Roasted Brussels Sprouts recipe is prepared in many ways using different combinations of ingredients. It is sometimes prepared in balsamic vinegar or chestnuts or with crispy bacon and many more. Every preparation is quite different in taste and flavour.
While in India, I had never seen Brussels sprouts. In fact, I did not even hear about it while I have been there. But after coming to the UK, I have seen the huge popularity and availability of Brussels sprouts in supermarkets as well as vegetable shops.
They exactly look like cabbages in mini form which always made me curious to know about the vegetable. One day to resolve my curiosity, I grabbed a pouch of Brussels sprouts from the supermarket. After coming back home, the very next question which raised in my mind was ‘How to cook Brussels Sprouts?’
Honestly speaking, my first cooking experience with this batch of tiny vegetable was not so good. It got overcooked and became mushy which made them bland in taste. But after that incident, I got alerted and tried different techniques to perfectly cook Brussels Sprouts.
This Roasted Brussel Sprouts is one of the biggest hits of my Brussels Sprouts recipes. One day, I asked my European friends for dinner and prepared this dish. They just loved this preparation and now whenever they come to my house for dinner, they always make sure to add this Roasted Brussels Sprouts Garlic in the menu.

How to cook Brussels Sprouts?
Brussels Sprouts is a very tricky vegetable which must be handled very skilfully. They can get cooked in many ways.
Few people just boil them in salted water and serve them with some dressing. But it will only work if you are a die heart fan of Brussels Sprouts. In this way, the Brussels Sprouts do not smell great and become tender in texture. Rather than boiling them, I always prefer them to be blanched and then stir fried.
But my most favourite way of cooking Brussels Sprouts is oven roasted. This is the easiest way to cook them to get the best result. But during the time of oven roasting, few things must be taken care of when it comes to Brussels sprouts.
- It is very important to pat dry them after cleaning and washing.
- Then it should be tossed with generous amount of salt and olive oil before going to the oven. It is a very basic but important step to get perfect taste and texture.
- Make sure to put the cut side down in the baking tray for crispy sides.
- Don’t put them very close to each other. Always place them in single layer because the moisture which Brussels sprouts will release will touch the others. This may make them soggy.
- Don’t roast it in low temperature for a long time. The brussels sprouts may become soft and soggy for slow cooking.
- Roast them in high temperature for perfect outer crisp and caramelization.

- Brussels sprouts are very good source of Vitamins. They contain large amount of Vitamin C which is good for our immune system.
- They are low in calories and rich in fibre. It is good for our digestive system and helps to stabilize our blood pressure level.

How to reheat Roasted Brussels Sprouts?
- The best way to reheat Brussels sprouts is in oven. It keeps the texture perfect.
- You can reheat it in a wide pan too in medium high flame.
- But it’s always better to avoid microwave for reheating brussels sprouts because it makes them soft and soggy.
How to make Roasted Brussels Sprouts with Garlic?
For the Roasted Brussel Sprouts oven recipe, first, I have trimmed the sprouts and cut them in halves. Then I have washed them thoroughly because they sometimes contain soil in the front layers. Then I have pat dried them with a kitchen towel and put them in a large bowl.
I have tossed the gorgeous green Brussel Sprouts with salt, crushed pepper and olive oil nicely before placing them to the oven tray. It’s always better to use freshly crushed black peppercorns instead of black pepper powder. It gives better flavour to the sprouts. I always prefer to prepare them in larger batches. It is not worth to roast few of these tiny balls inside the oven.
I have lined the baking tray with wax paper, but you can use aluminium foil too. I always prefer to use lining over the baking tray when it comes to Brussel Sprouts. Sometimes the outer layer of it comes out during the time of roasting and gets stuck to the tray. I just hate it and always try to avoid it. I have roasted the Brussel Sprouts in the centre of the oven at 200 degrees for 25-30 minutes. It will give you the perfectly caramelized, sweet and nutty flavoured Brussel Sprouts.
For the Roasted Brussel Sprouts Recipe, I have used chopped Garlic and Spring Onion whites to toss with the roasted Brussel Sprouts. The flavour of Garlic goes heavenly with Brussel Sprouts. On the other hand, Spring Onion whites give a nice soft bite to the dish. I have sprinkled some extra seasoning during the time of tossing to make the Brussel Sprouts yummier.

Ingredients:
For Roasting the Brussel Sprouts
- 500 Grams Brussel Sprouts, trimmed and halved
- 2 tablespoons Olive oil
- ½ teaspoon Salt
- 2 pinches of crushed Black pepper
For tossing the Brussel Sprouts
- 2 teaspoons Olive oil
- 3-4 cloves of Garlic, chopped
- 3-4 Spring onion white sticks, sliced
- 1 pinch of crushed Black pepper
- Salt to taste
Instructions:
- Preheat the oven at 200 degrees.
- Line the baking tray with wax paper or aluminium foil.
- Wash the Brussels Sprouts and pat dry them perfectly before adding oil into it.
- Transfer them into a large bowl.
- Add Olive oil and salt into the bowl.
- Crush some black pepper corn over the Brussels Sprouts.
- Toss the sprouts nicely until the seasonings get coated evenly.
- Spread the tossed Brussels Sprouts on the baking tray (Step 2). Put them in single layer and leave a bit gap between the Brussels Sprouts. Put the cut side down to the baking tray for crispy edges.
- Put the tray in the centre of the preheated oven and bake them for 25-30 minutes. Turn the Brussels Sprouts after 20 minutes.
- Check the Brussels Sprouts before removing from the oven. Bake them until slight char occurs on the outer layer of the Brussels sprouts. It should be crispy from outside and tender from inside.
Note: The duration of roasting may vary for different reasons like the quantity or size of the Brussels Sprouts or sometimes for the appliance too.
- Keep the roasted sprouts aside.
- Take a pan and add Oil into it.
- Once the Oil become hot and add chopped Garlic into it.
- Fry them in medium flame till golden in colour.
- Add Spring Onion whites and give a nice mix.
- Cook them in high flame for a minute.
- Transfer the roasted Brussels Sprouts (Step 10) into the pan and toss it nicely.
- Add some Salt and crushed Black Pepper and give a nice toss.
- Switch off the flame and put the pan down.
Serving Instruction
Transfer the Roasted Brussels Sprouts with Garlic on a serving plate. Serve immediately to enjoy the best taste with your family-friends. Serve it as a side with some roasted meat and enjoy the crispy, caramelized, delicious Brussels Sprouts.
