Vegetable stir fried spaghetti is one of the most popular and widely consumed Vegan dishes around the world. In this dish, Spaghetti is stir fried with vegetables like Peppers, Carrots, Onions and Tomatoes in few spices and Salt. It is a very quick and simple recipe. Very few and limited ingredients are required to prepare this dish.
One of the most challenging and toughest job for every Mom is to make their little ones eat healthy vegetables. Normally kids try to avoid vegetables from their diet. But they would never say NO to noodles, chow Mein and pasta because kids always prefer them over Rice, Roti or Bread.
In this dish, I have used Peppers, Carrots, Peas and Tomatoes to make the dish healthy and colourful too. According to me, it is one of best ways to add vegetables in the diet for any Kid. You can also add other vegetables like Beans, Cabbage, Broccoli etc. according to your choice. I am sure your kids are going to love it.
First, I have boiled the Spaghetti in salted Water. I always prefer to add Salt while boiling Spaghetti in water. This step helps Salt to reach inside the Spaghetti or else Spaghetti only gets coated with Salt but remains plain in taste from inside.

I have used Olive oil to prepare this dish. But you can use any oil as per your preference. For flavouring, I have used Garlic powder and Black Pepper powder. If you don’t have Garlic powder, then you can use Garlic paste instead of that. But you must cook it with Onions to get rid of the raw smell.
Vegetable stir fried spaghetti is one of the most delicious instant Pot Meals with lot of healthy and colourful vegetables. Pasta is my all-time favourite and specially Spaghettis. I have learnt this recipe from one of my dear friends. When I have prepared this recipe for the first time, my family loved it very much. As it gets prepared within half an hour, now this preparation has become one of our regular meals during busy days.

Ingredients:

  • A handful of Spaghetti
  • 1 large Onion, thin sliced
  • 1 Carrot, thin strips
  • ½ Large Red Bell Pepper, thin sliced
  • ½ Yellow Bell Pepper, thin sliced
  • 1 Tomato, deseeded and finely chopped
  • 2 tablespoons Peas, fresh or frozen
  • ½ teaspoon Garlic powder or 1 teaspoon chopped fresh Garlic
  • ½ teaspoon Black Pepper grounded
  • Salt to taste
  • Oil for cooking

Instructions:
  1. Put the water to boil in a utensil and add some salt.

  2. When the water is about to boil add Spaghetti to boil according to package instructions.

  3. Once the spaghetti is cooked strain the water and keep it aside.

  4. On the other side add some Oil in a fry pan.
  5. Once the Oil is hot, add Onions and cook it for 2-3 minutes.

  6. Add Carrots and cook it for 2-3 minutes in medium high flame.

  7. Add Bell Peppers, Tomatoes and cook it in medium flame until they become soft.

  8. Add Salt, Black Pepper, Garlic powder into the pan and mix it well.

  9. Add Peas and mix it nicely.

  10. Cook it for 2 minutes in low medium flame.
  11. Add the Spaghetti and stir until it gets coated with the spices.

  12. Cook it in high flame for a minute.


Serving Instruction
Transfer the Vegetable stir fried spaghetti into a serving bowl. Serve hot with tomato ketchup and enjoy your instant pot meal.
