How to store Atta ladoo?
Atta ladoo recipe aka atta ladoo with dry fruits is considered as one of the most anticipating winter sweet recipes. In UP, MP, Punjab and Rajasthan, it is prepared in every house during winter. They normally prepare huge batches of atta ka ladoo with plenty of whole wheat flour. Shaping the warm ladoo mixture also provides comfort to the hands during those cold days.
People believe that the ghee roasted whole wheat flour ladoo helps to keep their body warm. Atta ladoo with dry fruits is high in calorie and so it helps you to feel full for long duration. These ladoos can be stored for longer duration. So, usually people prepare it in large quantities.
Atta ladoo recipe could be a great option for long distance traveling. It is even served to pregnant women, new breastfeeding mothers who need some extra calories in their diet.
Ladoo recipe
Ladoo recipes are traditional Indian sweet recipes and different ranges of ladoos are prepared all over the country. Each ladoo recipe tastes different from the other. Atta ladoo, besan ladoo, goond ka ladoo, motichoor ka ladoo, coconut ladoo are few of the most popular versions of the classic Indian dessert recipes.
Atta ladoo with dry fruits is not only a homemade sweet recipe but it is always more than that. It contains the love, effort, skills and emotions of homemakers which always makes it more special than any market bought sweets. It is rich in texture with irresistible taste and flavour.
Atta ladoo with dry fruits requires only three basic ingredients – whole wheat flour, sugar and ghee aka clarified butter to get prepared. Addition of flavouring agent and dry fruits are completely optional. They enhance the taste, texture and flavour of wheat ladoo. The mixture of the ladoo gets prepared quickly without much effort. Though atta ladoo recipe is very simple and easy to make but it requires some skills to prepare it perfectly.
First time, I had this delight when I was in Bengaluru and one of my north Indian roommates brought a large container full of of Atta ladoos from her home after Diwali. I just loved the ladoos so much that couldn’t stick to devour only one piece.
I got the atta ladoo recipe from my friend and tried the recipe. On my first attempt, the taste was awesome but the shape of the laddus were not perfect. But on my second attempt, it came out perfect. Till now, I have prepared the wheat ladoo plenty of times and every year before Diwali it’s a must to prepare a large batch of it.
Atta ladoo recipe with step by step photos and instructions have been provided in the ‘Instructions’ section of the recipe. But before directly jump into the recipe, let me share few tips and tricks about the recipe.
Tips to prepare perfect atta ladoo
- To prepare perfect atta ladoo, the proportion of whole wheat flour and ghee is very important. If the amount of ghee is less, then the ladoo mixture will become dry and it can be quite difficult to shape them. If the amount of ghee is more, then the ladoos will become flat.
- If you feel the ladoo mixture is dry, then drizzle some warm melted ghee into the ladoo mixture and mix it well before shaping.
- Use dry fruits of your choice to enhance the taste of the ladoo.
- Don’t skip cardamom powder. It gives nice aroma to the ladoos.
- If you are preparing this ladoo for festive season, then you can add some grated dry mawa as well to make the ladoo yummier.
- Shape the ladoo when the mixture is warm. It gives better binding to the ladoos.
- Always put pressure downwards with your palm to shape ladoos. Don’t try to roll in between palms, it will break.
How to make atta ladoo?
To prepare the atta ladoo recipe, first I have grinded the sugar to a fine dust in mixer grinder. If you like, you can use jaggery powder instead of sugar.
Then I have fried the nuts in ghee. I have used cashew nuts and almond for the recipe, but you can pick nuts of your choice. Then I have coarsely ground them in mixer grinder. You can also prefer to finely chop them instead of grinding them.
After this, roast the whole wheat flour slowly until its colour turns darker and a soothing aroma comes out of it. Then transfer the ghee roasted atta on a separate plate and allow it to rest and cool down slightly.
To make the atta ladoo mixture, add powdered sugar and cardamom powder into the ghee roasted atta and mix it. Then add coarsely ground roasted nuts, raisins and mix it evenly.
Take small portion of the atta ladoo mixture and shape it to balls. Repeat the process and prepare ladoos with rest of the mixture.

Ingredients:
- 1 cup Atta (Whole wheat flour)
- ½ cup Sugar
- 1/3 cup + 1 tablespoon Ghee (Clarified butter)
- 1 tablespoon Raisin
- 15 Almonds
- 15 Cashew nuts
- ¼ teaspoon Cardamom powder
Instructions:
- First transfer ½ cup of sugar into the small jar of the mixer grinder. Then close the lid and pulse it to dust. Keep it aside.
- Put a pan on flame and let it become completely dry.
- Add 1/3 cup ghee and allow it to melt.
- Add almonds, cashew nuts and fry them on low flame for 1 minute. Then keep them aside on a separate plate.
- Transfer the roasted nuts into the jar of a grinder and pulse it to coarsely grind. You can also prefer to finely chop them with knife.
Note: I prefer to grind dry fruits to make it easier for kids to eat them.
- Add some more ghee into the pan if required and add 1 cup atta into the pan. Mix it very well.
- Fry it on medium flame for a minute. The colour of the atta will become dark. Then put the flame in low and stir it continuously for another 5 minutes until a nice aroma comes out of it. When the atta is done, the kitchen would be filled with nice nutty flavour. Taste the atta before removing from the flame to find whether its cooked or not.
Note: The cooking time may vary due to the quality of flour, quantity or due to the heat of the hob.
- Transfer the roasted atta to a separate plate.
- Add powdered sugar (Step 1), cardamom powder and mix it nicely.
- Add the coarsely grind roasted nuts (Step 5), raisin and mix it.
- Take small portion of the warm atta ladoo mixture in your hand and apply gentle pressure downwards with your palm to bind the mixture. Press it slowly and make smooth ball. Repeat the whole process and make ladoos with rest of the flour mixture.
Serving Instruction
Serve the atta ladoo with dry fruits anytime, anywhere and enjoy the winter delicacy. In fact, it does not require any serving. People take it from container and have it directly.
How to store Atta ladoo?
Atta ladoo recipe can be stored in an airtight container. In winter, you can keep it in a cool dry place for 20-25 days. But in summer its always better to refrigerate them.
