What is dhokla?
Dhokla recipe is an immensely popular gujrati snacks recipe which is immensely loved by the whole nation. It is a savoury cake recipe prepared with gram flour batter and is either steamed or baked. It is soft, spongy, fluffy and juicy in texture and is slightly sweet and salty in taste. It is mostly relished as snacks, breakfast or brunch with green chutney, tamarind chutney and fried chillies.

Leftover dhokla recipes
Dhokla is one of the most popular vegetarian indian snacks recipes in the subcontinents of India and is frequently served in functions like tea party, kitty party, get together, marriages etc. It is very common thing to have leftover dhokla in households.
But we don’t prefer wasting food and so many other new dishes get evolved while we try to reuse them. Butter chicken is one of the biggest examples of use of leftover tandoori chicken which has now become a signature dish worldwide.
In the same manner, rather than wasting leftover dhoklas, it can be used to prepare delicious snacks recipes like dhokla chaat, dhokla upma, dhokla fry and many more.
What is dhokla chaat?
Dhokla chaat is a fusion of classic gujrati snacks ‘Dhokla’ and the Indian street food ‘Chaat’. In this preparation, soft and fluffy dhoklas play the role of base for the dhokla chaat recipe similarly like papdis for papdi chaat or aloo tikki for aloo tikki chaat recipe. Here the dhoklas are served with common chaat elements like different chutneys, yogurt, sev, chopped veggies and sprinkle of spices.
Indian street food has always been a centre of attraction in Indian cuisine. Especially, recipe for chaat plays a remarkable and unforgettable part in it. Recipes of Chaat is known for its amazing flavours, different layers of texture and combinational taste which tickles all the taste buds of mouth and dominates the senses. All these reasons have been drooling people for chaat recipes since decades. Though it is easily available in every small towns, cities, villages of India but people never feel enough or get bored of it.
I used to eat many recipes for chaat from the street venders when I was in India. But after coming to London, I started missing those delight very badly. Though there are many Indian street food stalls in London, but every time it is not possible to go that far for the treat. So, I decided to prepare chaat recipes at home and till now, I have already tried many chaat recipes at home.
I prepare most of the recipes for Chaat at home very easily. It not only makes the chaat yummier & healthier but also gives me an inner satisfaction. I serve my handmade chaat recipes to the elders and kids of my family without a pinch of hesitation. A homemade snack is always an ideal treat for everyone.
3 years ago, before this covid attack, I had prepared dhokla in microwave for snacks on Diwali party and that was a huge hit. After the party, I had few leftover pieces of dhokla which I didn’t want to waste. So, I refrigerated them. On the next day, I prepared dhokla chaat for breakfast with them. My family just loved the preparation and now whenever I prepare dhokla, they always insist me to reserve few pieces for preparing dhokla chaat.
Dhokla chaat is a very simple and easy recipe. It gets prepared very quickly without investing much time and effort. It just a matter of minutes to prepare a plate of dhokla chaat if your dhokla and chutneys for chaat is ready in advance. It could be a perfect starter for any get together, kitty parties and for small birthday parties.
Whenever I plan to prepare any recipe for chaat at home, first I prepare chutneys for chaat a day before and refrigerate them. It makes the chaat recipe handy. I usually prepare Green Chutney and most essentially Sweet Tamarind Chutney for the dhokla chaat recipe. Recipes of Chaat
There are hundreds of salivating recipes of chaat that are prepared in India. Bhel puri, Sev puri, Ragda Pattice, Aloo tikki Chaat, Masala Puri, Katori Chaat, Pani puri and many more recipes that are prepared every day in each chaat corner of India. Dhokla chaat is a fusion chaat recipe which can satisfy your instant craving for chaat. In India, it is almost impossible to find a person who is not in love with the recipes of chaat.
Tips to prepare perfect dhokla Chaat
- Add both tamarind chutney and green chutney. It enhances the flavour of the dish.
- Add generous amount of sev for perfect bite.
- Add yogurt. It gives refreshing flavour and tangy taste to the chaat.
Frequently asked Questions
Can I use fresh dhokla instead of leftover dhokla?
Yes of course. Both fresh dhokla and leftover dhokla can be used for the recipe.
Can I use instant dhokla mix to prepare the dhokla?
Yes, you can. In fact, you can also use ready-made dhokla from stores to prepare the dhokla chaat.
Can I use other dhokla instead of khaman dhokla for the recipe?
To prepare gluten free aloo tikki chaat, don’t use all-purpose flour to prepare the tikkis. Instead of that, you can use either rice flour or semolina for the recipe.
Can I make dhokla chaat vegan?
Yes of course. You can do it in two different ways. You can either skip the yogurt and increase the amount of chutneys for the dhokla chaat or you can use dairy free yogurt like soya yogurt or coconut yogurt for the recipe.
Can I use tomato ketchup instead of sweet tamarind chutney?
Yes, you can. But you then need to compromise in taste and flavour.
How make dhokla chaat?
To prepare dhokla chaat, first I have prepared two different types of chutneys for chaat that is green chutney and sweet tamarind chutney a day before.
Then take yogurt into a large bowl and add some sugar into it. Whisk the yogurt thoroughly with a fork or whisker until its smooth and creamy.
To prepare any Chaat recipe, it is very important to assemble all the ingredients before you start plating.
For plating, I arranged the dhokla pieces on a plate. Then added dollop of yogurt on the dhoklas.
Then I drizzled some Imli ki chatni and green chatni on the top and then sprinkled some chaat masala and Roasted Cumin Powder on it.
Then add chopped onions, coriander leaves and green chillies, one by one on it.
For the final touch, sprinkle generous amount of sev and top with some pomegranate arils. Sprinkle some red chilli powder, black salt on the top and your dhokla chaat is ready to serve.
The best part of preparing any chaat recipe is that there is no hard and fast rule to prepare it. Chaat is the combination of sweet, tangy, salty and heaty taste and you can adjust things according to your choice. As an example, I always go heavy with the Sweet Tamarind Chutney for the recipe.

1 cup = 250 ml
- 8 pieces Khaman dhokla
- 2 tablespoons Sweet Tamarind chutney (add the amount accordingly)
- 2 tablespoons Green chutney (add the amount accordingly)
- ¼ cup Yogurt (Add the amount accordingly)
- 1 teaspoon Sugar
- ½ teaspoon Chaat masala
- ¼ teaspoon roasted Cumin powder
- ¼ teaspoon red Chilli powder
- ¼ teaspoon black Salt
- 1 tablespoon Onion, finely chopped
- 1-2 tablespoons Coriander leaves, finely chopped
- 1 green Chilli, finely chopped
- 1 tablespoon Pomegranate arils
- 2-3 tablespoons Nylon Sev
Instructions:
- Take ¼ cup Yogurt in a mixing bowl. Add 1 teaspoon sugar into the yogurt and whisk it nicely. Keep the yogurt aside.
- Arrange the dhokla pieces on a plate.
- Pour the yogurt mixture on the dhoklas.
- Drizzle 2 tablespoons green chutney and 2 tablespoons sweet tamarind chutney, one by one on the top.
- Sprinkle ½ teaspoon chaat masala, ¼ teaspoon roasted cumin powder on the dhokla chaat.
- Add 1 tablespoon chopped onions, 1 chopped green chilli, 1-2 tablespoons chopped coriander leaves one by one on the dhokla chaat.
- Sprinkle 2-3 tablespoons nylon sev and 1 tablespoon pomegranate arils on the top.
- Sprinkle ¼ teaspoon red chilli powder and ¼ teaspoon black salt at the end on the dhokla chaat.
- Now the dhokla chaat is ready to serve.
Serving Instruction
Serve the dhokla chaat immediately after preparing it. Enjoy the splendid chaat as snacks or breakfst with your family and friends with lots of gossips.
