Sattu ka paratha is an immensely popular recipe of paratha in North India. It is a pure Bihari delicacy and one of the most frequently prepared breakfast or lunch in Bihar, Uttar Pradesh and few parts of Bengal. This healthy stuffed paratha is prepared with spicy and flavoured Sattu stuffing. The stuffing is inserted into the wheat dough portions and roll out to flat parathas. Sattu ka paratha is shallow fried in pan with little oil. It is mostly relished with yogurt, pickles or mild curries.
Veg stuffed paratha recipe is one of my favourite breakfast and Sattu Paratha is one of them. There are hundreds of different ranges of veg stuffed parathas that are prepared in India. Aloo Paratha, Gobi Paratha, Muli Ka Paratha, Carrot Paratha, Sattu ka Paratha are the few finest examples of it.
I always look for vegetarian breakfast recipes easy. This always takes me to this healthy recipe as one of the top items. When I was studying in Kolkata, I made many Bihari friends and then I heard about ‘Sattu Ka Paratha’ being one of their traditional food.
Today morning, I was wondering what I should make for breakfast. Suddenly, it clicked my mind that I got pair of Sattu packets from India. Whenever I get Sattu, I always make sure to prepare Sattu ka paratha. The best thing of the Sattu paratha is that it will make you feel full for a long time. So, it is always a great option for heavy breakfast. Hence, everyone loves it in our family
Sattu ka paratha is a very simple and easy recipe. It requires very common ingredients which are very easily available in kitchen pantry. Though the recipe is simple, but it tastes divine. The best part of the dish is that it does not require any side. Yogurt, pickle, chutney or ketchup any of these condiments is enough to accompany the luscious paratha recipe.

Sattu ka paratha with step by step photos and instructions have been provided in the ‘Instructions’ section. If you follow the steps carefully, you will get the exact Stuffed Sattu Paratha. But before directly jumping into the recipe, let me share few interesting facts about Sattu and the recipe.

What is Sattu?
Sattu is nothing but a flour prepared with roasted brown chickpeas. Brown chickpeas are dry roasted with skin and ground to a fine dust. It is easily available in Bihar, UP, West Bengal and Assam. But many people also prepare Sattu at home by grinding the roasted brown chickpeas in food processor or grinder. It is a very healthy flour and regular consumption of Sattu makes people healthy and strong.

Recipe of Sattu
Sattu is one of the most versatile flours I have ever seen. It is used to prepare flat breads like Sattu ka paratha, Sattu ki poori; savoury snacks like Litti, Bati and also desserts like Sattu ke laddo, Sattu ki barfi and many more. It is even used to prepare drinks during summer.

How to make Sattu ka Paratha?
For the Indian bread recipes for breakfast, first I have prepared the dough of the paratha. I have used equal proportions of whole wheat flour and all-purpose flour to prepare this dough. Many people use either of the one too. But according to me, the combination of both whole wheat flour and all-purpose flour gives better texture and taste to the parathas. I have added salt, carom seeds and some oil other than water to prepare the dough. I have prepared a soft dough by kneading the mixture thoroughly. Then I have covered the dough with a muslin cloth and allowed it to rest for half an hour.
Then I have prepared the stuffing for the recipe of paratha. I have added finely chopped onions and garlic, grated ginger, cilantro, green chillies, mango pickle, salt, mustard oil and a little water into the Sattu mixture to make the stuffing. But do not add excess water into the Sattu mixture. The sattu stuffing should not be wet in texture. It should be slightly wet just be able get combined when taken into the fist.
After preparing the Sattu paratha stuffing, I have divided the dough into four parts and inserted the stuffing into each portion. Then I have rolled out the flat round parathas with the help of rolling pin and rolling board.
This veg stuffed paratha recipe is first dry roasted on the tawa and then shallow fried in oil. You can use ghee or mustard oil too to fry the parathas.

Ingredients:


For the dough
  • 1 Cup Wheat flour (Atta)
  • 1 Cup All-purpose flour (Maida)
  • ½ teaspoon Salt
  • ½ teaspoon Carom seeds (Ajwain)
  • 2 tablespoon Oil
  • Warm water, as required to knead the dough

For the Stuffing
  • ½ cup Sattu (Roasted Brown Chickpeas flour)
  • 1 small Onion, finely chopped
  • 1 inch Ginger, grated
  • 1 teaspoon Garlic, finely chopped
  • 2 Green Chillies, finely chopped
  • ½ tablespoon Mango Pickle, heaped
  • 1 teaspoon Mustard oil
  • Salt to taste
  • 1 tablespoon Water

Rest of the Ingredients
  • 1 tablespoon Wheat flour, to sprinkle during rolling the parathas
  • Oil to fry the Parathas

Instructions:
    To prepare the dough
  1. Measure all the dry ingredients and put them in a large mixing bowl.

  2. Mix all the ingredients nicely with the help of a spoon.

  3. Then add oil into the mixing bowl.

  4. Mix the oil nicely and evenly with the help of your hand.
  5. Add the required amount of water in small portions slowly into the mixture and mix it nicely to make a soft dough.

  6. Cover the dough with a kitchen towel or muslin cloth and let it rest for half an hour.

    To prepare the stuffing

  7. Take Sattu into another bowl to prepare the stuffing.

  8. Add chopped onions, garlic, grated ginger and green chillies into the bowl.

  9. Mix all the ingredients nicely with a spoon.
  10. Add salt into the mixture.

  11. Then add chopped cilantros into the bowl and mix it.

  12. Add mango pickle, mustard oil one by one into the bowl and mix it nicely. If you feel the stuffing is too dry and it is not binding at all then add little bit of water and mix it evenly. I have added 1 tablespoon of water into the mixture.

    To prepare the Sattu Ka Paratha

  13. Again, Knead the dough (Step 6) for a minute and divide them into equal portions to make large paratha balls. I have divided the dough into four equal portions.

  14. I have rolled the portions lightly in between the palm of our hands and put pressure on the top to made flat rounds.

  15. I have extended the flat rounds to thick disc with the help of fingers. You can roll it a bit on the board too.

  16. Divide the stuffing into four portions and make balls.
  17. Put the stuffing ball at the centre of the extended round disc of the dough.

  18. Now seal the stuffing by gathering all the sides with the help of hand.

  19. Sprinkle some wheat flour on the rolling board.

  20. Roll the stuffed dough ball carefully into a thick paratha.

  21. Put a tawa or pan on flame.

  22. Once the pan is hot put the rolled paratha on it and dry roast it from both the sides.

  23. Drizzle some oil and spread on the top too.

  24. Shallow fry the parathas from both sides.

  25. Cook the paratha in medium flame until the paratha gets cooked perfectly and golden spots appear on both the sides.
    Tip: Do not cook it in high flame. Dark spots may appear on parathas.

Serving Instruction
Transfer the Sattu ka paratha on a serving plate. Serve immediately to enjoy the best taste. Serve the Parathas with some Pickle or Yogurt and enjoy the authentic taste of Bihar.

Is the sattu flour made from kondaladalai..If not then how to prepare this at home?

Hi veronika, sattu flour is basically prepared with kala chana aka whole black chickpeas. The dried kala chana is first washed and sun dried completely. Then it is dry roasted till crispy. After that transfer them to a separate plate and allow it to cool down completely. Then grind it to a fine powder.
