But for this creamy broccoli cheese soup, I can’t say no to it.
This broccoli cheddar soup is very simple and easy to make. It gets prepared very quickly without investing much effort. It requires minimal and easily available ingredients to get prepared. The best part of the recipe is that you can prepare it in large portions and can refrigerate it for 2-3 days. You can reheat the soup very easily in the microwave or on the stove before serving.

How to make broccoli cheese soup?
To prepare the broccoli cheese soup
, first, rinse and cut the vegetables and keep them handy.
I have used traditional cut medium cheddar cheese for the maximum flavour and perfect texture of the broccoli soup recipe.
Other than these, I have used garlic cloves and white onions for better flavouring of the soup recipe.
First, put some butter into the pan and let it bubble. Then add white onions and cook them for 1-2 minutes over medium flame. You can use shallots too instead of white onions. Then add the chopped garlic and cook them over low flame for 2-3 minutes until the raw smell goes away.
Now, add the broccoli florets, carrot slices into the pan and cooked them for some time over low flame.
After this, add some all-purpose flour into the pan and cook it for some time and then added vegetable stock into the pan and stirred it very nicely. Make sure no lumps occur or else the texture of the soup will get spoilt. Add salt, black pepper powder into the pan and give a stir. Cover the pan and cook it over low flame for 15 minutes until the vegetables get cooked.
Then add milk into the pan and stir it nicely. Turn the flame high and simmer the content for some time. It gives an extraordinary flavour to the broccoli soup recipe.

- 1 large Carrot, thin sliced
- 1 white Onion, finely chopped
- 1 tablespoon chopped Garlic
- 200 grams medium Cheddar, shredded
- ¼ cup all-purpose Flour
- 2 cups vegetable Stock
- 1 cup Milk
- ½ teaspoon black Pepper powder

- Put a pan on flame and wait until the pan becomes completely dry. Add 2 tablespoons butter to the pan and allow it to melt and bubble.

- Add 1 tablespoon of chopped garlic and cook them over low flame for 2-3 minutes until the raw smell goes away.
- Add the small broccoli florets, diced broccoli stems, carrot slices into the pan and give a nice mix. Cook them for 2-3 minutes over low flame.
- Add ¼ cup all-purpose flour into the pan and mix it nicely. Cook it for 2-3 minutes over low flame.
- Add 2 cups vegetable stock into the pan and stirred it very nicely. Make sure no lumps occur or else the texture of the soup will get spoilt.
