Spicy Egg Curry is prepared with very common ingredients. All the ingredients are easily available in almost every part of world. Though it takes a little longer to prepare this dish but it is worth to spend time on this mouth-watering delicacy.
Spicy Egg Curry is cooked in different ways in different regions across India. I have used north Indian flavours and prepared it in home style. In this recipe, I have microwaved the Potatoes to reduce the cooking time and to avoid the usage of excess Oil. I have used Sugar to cut the tanginess of Tomatoes. I love the taste of sweet and tanginess to come together in the gravy. But it is completely optional, you can avoid it.
I am an Egg lover from my childhood. My mom used to prepare variety of dishes with Eggs to bring smile on my face. Why only me? I am sure many Egg lovers surrounding us would have the same story to share. Most of the Kids’ favourite item is Egg because it is so easy to eat. That’s why Eggs are one of the best friends of many kids and they never say no to them. This dish will be a treat to the Egg lovers.
For students and bachelors, Eggs are like a boon. Egg preparations are so easy and quick to prepare and at the same time they taste divine. Whether it is boiled, baked or fried, does not matter. If you compare to prepare Fish, Meat or some complicated vegetables, Eggs are hundred times easier to cook.

Ingredients:
- 5 Eggs
- 3 large Onions, thin sliced
- 1 large Potato, medium diced
- 1 heaped teaspoon Ginger-Garlic paste
- 2 green Chillies
- 1 Tomato, deseeded and chopped
- ½ tsp Cumin seeds (Jeera)
- 1 tsp Turmeric powder
- ½ tsp Chilli powder
- 1 tsp Cumin powder (Jeera)
- 1 tsp Coriander powder (Dhania)
- 1 tsp Garam masala powder
- ½ tsp Sugar (Optional)
- Salt to taste
- Oil for cooking
- 2 cups of Water, for gravy
Instructions:
- Boil the Eggs and put it in cold water.
- Peel off the skin and wash the Eggs.
- Marinate the Eggs with salt and turmeric powder for 10 minutes.
- On the other side, put the diced Potatoes on a microwavable plate.
- Microwave the Potatoes on full power for 2 minutes and keep it aside.
- Add oil into the pan.
- Once the oil is hot, add the Eggs and fry them all around until they become golden brown.
- Keep the Eggs aside on a plate.
- Add Cumin seeds into the pan and let them crackle.
- Add Onions and fry them in medium low flame for 8-10 minutes.
- Cover the pan and stir occasionally.
- Add Salt, Turmeric powder and mix it well.
- Cook it for another minute.
- Add Ginger-Garlic paste, green Chillies and mix it well.
- Cook until the raw smell goes away.
- Add Tomatoes and mix it well.
- Cover the pan and cook it in low flame for 3-4 minutes.
- Stir occasionally.
- Add Cumin powder, Coriander powder and give a nice mix.
- Cook it for couple of minutes.
- Add the Potatoes (Step 5) and mix it with masala.
- Add water and cook it in high flame until the water starts boiling.
Tip: You can vary the quantity of water as per your preference of consistency of gravy.
- Add the Eggs (Step 8), Sugar (Optional) and cook it for couple of minutes in medium high flame.
- Add Garam masala and mix it well.
Serving Instruction
Transfer the Spicy Egg Curry in a serving plate and garnish it with a Cilantro. Serve hot or warm with any kind of Rice or Indian bread and enjoy the dish.
