Which variety of Bell Peppers to use for Stuffed Bell Peppers ?
Orange, Yellow, Red and Green Bell Peppers – any of the varieties can be used for the recipe. It’s better to use any of these varieties according to your preferable taste and flavour.
  • Orange, Yellow and Red Bell Peppers have sweeter taste than Green Bell Peppers.
  • Green Bell Peppers have stronger flavour than rest of the varieties of bell peppers.
I have used Orange Bell Peppers to prepare Stuffed Bell peppers with Eggs & Veggies. According to me, the sweetness of orange Bell Peppers goes amazingly well with the Egg-veggie stuffing. First, I have cut the Bell Peppers with stem into halves and deseeded them completely. Then I have rinsed them.
I have wraped the baking tray with Aluminium foil and placed the Bell Peppers on it. Initially, I baked the Bell Peppers for some time in oven before putting stuffing into it.
Note: You can even do this step, in microwave to save time.
For the stuffing, I have used few vegetables like Onions, Carrots, Zucchini and Broccoli. First, I have sautéed the vegetables for some time. Other than Salt and Pepper I have seasoned the vegetables with smoked Paprika powder, dry Thyme and Garlic powder. Smoked paprika gives a Smokey kick to the vegetables which goes great with the dish.

I have used red Grapes to make the stuffing heavier, healthier and yummier. I have cut the Grapes into halves and added to the stuffing after the vegetables got sautéed. The red Grapes complement the dish and enhances the taste of the stuffing.
I have cracked the Eggs into a bowl and added salt into it. I have nicely beaten the Eggs before pouring into the peppers.
I have stuffed half of the Bell Pepper halves with vegetables and then poured beaten Eggs to fill the rest of the space.

Tips and tricks to pour the beaten eggs for the recipe
  1. Leave some space in bell peppers. The addition of excess Egg mixture can result in overflowing of Eggs while baking. It will result mess and wastage of Egg mixture.
  2. Always place the Bell Peppers straight, tilted peppers can cause overflowing of Eggs too.
    Tip: To overcome this problem, I have used a piece of folded parchment pepper and placed it at the bottom of the bell peppers to make them sit straight.
  3. Always check the bell peppers properly if you are adding Eggs for stuffing. There should not be any hole in it because that can cause the Egg mixture to leak.

Ingredients:

  • 2 large orange Bell Peppers
  • 2 Eggs
  • ½ white Onion, chopped
  • ½ small Zucchini, small diced
  • 3-4 florets of Broccoli, small pieces
  • 1 small Carrot, small diced
  • 10-12 red Grapes, cut into halves
  • ½ teaspoon Garlic powder
  • ½ teaspoon dry Thyme leaves
  • ¼ teaspoon smoked Paprika powder
  • ¼ teaspoon coarsely ground Black pepper + Extra for sprinkling on the top of stuffed Bell Peppers
  • Salt to taste
  • Oil for cooking

Instructions:
  1. Put the oven for preheat at 180 degree centigrade.
  2. Wrap the baking tray with Aluminium foil.
  3. Cut the Bell Peppers into halves with the stem and deseed them.
  4. Wash them and place them on the baking tray.

  5. Put the Bell Peppers into the oven for 10 minutes at 180 degrees.

  6. After 10 minutes pull the tray out of the oven and discard the moisture from the bell peppers.
  7. Make sure that each of the Bell Pepper halves stand straight over the baking tray without any tilt.
  8. On the other hand, add Oil into the pan.

  9. Once the Oil is hot, add Onions and fry them for a minute in high flame till translucent.

  10. Add Carrots, Broccolis and stir them nicely for 30 seconds.

  11. Add Zucchini and mix them with rest of the vegetables.

  12. Add Salt, smoked Paprika powder and give a nice mix.

  13. Cook them in medium flame for a minute.
  14. Add Garlic powder and mix them thoroughly.

  15. Cover the pan and cook them for a couple of minutes.
  16. Add Black Pepper, dry Thyme and mix them nicely with rest of the ingredients.

  17. Cook in high flame for 30 seconds and switch off the flame.
  18. Add red Grapes into the pan and mix with the vegetables.

  19. In the meantime, crack two Eggs into a bowl and add Salt into it.
  20. Beat the Eggs thoroughly and keep them aside.

  21. Fill half of the space of each Bell Pepper halves with vegetable stuffing (Step 17).

  22. Then pour the Egg mixture (Step 19) over the top of vegetable stuffing keeping atleast some space left inside the Bell Pepper halves.

  23. Sprinkle some more coarsely ground black pepper on the top of egg mixture.
  24. Put the tray back into the oven for 20 minutes at 180 degrees until the Egg mixture gets set.

  25. Switch off the oven and take the tray out.

Serving Instruction
Transfer the Stuffed Bell peppers with Eggs & Veggies on a serving plate. Serve immediately for best taste. Serve hot or warm with your favourite salad & seasoning and enjoy your healthy-yummy breakfast.
