Honestly, I am not a carrot fan and whenever I have abundance of carrots, the ideas that first my mind are dessert recipes like Carrot pudding (Gajar ka halwa), Carrot Kheer or carrot cake. But, in this lockdown, for a change I have decided to use these carrots to prepare a meal. As we all know how things have gone difficult to get an online delivery slot of supermarkets for fresh fruits, vegetables, milk and staples.
So, when I contemplated the carrots, I decided to prepare a full proof recipe which has got the minimal chances of getting spoilt because at this situation, I can’t afford to spoil food items at any cost. Then I have come up with the brilliant idea to prepare carrot fritters.
Fritters Recipe
Fritters recipe is immensely famous as a rapidly served delicious snack which is perfect for sudden guests. They are very simple and easy to prepare and of course they are equally satisfying too.
Fritters are fried pastries which can be sweet or savoury. There are huge ranges of variation in Fritters recipes. They can be prepared with meat, seafood, vegetables, fruits, eggs or many other ingredients.
Fritter Recipe is mostly prepared in two different ways, either by baking or shallow frying. But an ideal Fritter is always shallow fried to get the outer crisp.
I love fritters but I had never tried it with carrots before. The toughest part of the recipe is to grate the carrots. If you have grater attachment in your food processor then don’t hesitate to use it. I hate this job and pass this work to my husband. Poor husband trapped in lockdown does the work for me. He grated the carrots with the help of a hand grater, and it took him around 7-8 minutes.
Carrot fritters is a very simple and easy recipe. It requires minimal ingredients to get prepared. The best part of the recipe is that it does not require any perfect skill of cooking to be prepared. In fact, fritters are one of the perfect options for beginners to start their cooking journey.
Carrot fritters is a very healthy and delectable option for lunch which is perfect for people of any age group. The crispy skin and the tender centre make the dish incredible. When the fritters are dunked in herbed yogurt, the sweetness of carrots with the tang of herbed yogurt makes a perfect balance. Addition of fresh crunchy salad makes the dish outstanding with all aspects.
You can serve the Carrot fritters either warm or cold. It tastes delicious with both the ways. You can pack these amazing fritters for picnic or for a day out too. In fact, you can also use the leftover fritters to prepare amazing sandwiches.
Honestly, I had never tried and tested any fritters recipe when I was in India. But after coming to the UK, I have seen the craze for fritters and decided to prepare it. The first one that I prepared was Zucchini fritters and I loved the dish. It reminds me of the taste of Indian pakodas quite a bit. The batter of fritters is quite like the pakodas especially the vegan ones but not the same. In India, Pakodas are also known as Indian fritters too.
Difference between fritters and pakoda?
In India, fritters are known as pakoda. The texture of pakodas are completely different from the fritters of western countries. They get prepared by deep frying. So, pakodas are crispy and crunchy in bite. On the other hand, fritters have a crispy outer layer, but are soft at the centre.

- Regular consumption of carrots helps to control blood pressure and cholesterol level of our bodies.
How to make carrot fritters?
To prepare the carrot fritters, first grate the carrots and take it in a large mixing bowl. Then add finely chopped onions, seasonings, herbs and egg into the mixing bowl and mix all the ingredients thoroughly and wait for 5 minutes for the mixture to release moisture.
I have used garlic powder, chilli flakes, crushed black pepper and dried parsley for the flavouring of the fritters. If you don’t have garlic powder you can also use garlic paste instead of it. The chilli flakes give a fiery touch to the fritters. If you are preparing these carrot fritters for your kids, you can skip it.
After this, add all-purpose flour into the bowl and make a soft and sticky batter. This step is very important for a perfect fritter. The consistency of the batter should not be too thick or too runny. It should be moderate.
I have added little bit of baking powder into the batter. It helps to give a crispy coating to the carrot fritters.
I have taken a non-stick pan to shallow fry the carrot fritters. According to me, non-stick pans work best for the recipe. I added oil to shallow fry the fritters and waited until the oil is hot. Then poured the batter in small portions on the pan and made them round with the help of a spoon. It is very important to be patient to fry the fritters. First fry them for 3-4 minutes and flip the other side to fry for another 3-4 minutes. Don’t flip in between or else the outer layer will not become perfectly crisp.

Ingredients:
- 3 Carrots, grated
- 1 mediun Onion, finely chopped
- ¼ teaspoon Garlic powder or 1 teaspoon Garlic paste
- 1 teaspoon dried Parsley or 2 tablespoons fresh parsley chopped
- 1 teaspoon Chilli flakes
- ½ teaspoon crushed Black Pepper
- 1 large Egg
- 4 tablespoons All-purpose flour
- 1 teaspoon Baking powder
- 1 teaspoon Salt, add according to your taste
- Oil for shallow frying the fritters
Instructions:
- Wash the carrots and trim both the edges. Peel the skin off.
- Either grate them with a grater manually or run them into food processor.
- Take the grated carrots into a large mixing bowl.
- Add chopped onions into the mixing bowl.
- Add salt, garlic powder, chilli flakes, dried parsley, crushed black peppers, baking powder one by one into the mixing bowl.
- Crack an egg and pour into the mixing bowl.
- Mix all the ingredients thoroughly and allow it to rest for 5 minutes to let it release moisture.
- Add all-purpose flour into the mixing bowl and make a moderately thick batter. Mix the batter evenly. Make sure no lumps are there.
- Take a wide non-stick pan on flame and let it become completely dry.
- Add 3-4 tablespoons of oil into the pan and wait until the oil becomes hot.
- Put the flame in medium and pour the batter into the pan in equal portions with the help of a large spoon.
- Spread the mixture lightly with the help of spoon and make them flat rounds.
- Fry them in medium flame for 3-4 minutes until the corners become crisp.
- Flip them and cook for another 3-4 minutes until they become crispy from outside.
- Transfer them on a plate lined with kitchen tissue.
Serving Instruction
Transfer the Carrot Fritters on a serving plate. Serve warm or cold according to your preferences. Serve the fritters with your favourite dip and salad and enjoy the delectably healthy meal.
