Marrow Curry is one of the most comfort Vegetable Curry dishes. It is a very quick and simple recipe cooked in India spices. In this preparation, Marrow is cooked with few spices in Onion and Tomato gravy. It is one of the healthiest summer recipes and is mostly accompanied with rice items or flat breads.
Marrow is a quite uncommon vegetable in India. In fact, while I was in India, I never heard the name of this vegetable squash. But in the UK, Marrow is a very common and popular summer squash. After coming to the UK, I have seen the huge popularity and availability of Marrows in supermarkets as well as vegetable shops during summer.
One day, I have spotted Marrows in a vegetable shop in London and curiously grabbed one from there. Then I have decided to prepare something spicy with this summer squash and nothing can be better than the preparation of spicy curry of the squash. Since then I started my journey to prepare Vegetarian Marrow Recipes. Till date, I have already prepared tons of recipes with this squash including Marrow Soups and Marrow chutneys.
Marrow Curry is a very easy recipe which requires very minimal and easily available ingredients to prepare the dish. The best part of the recipe is that it gets prepared within half an hour without any hassle including the preparation time as well. When I have prepared this dish for the first time, my family loved the dish and complemented my cooking. Generally, I pair up this dish with Steamed rice, Jeera Rice or with Indian flat breads.

What is Marrow?
They are large green squash which are mostly available in summer. They are white, soft and fleshy from inside and have neutral flavour. They have thin and soft skin from outside. Mostly they get watery during the time of cooking. Marrows are hugely popular in the Great Britain.
Marrow is one of the most versatile summer squashes which is used for preparing soups, cakes, desserts, curries, fries and many more. In English cuisine, it is mostly cooked by baking it.

  • They are full of proteins and nutrients which helps to get rid of many health issues.

How to cook Marrow Curry?
In this preparation, first, I have peeled and cut the Marrow in medium sized pieces for frying. Marrow has the tendency to become watery during the time of cooking and gets mashed easily. So, I did not prefer smaller pieces of it.

I have used Cumin seeds for the tempering of the dish. It gives a nice aroma to the dish. Then I have fried the sliced onions for some time and added Ginger-Garlic paste to cook it further. Marrow does not have any flavour on itself. So, each of these ingredients are equally important to flavour up the dish.
In this recipe, I have used Tomatoes. It adds a ting of tanginess to the dish which enhances the taste of the curry. I have used Cumin powder, Coriander powder, Garam Masala powder and fresh Cilantro herbs for flavouring of the dish. In this recipe, I have only used green Chillies to give a spicy kick to the curry. If you like spicy food, then you can also add Chilli powder with it.
This Curry recipe does not require any masala paste. So, though the gravy of the dish is a bit thin in texture but not tasteless and runny.

Ingredients:

  • 250 grams Marrow, peeled and medium diced
  • 1 large Onion, thin sliced
  • 1 tablespoon Ginger-Garlic paste
  • 1 Tomato, deseeded and diced
  • 1-2 tablespoons Cilantro, chopped
  • 2 green Chillies
  • ¼ teaspoon Cumin seeds
  • 1 teaspoon Turmeric powder
  • 1 ½ teaspoon Cumin powder
  • 1 ½ teaspoon Coriander powder
  • 1 teaspoon Garam Masala powder
  • Salt to taste
  • Oil for cooking
  • 1 to 1 ½ Cups of water, for gravy

Instructions:
  1. Put Oil into the pan and wait until the Oil is hot.
  2. Add Cumin seeds and let them crackle.

  3. Add Onions and cook it for 2-3 minutes in medium high flame.

  4. Cook them until the Onions become translucent. Stir in regular intervals.
  5. Add Ginger-Garlic paste and give a nice mix.

  6. Cook them in medium flame until the raw smell goes away.
  7. Add Marrow pieces, green Chillies and stir them properly.

  8. Cover the pan and cook them in medium high flame for 4-5 minutes. Stir in between.
  9. Put the flame in low and add Salt, Turmeric powder and mix all the ingredients nicely.

  10. Add Tomatoes and give a nice stir.

  11. Cover the pan and cook them for 6-8 minutes in low flame until the marrow gets cooked. Stir occasionally.
  12. Add Cumin powder, Coriander powder and mix them nicely.

  13. Cook them in low flame for a minute.
  14. Add water and give a stir.

  15. Cover the pan and put the flame in high until the gravy simmers.
  16. Put the flame in low and take off the lid.
  17. Sprinkle chopped Cilantros, Garam Masala powder into the pan and give a nice mix.

  18. Cook them in high flame for another minute.
  19. Switch off the flame and put the pan down.

Serving Instruction
Transfer the Marrow Curry into a serving plate or serving bowl and serve hot or warm for the best taste. Pair up the side dish with rice items or with any Indian flat bread like Rotis, Parathas or Pooris and enjoy the cosy taste of the comfort dish.
