Dry fruits barfi recipe aka khajur barfi recipe is a healthy and delectable Indian sweet recipe which is renowned for its zero sugar property. It is soft and chewy in texture along with the bite of nuts. This super delectable piece of delight is perfect for spreading sweetness, warmth, comfort and joy during the festive season, especially during Diwali. Khajur ki barfi is basically an Indian fudge recipe where date paste is cooked with roasted nuts and poppy seeds till turns a mass and then cut into different shapes. There is no fixed time to have this splendid barfi recipe. People grab it and devour it whenever they feel hungry.

What is Khajur barfi?

Khajur barfi, the name itself explains about the recipe. Here ‘Khajur’ means dates and the word ‘Barfi’ means sweet fudge of either diamond, square, rectangular, oval or circular shape.


What is Khajur?

Khajur is also popular as dates. It is a staple food in Middle Eastern countries. It is a small cylindrical shaped fruit which is sweet in taste. It contains a single seed which is surrounded by the fleshy pericarp. This fruit contains around 60%-70% sugar. There are different varieties of dates are available in the market. Few are black, brown and even slightly reddish in colour.

Dry fruits barfi recipe aka khajur barfi recipe is one of my favourites and whenever I talk about the sweet, it reminds me of the Diwali festive season. I really have a sweet tooth and always try to find some excuse to devour something sweet. For a person like me, Diwali is just like the moon in my hand. During this festival, the whole fridge is filled with different varieties of sweets.

I still remember how my mom used to prepare different ranges of sweets during Diwali and we used to devour them with immense pleasure. This khajur ki barfi is one of them. I learned this exemplary from my mom. It is one of the most frequent desserts which I prepare whenever I crave something sweet.

Dry fruits barfi recipe aka khajur barfi recipe is a super simple and quick recipe which requires few ingredients to get prepared. The difficulty level of cooking this dessert recipe is low and is perfect for a novice. All the ingredients required to prepare the dish are easily available in any Indian kitchen pantry. It is a full-proof recipe, and nothing can go wrong with it. The best part of the recipe is that it can be doubled or tripled in quantity by increasing the ingredients to the same proportions without investing any extra effort or time. It could be a perfect dessert option for any small party or get-together in any season.

Ingredients for Khajur ki barfi

Khajur aka dates: The primary ingredient for the recipe which provides body, colour and taste to it. It is easily available in any supermarket or grocery shop.

Ghee aka clarified butter: Another important ingredient for the recipe. It is used to fry the nuts. It provides a soothing flavour and taste to the barfi.

Chopped nuts: The addition of chopped nuts give a nice byte, flavour and richness to the barfi. You can use a choice of nuts like cashew, pistachio, almond or walnut for the recipe.

Poppy seeds: It gives a nice flavour to the barfi recipe.

I have included my tip and tricks in detail below to make the recipe easier for you on your very first attempt. But before directly jumping into the recipe, let me share a few interesting facts about the recipe and the main ingredient of the recipe dates.

Tips to prepare perfect Khajur barfi
  • Always try to buy a soft variety of dates for better texture.
  • You can buy the pitted dates to reduce your work.
  • Try to skip water during the time of grinding the dates.
  • Always dry roast the poppy seeds for better flavour and extra crunch.
  • You can use a choice of your nuts for the recipe.
  • You can make it of your desired shape like a circle, oval, rectangle, square etc. for the recipe.

How to make Khajur barfi?

To prepare the khajur barfi recipe, first take the dates and remove the seeds and make them pitted. I have directly used the pitted dates from the market to reduce my effort and preparation time. Then transfer the dates to a jar of a grinder. Close the lid of the jar and pulse it to a paste. Keep the jar aside. Try not to add water during the time of grinding the dates or else the texture of the barfi may become too soft.

Then chop the nuts and dry fruits of your choice roughly and keep them aside for later use.

Now, put a pan on flame and allow it to become completely dry. Then add poppy seeds into the pan and dry roast them over medium-low flame for 2-3 minutes until they become crispy in texture. Then transfer the poppy seeds to a different plate and keep them aside.

In the same pan, add ghee and allow it to melt. Add the chopped dry fruits and roast them over medium flame for 1-2 minutes until the colour changes slightly and a nutty aroma comes out of it. Keep them aside on a separate plate.

Now, in the same pan, add the dates paste and cook it over medium flame until the mixture turns soft, smooth and glossy. Mash the date paste nicely. Then add the roasted dry fruits and roasted poppy seeds into the mixture. Reserve a little bit of roasted dry fruits and roasted poppy seeds for later use.

Mix all the ingredients thoroughly until the mixture is well combined and then switch off the flame. Transfer the content to a separate plate and allow it to cool down slightly till it’s not touchable.

When the mixture cools down enough, make a shape of a cylinder by pressing a portion of the mixture with the help of both hands. Sprinkle the reserved roasted dry fruits and roasted poppy seeds on a clean kitchen counter and gently roll the log over it for a nice coating.

Then wrap the log tightly with aluminium foil and refrigerate it for an hour to set. After 1 hour, take out the log from the refrigerator and take off the wrap. Make 1 cm thick slices with the help of a knife. Now the dry fruits barfi is ready to serve now.

Ingredients:

1 cup = 250 ml

  • 400 gm Khajoor aka dates
  • ¼ cup Cashew
  • ¼ cup Almond
  • 1/3 cup Walnut
  • 1/3 cup Pistachio
  • 2 tablespoons Poppy seeds
  • 1 tablespoon Ghee aka clarified Butter



Instructions:
  1. First, take 400 grams of dates and remove the seeds and make them pitted. I have directly used the pitted dates from the market to reduce my effort and preparation time. Then transfer the dates to a jar of a grinder. Close the lid of the jar and pulse it to a paste. Keep the jar aside. Note: Try not to add water during the time of grinding the dates or else the texture of the barfi may become too soft.
  2. Chop the nuts and dry fruits of your choice roughly and keep them aside for later use.
  3. Put a pan on flame and allow it to become completely dry.
  4. Add 2 tablespoons poppy seeds into the pan and dry roast them over medium-low flame for 2-3 minutes until they become crispy in texture. Then transfer the poppy seeds to a different plate and keep them aside.
  5. In the same pan, add 1 tablespoon of ghee and allow it to melt.
  6. Add the chopped dry fruits – ¼ cup cashew, ¼ cup almond, â…“ cup walnut, â…“ cup pistachio and roast them over medium flame for 1-2 minutes until the colour changes slightly and a nutty aroma comes out of it. Keep them aside on a separate plate.
  7. Now, in the same pan, add the dates paste and cook it over medium flame until the mixture turns soft, smooth and glossy. Mash the date paste nicely.
  8. Add the roasted dry fruits and roasted poppy seeds into the mixture. Reserve 1 tablespoon of roasted dry fruits and ½ tablespoon of roasted poppy seeds for later use.
  9. Mix all the ingredients thoroughly until the mixture is well combined and then switch off the flame. Transfer the content to a separate plate and allow it to cool down slightly till it’s not touchable.
  10. When the mixture cools down enough make a shape of a cylinder pressing with the help of both hands.
  11. Sprinkle the reserved roasted dry fruits and roasted poppy seeds on a clean kitchen counter and gently roll the log over it for a nice coating.
  12. Wrap the log tightly with aluminium foil and refrigerate it for an hour to set.
  13. After 1 hour take out the log from the refrigerator and take off the wrap.
  14. Make 1 cm thick slices with the help of a knife. Now the dry fruits barfi is ready to serve now.

How to store Khajur barfi?

Khajur barfi recipe can be stored in an airtight container. In winter, you can keep it in a cool dry place for a week. But in summer, it’s always better to refrigerate them.

Ingredients
