It is one of the comfort foods which gets prepared in almost every eggetarian houses very often. In this preparation, hard boiled Eggs are cooked in Onions, Tomatoes and Garam Masala powder. Egg curries are always a great option for bachelors, students and newly married homemakers. They are easy to make as compared to other non-vegetarian dishes like fish and meat.
Egg curries are highly versatile dish and easily hook up with Parathas, Naan, Kulcha, Rotis, Pooris and even with rice items like Steamed rice, Jeera rice, Pulao etc. Egg Masala (Dry Egg Curry) is one of the easier one among Egg curries and it tastes divine with its accomplishments.
I am an Egg lover from my childhood. My mom used to prepare variety of dishes with Eggs to bring smile on my face. Why only me? I am sure many Egg lovers surrounding us would have the same story to share. Most of the kids’ favourite item is Egg because it is so easy to eat. So, Eggs are one of the best friends of many kids and they never say no to them. This dish will be a treat to the Egg lovers.
I have learnt this preparation from my mother. She used to prepare this amazing dish while she ran out of time. Egg Masala (Dry Egg Curry) is a very quick and simple recipe which requires very limited and common ingredients to prepare. All the ingredients are easily available in almost every part of world.
In this preparation, I have not used any whole spice for tempering. For flavouring, I have only used Garam Masala powder other than Turmeric powder and Chilli powder as spices in this dish.
To prepare Egg Masala (Dry Egg Curry), I always go heavy with Onions. Onions give a nice texture to the dish and make the masala luscious too. I have added Tomatoes which give a tangy kick and goes amazing with the sweet flavour of Onions.
I have used whole green Chilli to give a fresh chilli flavour to the dish. I always prefer less chilli hot taste and so I have used only one green Chilli to the dish. You can add more green Chillies as per your taste preference.
I have also added Tomato ketchup in the dish, which is completely optional. But I must tell you that it enhances the taste of the dish and make it yummier.

Egg Masala curry is prepared in differently in various parts of India and every region has their own style and recipe to prepare this delectable dish. Apart from that, Dhaba style, home-made style, free style, restaurant style Egg Masala curries are also available.

How to prepare a perfect Egg Masala Curry?
To prepare any Egg curry perfectly, it is very much important to boil the eggs perfectly. It should not get over boiled or under boiled. Otherwise you would not get the proper texture of Eggs.
Peel off the skin of the boiled Eggs very gently without damaging the Egg whites.
Always marinate the Eggs with some Salt and Turmeric powder and fry them before adding into the masala. This step will give you better colour, texture and taste to the dish.
How to boil Eggs perfectly?
It is always recommended to bring the Eggs to room temperature before starting to boil them. The sudden temperature difference can cause Egg cracks.
If you are running out of time, then soak the refrigerated eggs in normal temperature water for some time. Then discard the water. Take some normal temperature water into a pan and add the Eggs to boil. Put the flame in high until the water starts boiling and then put the flame in medium and cook them for another 5 minutes.
Transfer the hot boiled Eggs into a bowl of normal water and soak them for some time to allow them to cool off. Then peel off the skin of Eggs.

Ingredients:
To marinate the Eggs
- 3 Eggs
- ¼ teaspoon Turmeric powder
- ½ teaspoon Salt
Rest of the ingredients
- 2 medium Onions, thin sliced
- 1 Green Chilli
- 1 Tomato, deseeded and chopped
- ¼ teaspoon Turmeric powder
- ½ teaspoon Chilli powder
- 1 teaspoon Garam masala powder
- Salt to taste
- Oil for cooking
Instructions:
- Add water into a pan to a level that the Eggs get dipped completely.
- Add Eggs and put the flame in high until the water starts boiling.
- Put the flame in medium and boil the Eggs for 5 minutes.
- Put the boiled Eggs in cold water.
- Once they cool down peel off the skin, wash them and keep them aside.
- Marinate the Eggs with salt and turmeric powder.
- Add Oil into the pan.
- Once the Oil is hot, add the Eggs and fry them all around until they become golden brown.
- Keep the Eggs aside on a plate.
- Add Onions, green Chilli and fry them in medium high flame until the Onions become translucent.
- Add Salt, Turmeric powder, Chilli powder and give a nice mix.
- Fry them for another 2-3 minutes in medium flame. Stir occasionally.
- Add chopped Tomatoes and mix them properly.
- Cover the pan and cook them in low flame until the Tomatoes get mashed. Stir occasionally.
- Add Tomato ketchup and give a nice mix.
- Add the Eggs (Step 9) and mix with masalas.
- Cover the pan and cook them in low flame for couple of minutes.
- Add Garam Masala powder and mix them properly.
- Switch off the flame.
Serving Instruction
Transfer the Egg Masala (Dry Egg Curry) on a serving plate. Serve hot or warm with your favourite Indian flat bread or Rice and enjoy the meal.
