Today I am going to share with you a very healthy recipe Instant Chicken Stew. It is a single pot dish where Chicken is cooked with Potatoes, Carrots, Onions and few other vegetables. It is a very simple and quick recipe. To prepare this dish you need very common ingredients too.
I have learnt this recipe from my Mom. It is one of my favourite comfort meals. India is famous for spices, but this preparation does not contain any powdered spice. Still it is one of the super delicious dishes I ever had.
Traditional Stew is a slow cooking process where Chicken is cooked in Chicken Stock with vegetables. I have cooked the it in Pressure Cooker to prepare it instantly. If you prepare Chicken Stew in Pressure Cooker, it really saves a lot time and reduces the effort of cooking.
First, I cooked the Chicken with Onions and Garlic and have then added the other vegetables. I have used Cardamom, Cinnamon, Cloves, Star anise along with Bay leaf for flavouring. These spices really make a lot of difference in flavour and as each of these spices has its own quality and benefits, it makes it healthier too. You must try this once to believe me.

Cinnamon is full of antioxidants and has anti diabetic effect. Regular consumption of it may reduce many health risks.
Cardamom’s diuretic property helps to lower blood pressure. It is a good source of antioxidants and helps to reduce cavities.
Cloves help to reduce oxidative stress and its anti-microbial property helps to kill harmful bacteria.
Star anise is a natural flu fighter.
If you are suffering from cough and cold or you are recovering your appetite, then nothing can work better than Chicken Stew. Specially for growing kids, as it is very common for them to get cough and cold quite frequently when they start going school, it is really a boon.. It helps them to recover faster.
In Chicken Stew, the tender and juicy Chicken along with the fresh vegetables, creates a magical taste. It has been cooked since ancient times and it is one of the oldest dishes. It is a perfectly balanced dish which has both the goodness of vegetables and chicken.
In this recipe, I have used boneless-skinless Chicken thighs. Though you can also use the Chicken breasts, but I would recommend Chicken thighs for better results. I have used Olive oil to make the dish healthier.
In this recipe, I have not used Chicken stock. I have used plain water instead of that. As I love thin stew, so I have not added cornflour or any other flour to thicken it.

Ingredients:

  • 250 grams Boneless-Skinless Chicken thighs, small pieces
  • 2-3 Onions, thin sliced
  • 3-4 large cloves of Garlic, chopped
  • 2 Potatoes, medium diced
  • 1 Carrot, medium diced
  • 3 Cloves
  • 2 Cardamoms
  • 1 Cinnamon stick
  • 1 Star anise
  • 1 Bay leaf
  • Salt to taste
  • Oil for cooking
  • 250 ml Water for gravy

Instructions:
  1. Wash and cut the Boneless Chicken thighs to make small pieces of them.

  2. Put 2 tablespoons of Oil into the Pressure Cooker in high flame.
  3. Once the Oil is hot, add Cloves, Cardamom, Cinnamon, Star anise, Bay leaf and let them crackle.

  4. Cook it for 30 seconds and turn the gas into medium flame.
  5. Add Garlic and cook until it turns golden in colour.

  6. Put Onions into the Pressure Cooker and cook till it becomes translucent.

  7. Add Chicken and cook it in medium flame for 3-4 minutes. Stir occasionally.

  8. Add Potatoes, Carrots and give a nice mix.

  9. Let it cook for 2 minutes in low medium flame.
  10. Add Salt and mix it well.

  11. Add water and stir it nicely.

  12. Cook it in medium flame for 2-3 whistles.

Serving Instruction
Transfer the Chicken Stew into a serving bowl. Serve immediately and enjoy your healthy meal.
