Marrow Fry is one of the most comfort dishes of Vegetarian Marrow Recipes. It is a very quick and simple recipe which is prepared by combining Marrow with Onions, Garlic and fresh Cilantros. It is one of the healthiest summer recipes and can be a great side with rice items or flat breads.
Marrow is a quite uncommon vegetable in India. In fact, while I was in India, I never heard the name of this vegetable squash. But, in the UK, Marrow is a very common and popular summer squash. After coming to the UK, I have seen the huge popularity and availability of Marrows in supermarkets as well as vegetable shops during summer.
On one fine day in London, while buying vegetables, when I saw Marrows, I decided to buy one and prepare something with this summer squash. Since then, I started my journey to prepare Vegetarian Marrow Recipes. Till now, I have already prepared number of recipes with this squash.
Marrow Fry is a very easy recipe which requires very limited and common ingredients to get prepared. It gets prepared within half an hour including preparation time without any hassle. When I prepared this dish for the first time, my family loved the preparation. I have paired up the dish with Dal-Chawal and completed my meal.
Marrow Fry with step by step photos and instructions has been provided in the ‘Instructions’ section of the recipe. But before jumping into the recipe, I would like to share few interesting facts about Marrow and the recipe.
What is Marrow?
Marrow is a large green squash which is mostly available in summer. It is white, soft and fleshy from inside and has a neutral flavour. It has a thin and soft skin from outside. Mostly it gets watery during the time of cooking. Marrows are hugely popular in Great Britain.
Marrow is one of the most versatile summer squashes which is used for preparing soups, cakes, desserts, curries, fries and many more. It is mostly cooked by baking in English cuisine.

- Marrows are full of fibre. They are very good for our digestive system and helps to get rid of constipation.
- They are very rich source of Vitamin C and helps to control cholesterol of our body.
- They are full of proteins and nutrients which helps to get rid of many health issues.
- Marrow has very less calories which helps a lot for weight loss.
How to cook Marrow for the recipe?
In this preparation, first I have peeled and made medium sized pieces of Marrow for the fry. Marrow has the tendency to become watery during the time of cooking and gets mashed easily. So, I did not prefer to make small pieces of it. In fact, I have not used any lid or cover during the time of cooking to avoid the fry to become watery.
I have only used Onions, Cilantros and Garlic powder for the flavouring of the dish. If you don’t have Garlic powder, then you can also use Garlic paste instead of that.
I have not used any spice other than Turmeric powder for the recipe. Marrow itself does not have any flavour. So, Onions, Cilantros and Garlic powder give a nice and soothing flavour to the dish.

Ingredients:
- 250 Grams Marrow, peeled and medium diced
- 1 large Onion, thin sliced
- 2-3 tablespoons Cilantro, chopped
- ½ teaspoon Garlic powder
- ½ teaspoon Turmeric powder
- Salt to taste
- Oil for cooking
Instructions:
- Put Oil into the pan and wait until the Oil is hot.
- Add Onions and cook it for 2-3 minutes in medium high flame until it becomes translucent.
- Add Marrow pieces and stir it properly.
- Cook it in medium high flame for 3-4 minutes and stir frequently.
- Put the flame in low and add Salt, Turmeric powder, Garlic powder.
- Mix all the ingredients nicely.
- Cook it for 6-8 minutes in low flame until the marrow gets cooked. Stir occasionally.
- Cook it in high flame for a minute and stir frequently to evaporate the extra moisture.
- Sprinkle chopped Cilantros into the pan and give a nice mix.
- Switch off the flame and put the pan down.
Serving Instruction
Transfer the Marrow Fry into a serving plate or serving bowl and serve hot or warm for the best taste. Pair up the side dish with Rice and Dal or with any Indian flat bread like Rotis, Parathas or Pooris and enjoy the cosy taste of the comfort dish.

This is a summer squash which is similar to bottle gourd (Lau) but not the same. You can try the same recipe with bottle gourd too.
Is it bottle gourd? Lau in bengali ? Wow. It's completely a new dish gor me .
