How to make mango cake?
Ingredients:
- 1 and ½ cup All-purpose flour
- 1 cup Mango puree (Alphonso)
- 1 Egg
- 1/3 cup Oil
- ¾ cup Sugar
- 1 teaspoon Baking powder
- ¼ teaspoon Baking soda
- ½ teaspoon Cardamom powder
- 1 pinch of Salt
- 1 teaspoon Butter, to grease the cake tin
Instructions:
- Preheat the oven at 180°C/160°C Fan/Gas 4.
- On the other hand, grease a cake tin with butter and cut a piece of parchment paper to fit the bottom of the tin. Keep the cake tin aside.
- Take all-purpose flour into a bowl and add salt, baking soda, baking powder into it.
- Sieve the flour mixture together and mix it thoroughly. Keep the mixture aside.
- Take a large mixing bowl and add oil into it.
- Pour the caster sugar into oil and mix it with the help of hand mixer in medium speed for 1-2 minutes.
- Add one egg into the content and beat it in medium speed until bubbly. Scrap the sides with the help of a rubber spatula.
- Add the mango puree into the content and whisk it evenly in low speed.
- Add cardamom powder and give a nice mix.
- Add the sieved flour mixture (Step 4) into the mango batter slowly 2-3 tablespoons at a time and mix it with the help of a spatula. I have used cut and fold method to mix flour mixture to make the cake batter airy.
- Transfer the cake batter into the cake tin (Step 2).
- Put the cake tin into the middle of the oven for 40 minutes.
- Go for a toothpick test. Take a toothpick and put it inside the Cake to check whether it is done or not. If the toothpick comes out clean, then baking is done.
- Take the cake tin out of the oven and put it on a grill.
- Allow it to cool off for half an hour.
- Demould the cake and remove the wax paper.
- Place the cake on a plate and allow it to cool down completely before cutting.

Thank you so much for your trouble. This recipe is very similar to an old family favourite using apple sauce and cinnamon. I never considered mango. Brilliant.
Excellent recipe. I used one large fresh mango (Maya – very sweet) which gave exactly one cup of purée. Next time I’ll use less sugar and try some fresh lime juice.

Can I not use cardamom powder? If yes, what can I substitute it with?
You can skip Cardamom powder to replace it with vanilla essence.

My husband made this the other day. He just reduced sugar a bit because our mango puree was sweetened. This recipe was soooo good!!! Loved the spice! Next time Ill have him add chopped walnuts on the top which will compliment this very much
