of water, so most of the people consider it as a dull tasted vegetable. But I am sure this Spicy Courgette (Zucchini) Curry will not give you scope to complain on it.
How to prepare Spicy Vegan Courgette (Zucchini) Curry?
This curry is full of flavours and is spicy too. I have not added green chillies to the preparation but if you like to add some hot chilli kick to the dish then you can add green chillies or chilli flakes according to your preferable taste.
In this preparation first, I have cut the Courgettes into medium size pieces with skin. Then I have cut rest of the vegetables.
I have not used any whole spice in this Spicy Courgette (Zucchini) Curry for tempering. First, I have fried the Onions till they become translucent and have then added Ginger-Garlic paste for flavouring. In this preparation, I have added Cumin powder, Coriander powder and Garam Masala powder for flavouring. At the end, I have added some chopped Cilantros which gives a soothing flavour to the dish.
Spicy Courgette (Zucchini) Curry is a very quick and easy recipe which needs regular curry spices to get prepared. Courgettes are very healthy and beneficial for our body. This dish can be a healthy addition to our regular diet without spending much time and effort.

Ingredients:
- 2 Medium Courgettes, medium diced
- 1 large red Onion, thin sliced
- 1 Tomato, deseeded and diced
- 2 tablespoons Cilantros, chopped
- 1 teaspoon Ginger-Garlic paste
- ½ teaspoon Turmeric powder
- 1 ½ teaspoon Cumin powder (Jeera)
- 1 teaspoon Coriander powder (Dhania)
- ½ teaspoon Garam masala powder
- Salt to taste
- Oil for cooking
- 1 Cup water for gravy
Instructions:
- Add oil into the pan.
- Once the oil is hot, add sliced Onions and fry them in medium flame till they become translucent.
- Add Ginger-Garlic paste and give a nice mix.
- Put the flame in low and cook them until the raw smell goes away.Tip: Cover the pan if the masala splatters.
- Add the Courgettes, Salt, Turmeric powder and give a nice mix.
- Cover the pan and cook them in medium low flame for 2-3 minutes.
- Add Tomatoes and give a nice mix.
- Cover the pan cook them in low flame for another couple of minutes.
- Cook them until the vegetables get soften.
- Add Cumin powder, Coriander powder and mix them properly.
- Cook them in low flame for a minute.
- Add water and give a nice stir.
- Put the flame in high and cook until the gravy simmers.
- Put the flame in medium low and add chopped Cilantros.
- Add Garam Masala powder and mix them.
- Cook them for another minute and switched off the flame.
Serving Instruction
Transfer the Spicy Courgette (Zucchini) Curry on a serving plate and garnish it with Carrot ball. Serve hot or warm with your favourite Indian flat bread or rice and enjoy the dish.
