Apple turnover is a sweet puff pastry recipe that is readily available in the bakery section of any supermarket. The unparalleled popularity of the pastry might be the reason behind it. They are flaky and crusty from the outside and with large air pockets inside. A single bite is the perfect combo of taste, crunch, and burst of flavours. It is a very popular snack among students and youngsters.
Apple turnovers are normally prepared in two different ways.
Classic plain apple turnover: The pastries are stuffed with sweet cinnamon apple filling and after baking, dusted with icing sugar to make it more attractive. It is normally served fresh and warm to enjoy its best taste.
Cream-filled apple turnover: These pastries are always served cold or else the cream may melt. Once the pastries are baked and cooled off completely, a small slit is done on the pastry to pipe the whipped vanilla cream into it.
The classic apple turnover tastes like warm apple crust pie and on the other hand, cream-filled apple turnovers taste like cold apple pie with some ice cream. Both types are delectable but today, I am going to share my personal favourite classic plain apple turnover recipe with you.
The recipe for apple turnover has always been one of my favourite tea-time snack recipes. I have tried and tasted so many cafes’, bakeries’, and supermarkets’ apple turnovers but still, I must say nothing can beat the taste of freshly baked homemade apple turnovers.
If you have a store-bought pastry sheet then it is just a matter of 30 minutes to prepare these tasty divines at home. It could be a perfect treat to celebrate autumn. Once you put these pastries into the oven for baking, the whole house starts smelling like divine in a few minutes.
As the turnovers are always readily available in bakeries, I never tried my hands on it until the pandemic came. During the COVID lockdown, I started craving the pastries desperately and decided to prepare them at home. Once I prepared the homemade apple turnovers, then I never turned back. Since I prefer to bake the triangular divines at home other than buying from outside. It is not only budget-friendly but even tastes much better than market-bought ones.
This homemade apple turnover is full-proof, and nothing can go wrong with it. With tender caramelized apple filling with a hint of cinnamon and buttery pastry puff all together makes an irresistible combination. I have used readymade pastry sheets which makes my job immensely easier. It is a huge hit in my family and they always ask me to prepare it frequently.
Apple turnover recipe is very simple and easy to make. It only requires a few handfuls of ingredients to get prepared. All the ingredients used for the recipe are easily available in any supermarket. The best part of the recipe is that you can prepare it in larger batches without investing any extra time and effort. So, it could be a great option as a snack for occasions like small parties, family get-togethers, etc.
Apple turnover ingredients
Puff pastry sheet: The primary ingredient of the recipe that provides taste, texture, and body to the dish. I have used a readymade puff pastry sheet for the recipe. If you like to use homemade dough then go for it.
Apple: It is the primary ingredient of the stuffing. I have used a royal gala apple to prepare the filling.
Brown sugar: The addition of brown sugar adds sweetness to the filling and the apple cubes get cooked into the sugar syrup.
Cinnamon powder: It gives a nice flavour to the filling. The combination of apple and cinnamon goes great with each other.
Butter: The apples are initially cooked in butter for some time. The addition of butter gives a nice flavour and taste to the filling.
Corn flour and water: Corn flour and water are used to prepare slurry which is added to the filling at the final stage to thicken the sugar syrup so that the filling does not become runny.
Icing sugar: Icing sugar is dusted on the top of the puff pastries after baking.

If you follow the steps carefully, you will get perfectly flavoured and flaky apple turnovers. I have included all the tips and tricks to prepare perfectly crispy pastry in a single attempt.
Tips to prepare perfect Apple turnovers
- Always select good-quality apples for the recipe. I have used royal gala apple for the recipe but you can also use pink lady or other variety.
- Always peel the apples and cut them into small pieces. Large chunks do not give a nice texture.
- Roll the puff pastry sheet once for better finishing.
- Don’t add too much stuffing into each puff pastry or else the edge may get open during the time of baking.
- You can adjust the amount of sugar in the stuffing according to your preference.
- Don’t forget to brush the puff pastry with milk before putting it into the oven. It gives a nice hue.
- Add corn flour slurry at the final stage of preparing the filling for better texture.
How to make Apple turnovers?
To prepare the homemade apple turnovers, first, we need to prepare the apple stuffing. To prepare the filling we need good quality apples. First, wash the apples and peel them. Then core the apples and cut them into small dice.
Now, put a pan on flame and allow it to become completely dry. Then add a little bit of butter into the pan and allow it to melt. Then add chopped apples into the pan and cook it on a medium flame for 2-3 minutes.
After this, add brown sugar, cinnamon powder into the pan and mix it well. Cook it over low flame for 7-8 minutes until the apples get tender.
In the meantime, take a small bowl and add some corn flour to it. Add a little bit of water and mix it thoroughly to make a slurry.
Add the slurry into the pan and mix it well. Cook it for another couple of minutes over a medium flame so the sugar syrup gets thicker. Turn off the flame and allow the filling to cool off completely.
Take out the puff pastry sheet 30 minutes before use from the fridge. Unpack the pastry sheet and spread it over a butter paper. Roll it once all over with a rolling pin. Now, cut the pastry sheet into 4-inch square pieces.
Brush the edges of the puff pastry sheet with milk. I have used milk to keep the recipe vegetarian. You can use whisked eggs as well. Then add 1½ tablespoons of stuffing to the pastry sheet piece and fold it into a triangular shape by bringing the opposite corner up. Seal the edges of the puff pastry with the help of a fork. Repeat the same process with the rest of the pastry sheet squares.
In the meantime, preheat the oven for 10 minutes 390°F/200°C/180°C Fan
Line the baking tray with parchment paper and make it ready. Transfer all the triangular apple turnovers to the baking tray. Make 3 slits on the top of each pastry puff gently. Now brush all the pastries with milk.
Place the baking tray in the middle of the preheated oven for 20 minutes. Take out the baking tray and allow it to cool off for 5 minutes. Dust the icing sugar on the top of it. Now the quick and easy apple turnovers are ready to serve.
