How to make shimla mirch besan ki sabji?
Ingredients:
- 3 tablespoons Besan or Chickpea flour
- 2 Capsicums or Bell peppers, deseeded and diced
- 1 Onion, finely chopped
- 2-3 cloves of Garlic, chopped
- 3 tablespoons Coriander leaves or Cilantro, finely chopped
- 2 dry red Chillies
- 8-10 Curry leaves
- ½ teaspoon Mustard seeds
- ¼ teaspoon Asafoetida (Hing)
- ½ teaspoon Turmeric powder
- 1 teaspoon red Chilli powder
- ¾ teaspoon Cumin powder
- ¾ teaspoon Coriander powder
- Salt to taste
- Oil for cooking
Instructions:
- Put a pan on flame and let it become completely dry.
- Add 3 tablespoons besan and dry roast it in medium low flame for 2-3 minutes until the besan changes its colour slightly and a nutty aroma comes out.
- Transfer the besan in a separate bowl and keep it aside.
- Add oil into the same pan and wait until the oil is hot.
- Add ½ teaspoon mustard seeds, 2 dry red chillies, 8-10 curry leaves, ¼ teaspoon hing into the pan and give a stir.
- Once they crackle, add chopped garlic into the pan and fry them till light golden in colour.
- Add finely chopped onions into the pan and mix it nicely.
- Cook it in medium flame for 2-3 minutes until the onions become translucent. Stir in between.
- Add capsicum or bell pepper cubes into the pan and give a nice stir.
- Cook it in medium flame for a minute.
- Add salt, turmeric powder and mix it nicely. Cook it in low flame for another minute.
- Cover the pan and cook it in low flame for 2-3 minutes until the capsicum gets tender.
- Take off the lid and add red chilli powder, cumin powder and coriander powder into the pan.
- Mix all the ingredients nicely and cook it for a minute in low flame.
- Add half of the roasted besan (Step 3) into the pan and mix it nicely. Make sure no lumps occur. Add rest of the roasted besan into the pan and repeat the process.
- Add 2 tablespoons of water and give a quick stir.
- Add chopped coriander leaves into the pan and mix it nicely.
- Switch off the flame and put the pan down.
