Braised Red Cabbage with Chickpeas is one of the healthiest and popular Red Cabbage Recipes worldwide. It is a very simple vegan dish which is the amalgamation of Red Cabbage with Onions, Garlic, Chickpeas and some herbs. It can be a perfect dish for Halloween or as a thanksgiving Side dish.
Red Cabbage is also known as Purple Cabbage. It generally turns bluish after cooking. Addition of any citric element can help it to retain its original colour. It is mostly accompanied with seasonal roasts in Christmas. Red Cabbage is one of the most important elements in many Halloween dishes because of its red hue.
Red Cabbage is one of the vegetables that I never tried while I was in India. But after coming to London, I have seen its huge popularity and availability. It encouraged me to try something with this vegetable in my kitchen.
Though I have prepared many coleslaw recipes, soups and Braised Red Cabbage recipe but still Braised Red Cabbage with Chickpeas is very special to me. It is one of the favourite vegan dishes of my family. It is a very quick and easy recipe and it requires very limited and easily available ingredients to get prepared.
Red Cabbage Recipes
Red Cabbage Recipes are prepared in different ways in different regions around the world like baked, roasted, boiled, stir fried, braised, slow cooked and even raw. Red Cabbage is one of the most versatile vegetables which is used to prepare thousands of healthy and delectable recipes. It is hugely used in European countries to prepare many traditional recipes and Braised Red Cabbage with Chickpeas is inspired from those.
Braised Red Cabbage with Chickpeas recipe with step by step photos and instructions has been provided in the ‘Instructions’ section of the recipe. But before jumping into the recipe, I would like to explain few things about the process of cooking and few facts about Red Cabbage.

- They are rich in anthocyanins which helps to get rid of many heart problems.
- They are full of Vitamins specially Vitamin C and Vitamin K which are good for our bones.
What is braised cooking?
Braising is a cooking method where first the food is sautéed in high flame and then it is covered and cooked in low flame. Sometimes even some liquid is added during the time of low flame cooking.
What type of Chickpeas to be used for the recipe?
- Normal chickpeas can be used for the recipe. You must soak the Chickpeas in water overnight or for at least 6-8 hours. Then you need to pressure cook them up to 4-5 whistles.
- Canned black chickpeas work great in this recipe too.
In this preparation, I have preferred to use canned Chickpeas. It reduces the effort as well as time of cooking of the dish.
How to cook red cabbage?
In this preparation, first, I have finely chopped some Onions and fried them for some time. Then I have added the shredded Red Cabbage and sautéed them. After this, I put the flame in low and cooked it in low flame for some time. When the Red Cabbage is almost done, I have added the canned Chickpeas into the pan.
I have used Garlic powder for the dish, but you can also use chopped Garlic or Garlic paste. But you must add the chopped Garlic or Garlic paste before adding Red Cabbage for better flavour.
I have added mild Curry powder, ground Black Pepper and dried Parsley for the flavouring of the dish. I have not added any citric element to this dish.

Ingredients:
- 1 medium Red Cabbage, shredded
- 2 Onions, finely chopped
- 1 cup Chickpeas (Chana), canned
- ½ teaspoon Garlic powder
- 1 teaspoon Mild Curry powder
- ½ teaspoon Black Pepper powder
- 1 teaspoon Dried parsley leaves
- Salt to taste
- Oil for cooking
Instructions:
- Add Oil into the pan and wait until the Oil is hot.
- Add chopped Onions and cook them in high flame for 2 minutes till they become translucent. Stir in between.
- Add the shredded Red Cabbage and give a nice mix.
- Cook them in high flame for 2-3 minutes and stir in between.
- Add Salt and mix them nicely.
- Cover the pan and cook them in low flame for 5-6 minutes. Stir occasionally.
- Add Garlic powder and give a nice mix.
- Cook them for a minute in medium flame.
- Add the canned Chickpeas and give a nice stir.
- Cover the pan and cook them for another 4-5 minutes.
- Cook them in low flame until the red cabbages are tender. Stir occasionally.
- Add the mild Curry powder and give a nice stir.
- Add the ground Black Pepper and mix it nicely with the curry.
- Cook them in medium flame for a minute.
- Sprinkle some dried Parsley and mix them nicely.
- Switch off the flame and put the pan down.
Process of boiling normal Chickpeas
- Soak the Chickpeas overnight or for at least 6-8 hours.
- Then wash the Chickpeas properly until clear water appears.
- Transfer the Chickpeas into a pressure cooker.
- Add enough quantity of water into the pressure cooker.
- Add some salt and stir the water.
- Close the lid and cook it till 1 whistle in high flame.
- After 1st whistle put the flame in low and cook till another 4 whistles.
- Let the pressure settle down.
- Check whether the Chickpeas are done or not.
- If not, then close the lid and cook till 2 more whistles.Note : Number whistles may vary due to temperature, quantity, utensils, quality of Chickpeas and heat of flame.
Serving Instruction
Transfer the Braised Red Cabbage with Chickpeas into a serving plate and serve hot or warm for the best taste. Garnish with some canned Chickpeas and enjoy the delectably healthy dish.
