Yellow Split Pea Soup with Beet Greens is a comforting lentil soup recipe which has the goodness of beet greens and the nutrients of lentils. In this preparation, I have cooked the yellow lentils soup with beetroot stalks and leaves along with some chopped onions, garlic, cilantros and seasoning. It is mostly served as a healthy meal with any of your favourite sides.
Honestly, I am not a die heart fan of soup recipe veg but for its health benefits, I always try to adopt it in my regular meal. A bowl of warm Lentil soup provides comfort, warmth and make us more immune. Till now, I have tried many thick and clear soup recipes with yellow split pea.
Normally, in India we get Beetroots without stems and even if it is there, most of the people would through it away. But Beetroot stems and leaves are edible, they are even very good for health. When I saw Beetroots with its long stems and green leaves in a supermarket of London, I must admit that I was very surprised at the beginning. But then, I decided to prepare something healthy rather than wasting them. Suddenly it clicked in my mind ’Why don’t I try a soup recipe with these greens’.
When I first prepared this Yellow Split Pea Soup, my family really appreciated and loved it. Beetroot Stalks-leaves are very delicious and has a lovely earthy flavour. The flavour of yellow split peas go amazing with it. This soup can be a super healthy addition to your regular meal.
Yellow Split Pea Soup with Beet Greens is a very easy and simple recipe. You need very limited ingredients to prepare this dish. Whenever I have beet greens in my pantry, I always go for this recipe rather than wasting it. The best part of the soup recipe is that you can prepare it in large portions and can refrigerate it for 2-3 days. You can heat the soup in microwave or on stove easily before serving.

In addition to these, there are many variations in each category like veg, non-veg, vegan etc. Tomato Soup, Sweetcorn Soup, Chicken Soup are few names of worldwide popular soup recipes and Beetroot Soup is one of them.
Normally soup with yellow split peas is prepared thick but for this recipe, I have gone for clear soup texture. I have cooked the yellow lentils till tender, but I did not make is mushy. The tender beet stalks and soft tiny lentils goes amazing with the clear broth.

How to make Yellow Split Pea Soup?
For the soup with yellow split pea, I have used onions, garlic and chopped cilantros to flavour up the dish. I have not used any whole or ground spice to flavour up the dish. The earthy flavour of beet greens goes amazingly well with the flavour of the yellow split pea. Addition of spices may destruct the original flavour of the soup recipe.
I have fried the garlic first and then added chopped onions and allowed it to get cooked. It gives better aroma to the soup. Then I have cooked the beet greens and added the yellow split peas.
Yellow split pea takes a bit time to get cooked. I have prepared the soup in a non-stick pan. Many people use crockpot or electric cooker too to cook yellow split pea.
At the end, I have sprinkled some chopped cilantros into the soup. It gives a nice refreshing flavour and colour to the soup.

Ingredients:
- 1 cup Yellow split peas
- 2 cups Beet Greens, sliced
- 1 red Onion, finely chopped
- 3-4 cloves of Garlic, finely chopped
- 2-3 tablespoons Cilantro, Chopped
- 5 Cups of Water, quantity may vary to get the desired consistency
- Salt to taste
- Olive Oil for cooking
Instructions:
- Wash the Yellow Split peas thoroughly until the bubbles go away. Then soak it in water for half an hour.
- Put a pan on flame and let it become dry.
- Add 2 tablespoons of Olive oil into the pan and let the oil become hot.
- Put the flame in low and add chopped Garlic into the pan and fry them till golden.
- Add chopped Onions and give a nice mix.
- Cook them in medium flame for 3-4 minutes until they become translucent.
- Add beetroot stalks into the pan and give a nice mix.
- Cover the pan and cook them in low flame for couple of minutes.
- Add salt and give a nice mix.
- Cook them in low flame for another minute.
- Add the soaked yellow split peas into the pan.
- Add 3 cups of water and cover the pan. Cook it in high flame until the water simmers.
- Then put the flame in low and cook it for 45-50 minutes until the yellow split peas get tender and fully cooked. But don’t stir the lentil in between.
Tip: Never stir the lentil in between the time of cooking. Otherwise it won’t get cook. This is one of the major reasons that the lentils don’t get cook in yellow split pea soup.
- The lentil will soak the water after getting cooked. So, add 2 more cups of water and give a nice stir. Put the flame in high and let the soup simmer.
- Sprinkle some chopped cilantros and give a nice stir.
- Switch off the flame and put the pan down.
Serving Instruction
Transfer the Yellow Split Pea Soup with Beet Greens in a serving bowl. Serve immediately to enjoy best taste. Sprinkle some dried Dill leaves on the top for garnishing. Serve with Croutons or your favourite side and enjoy your healthy-yummy soup.
