Spicy Mixed Vegetable is a very popular and delicious Vegan dish all over India. In this dish, vegetables like Carrots, Cauliflower, Bell Peppers, Peas and Potatoes are cooked in Onions, Ginger-Garlic paste and spices. It is a very simple and easy recipe.
The time-consuming part of this recipe is only to cut and clean the vegetables and assemble them. All other steps are quite quick and easy. In almost every restaurant in India, you would be able to find Spicy Mixed Vegetable in their menu card. But this recipe is inspired by home style cooking. I will surely share with you the recipe for Restaurant Style Spicy Mixed Vegetable very shortly.
In this recipe, I have used Cumin seeds for tempering. First, I have fried the Onions and then added Ginger Garlic paste. After cooking this for a while, I have added vegetables one by one into the pan for cooking. In this preparation, I have used Cumin powder, Coriander powder and Garam Masala powder for flavouring. I have used fresh Cilantros too.
In this preparation, I have used frozen Peas. So, I have added it as the last vegetable. Frozen peas take lesser time to get cooked than fresh Peas. If you are using fresh Peas, then add it before Tomatoes. I have not added any extra water to cook this dish. I have covered the pan and cook it in low flame.

Spicy Mixed Vegetable is not only a healthy dish, it is very tasty too. This dish can accompany great with any Indian bread. In fact, it can be a great option as a side dish with Dal and steamed Rice to complete the meal.
Cauliflower is a good source of nutrients. It is full of fibre and antioxidant. Carrots are great source of vitamins, minerals and fibre. Regular consumption of Carrots can reduce the risk of cancer and it is very good for our visions too. Peas are full of potassium, calcium and magnesium.
In today’s world, as we easily get attached to fast food and fizzy drinks, it is very important to add fresh vegetables in our regular diet to get rid of health issues. Spicy Mixed Vegetable can be a healthy addition to your regular diet.

Ingredients:

  • 1 medium size Cauliflower, cut into medium florets
  • 2 large Potatoes, medium diced
  • 2 Carrots, medium diced
  • 2 large Onions, thinly sliced
  • 1 large Green bell pepper
  • 1 Tomato, deseeded and diced
  • ½ cup Green peas
  • 1½ teaspoon Ginger-Garlic paste
  • 2 Green chillies
  • 2 tablespoons chopped Cilantros
  • ½ teaspoon Cumin seeds (Jeera)
  • ½ teaspoon Turmeric powder
  • ½ teaspoon Chilli powder
  • 1 teaspoon Cumin powder (Jeera)
  • 1 teaspoon Coriander powder (Dhania)
  • ¾ teaspoon Garam masala powder
  • 1 teaspoon Sugar (Optional)
  • Salt to taste
  • Oil for cooking

Instructions:
  1. Put the Cauliflower florets into a container containing hot water and cover the lid.
  2. Let it steam for 2-3 minutes and then drain out the water.
  3. Add Oil into the pan in high flame.
  4. Once the Oil is hot, add Cumin seeds and let them crackle.

  5. Add the sliced Onions and cook it for 2-3 minutes in medium high flame until it becomes translucent.

  6. Add Ginger-Garlic paste into the pan and cook it for another minute till the raw smell goes away.

  7. Add Potatoes, Carrots and cook it for 3-4 minutes in low flame.

  8. Cover the pan and stir occasionally.
  9. Add Cauliflower, green Chillies and cook it in medium flame.

  10. Add Turmeric powder, Chilli powder and give a nice mix.

  11. Cook it for 5-6 minutes in low flame.
  12. Cover the pan and stir occasionally.
  13. Add Tomatoes, Bell Peppers and give a nice mix.

  14. Cover the pan and cook it for 2-3 minutes in low flame.
  15. Add Peas and mix it well.

  16. Add Salt and give a nice stir.
  17. Cover the pan and cook them in low flame until the vegetables get tender.
  18. Add Coriander powder and Cumin powder into the pan and mix it well.

  19. Cover the pan and let it cook for another minute in low flame.
  20. Sprinkle Garam Masala powder, chopped Cilantros and mix it well.

  21. Cook it in lowest flame for a minute and switch off the flame.

Serving Instruction
Transfer the Home Style Spicy Mixed Vegetable into a serving bowl and garnish it with Cilantro. Serve hot and enjoy the dish with Rotis, Chapatis or Parathas.
