I am a Broccoli lover and always keep on experimenting new dishes with this healthy green vegetable especially Broccoli recipe Indian. It is very healthy as well as easily adaptable to our daily life. It is one of the most versatile green vegetables I have ever seen in my life. The best part of this vegetable is that it can be eaten both raw and cooked. Sometimes I add small raw broccoli florets in my regular salad recipes.
Dahi Broccoli is the fruitful result of one of the experiments of my kitchen. As a Bong, I have nostalgia for any Yogurt preparation. In Bengali cuisine, there are many iconic dishes whose gravy is primarily based on Yogurt like Doi Ilish, Doi Begun and many more.
One day I had just had only one Broccoli head in my refrigerator. As I was thoroughly checking to find out what else I had in my pantry, I suddenly got a call from my Mom. She said that she had cooked Doi Patal (Snake gourd in Yogurt Sauce) for the lunch. Then I came up with the brilliant idea to prepare Dahi Broccoli which I paired up with plain Rice.

How to make Broccoli Sabzi?
First to reduce the time of cooking of the Broccoli recipe Indian, I have microwaved the Broccolis in full power for few minutes. If you don’t have microwave, no worries, you can blanch them in hot water for 2-3 minutes. In any case, if you want to skip this step then you can directly cook them in pan. But it will take more Oil for Broccolis to get cooked and a little longer for them to get tender too.
Then for the Dahi Broccoli gravy, I have added Honey, chopped Cilantros and Garam Masala powder into the whipped yogurt and whisked nicely before adding into the gravy. I have added the yogurt into the curry as last ingredient to stop curdling.
First, I have fried the Onions and then added Ginger Garlic paste. I have not used Tomatoes in this dish because the merge of tangy Tomatoes and the sourness of Yogurt may disbalanced the taste.
In this broccoli recipe vegetarian, I have used Cumin seeds, Fennel seeds, Cardamoms and dry red Chilli for the tempering. Other than these, I have used Cumin powder, Coriander powder, Garam Masala powder and chopped fresh Cilantro herbs for flavouring. This dish is full of flavours.
To cut the sourness of Yogurt in the Dahi Broccoli gravy, I have added some Honey to the preparation. You can also use Sugar instead of Honey. But I have used honey to uphold health with taste.
To prepare a yogurt curry recipe, it is very important to add Yogurt in correct way to stop curdling. Here I am sharing few tips and tricks for yogurt-based gravy.
