Chicken Do Pyaza is a succulent Chicken curry recipe Indian which is immensely popular in the subcontinents of South Asia. It is known for its unique texture and supreme taste. Chicken Do Pyaza is prepared by combining marinated chicken with Onions, Ginger-Garlic paste, Tomatoes, Yogurt and some spices. It is a super versatile dish which can be relished with any rice item like Steamed Rice, Jeera Rice, Pulao or with any Indian flat bread.
According to historians, Do Pyaza dish was first invented when Mullah Do Piaza, one of the nine gems of Mughal emperor Akbar, had accidentally added a large quantity of Onions to a dish. The recipe later developed in India, Pakistan and many other countries. Now, it has become a part of Mughal cuisine. Now a days, Chicken Do Pyaza has become immensely popular in India and become a part of Indian cuisine too.
There is one more theory which is also believed by people about Do Pyaza dish. There are two different forms of Onions that are added to the dish at two different stages of cooking. One form is chopped, and another one is diced. So, in the name Do Pyaza, ‘Do’ stands for ‘Two’ and ‘Pyaza’ stands for ‘Onion’.
Many people also say that in Do Pyaza dish, the amount of Onion that is added is double the quantity of meat. So, it is named so.
According to many old tales, in Do Pyaza dish only two Onions are used and so it is named Do Pyaza. But I don’t find any logic in it because any chicken or meat dish cannot be prepared with only two Onions without considering the quantity of the meat.
I am very fond of recipe for chicken curry and always try different curries in my kitchen. As belong to a Bong family, I have grown up eating delicious Chicken curries in almost every Sundays of my life. In fact, I don’t remember when I had this luscious Chicken Do Pyaza recipe for the first time in my life. But I do remember when I first prepared this dish on my own.
When I have prepared Chicken Do Pyaza for the first time, my family thoroughly enjoyed the dish and admired my cooking. Now it has become one of our regular but affectionate chicken dishes for weekends. Till now, I have prepared this dish more than twenty times and it has never disappointed me.

How to make Chicken Do Pyaza?
To prepare this Chicken Do Pyaza recipe, first, I have washed and cleaned the Chicken pieces thoroughly. Then I have marinated the Chicken with Ginger Garlic paste, Salt, Turmeric powder, Chilli powder, Cumin powder, Coriander powder and freshly squeezed Lemon juice and covered it for 45 minutes.
For the chicken with curry recipe, I have tempered whole spices Cinnamon sticks, Cardamom, Cloves, Bay leaves and Cumin seeds. Then I have added sliced Garlic into the oil to make oil aromatic.
I have used two different forms of Onion for the curry. First, I have used the thin sliced Onions before adding the marinated Chicken into the pan. I have added the diced Onions when the chicken was almost 80% done.
For the Chicken Do Pyaza curry, I have used both Yogurt and Tomatoes. In Chicken Do Pyaza preparation, lots of Onion is used and this makes the curry a bit sweet in taste. To balance the taste of the dish, Yogurt and Tomatoes work great together.
I have whipped the Yogurt with ground spices like Cumin powder, Coriander powder, red Chilli powder, Garam Masala powder and then added this mixture to the curry to make it flavoured.
At the end, I have added some chopped Cilantros and extra Garam Masala powder. It enhances the flavour of the dish. The texture of Chicken Do Pyaza gravy is neither too thick nor too thin. So, I have added moderate amount of water for the curry.

Ingredients:
To marinate the Chicken
- 1 kg Chicken, medium pieces with bones and skin off
- ½ tablespoon Ginger-Garlic paste
- 1 teaspoon Turmeric powder
- 1 teaspoon Red Chilli powder
- 1 teaspoon Coriander powder
- ½ teaspoon Cumin powder
- ½ Lemon, squeezed out fresh juiced
- 1 teaspoon Salt
For the Yogurt Masala
- 2 tablespoons Yogurt, whipped
- 1 teaspoon Red Chilli powder
- ½ tablespoon Coriander powder
- 1 teaspoon Cumin powder
- ½ teaspoon Garam masala powder
Rest of the ingredients for the Curry
- 4 medium Onions, thin sliced
- 2 Onions, diced and separated
- 2 Tomatoes, small diced and deseeded
- 2 Tomatoes, large diced and deseeded
- 2 tablespoons Cilantro, chopped
- 8-10 cloves of Garlic, sliced
- 1 tablespoon Ginger-Garlic paste
- 2 Cardamoms
- 3 Cloves
- 2 Bay leaves
- 3-inch Cinnamon stick, broken
- ½ teaspoon Cumin seeds
- 1 teaspoon Turmeric powder
- 1 teaspoon Garam masala powder
- Oil for Cooking
- Salt to taste
- 2 cups of Water for Gravy
Instructions:
- Wash and clean the chicken pieces and keep them in a large mixing bowl.
- Add Ginger Garlic paste, Salt, Turmeric powder, Chilli powder, Cumin powder, Coriander powder and freshly squeezed Lemon juice into the chicken.
- Mix all the ingredients thoroughly so all the chicken pieces get coated evenly with the spices.
- Cover the bowl and allow it to rest for 45 minutes.
- Take 2 tablespoons of Yogurt in a bowl.
- Add Cumin powder, Coriander powder, red Chilli powder, Garam Masala powder into the yogurt and whip it thoroughly. Make sure no lumps of spices are there in the yogurt.
- Keep the Masala yogurt aside.
- On the other hand, take a pan on flame.
- Add oil into the pan and wait until the oil is hot.
- Add the whole spices – Cinnamon sticks, Cardamom, Cloves, Bay leaves and Cumin seeds into the pan and let them crackle.
- Add sliced Garlic into the pan and fry them till golden.
- Add thin sliced Onion pieces and fry them in medium flame for 5-6 minutes. Stir in between.
- Add Salt, Turmeric powder and give a nice mix.
- Cook the Onions in medium flame for another couple of minutes.
- Add Ginger-Garlic paste and cook them until the raw smell goes away.
- Cover the pan and cook them in medium flame for another 10-12 minutes until the Onions get tender. Stir in between.
- Add the chopped Tomatoes and mix it nicely.
- Cover the pan and cook them for 4-5 minutes in low flame. Stir in between.
- Add the Masala yogurt (Step 7) into the pan and give a nice mix.
- Cover the pan and cook it in low flame for 2 minutes.
- Add the marinated Chicken into the pan and give a nice mix.
- Cover the pan and cook it in medium flame for 20 minutes till the Chicken starts releasing oil.
- Add the diced Onions, green Chillies and give a generous mix.
- Cover the pan and cook it in medium flame for another 3-4 minutes.
- Add the Tomato chunks and give a nice stir.
- Cover the pan and cook it in low flame until the Tomato gets tender.
- Add water and give a quick mix.
- Cover the pan and put the flame in high until the gravy simmers.
- Put the flame in low and cook it for 5 minutes.
- Sprinkle some Garam Masala powder, chopped Cilantros and give a nice mix.
- Switch off the flame and put the pan down.
Serving Instruction
Transfer the Chicken Do Pyaza into a serving bowl or on a serving plate. Always serve hot or warm to enjoy the best taste. Pair up the succulent Chicken Curry with any of your favourite Rice item or flat bread and enjoy the Indian delicacy.
