As a bong, I have been brought up eating rosogolla, Sandesh, chamcham and various other Bengali sweets prepared with chena. My dad used to buy fresh Bengali sweets from sweet shops regularly. Having a sweet after finishing the lunch is like a ritual in our family. I hardly found any day since my childhood when there was no sweet in the refrigerator.
I still remember how my dad used to buy chenna murki from one of our regular sweet shops. When mom used to bring it to the dining table, it disappeared within few minutes.
Chena murki recipe is a complete life saviour for all the housewives who encourage home cooking. It is a simple and super easy recipe. It requires only 3 simple ingredients to get prepared except the flavouring agents which are optional. The best part is that though it is an easy recipe but still it tastes extraordinary and can be prepared in huge quantity without investing any extra effort.

Tips to prepare perfect chena murki
- Always make small pieces of paneer for chena murki recipe. Large pieces may not get cooked properly.
- Don’t skip the flavouring agents. It enhances the taste of chenna murki.
- Don’t add paneer into the syrup before the single thread consistency appear. Or else, the paneer will get overcooked with the syrup and may break.
- Stir the paneer continuously into the syrup for even coating.
How to make chenna murki?
To prepare chena murki recipe, first take paneer and cut them into small cubes. Anyways, the size of the pieces will increase slightly after getting coated with sugar.
Freshly prepared paneer works best for the recipe, but you can use market bought paneer too. But try to use soft paneer which is easily available in sweet shops rather than refrigerated hard packaged paneer.
Then take a pan and add sugar and water into it to make syrup of one thread consistency. Once the sugar melts, add cardamom powder into it and give a mix.
Add the paneer pieces into the syrup and cook it in medium flame until the moisture evaporates and sugar syrup gets thick white in texture. Add some rose water for extra flavouring. Then place the pan on a grill and stir it continuously with a spatula. Once the mixture cools down and sugar get coated properly to the paneer pieces, take them out to a different plate. Your sweet juicy and delectable chena murki is ready within 15 minutes.
Store the extra sugar of the pan into a container for later use. You can use the sugar to prepare tea, coffee, halwa, sheera etc.

Ingredients:
1 cup = 250 ml
- 225 grams Paneer, small cubes
- ¾ cup Sugar
- 1/3 cup Water
- 1 teaspoon Rose water
- ¼ teaspoon Cardamom powder (Elaichi powder)
Instructions:
- First take paneer and cut them into small cubes. Keep them aside.
- Take a wide utensil and add ¾ cup sugar, 1/3 cup water to make a syrup.
- Put the flame on high and stir it on regular interval till the sugar melts completely.
- Boil the syrup on high flame for 1-2 minutes until one thread consistency appears.
- Add ¼ teaspoon cardamom powder (Elaichi) into the syrup and give a nice mix.
- Add paneer pieces into the syrup and cook it in medium flame for 5 minutes.
- Add 1 teaspoon rose water into the pan and give a nice mix.
- Cook the mixture over medium flame till moisture evaporates and sugar syrup gets thick white in texture. Stir continually.
- Now place the pan on a grill and stir it continuously with a spatula until the sugar syrup dries up.
- Once the sugar gets coated properly to the paneer pieces, take them out to a different plate.
Serving Instruction
Transfer the chena murki in a serving bowl and serve this delicious Bengali sweet immediately as a snack with tea or coffee and enjoy the Bengali delicacy.
How to store chena murki?
You can store it in an airtight container into refrigerator up to 2 days but it’s always better to consume within 24 hours. The sugar coating may melt if it is kept for longer.
