Corn Ki Sabji is a delectable and immensely popular Vegetarian recipes in India. It is the amalgamation of sweetcorn with Onion, Tomato, Bell Pepper and some spices. This Corn curry is a very healthy dish and mostly relished with Indian flat breads like Chapati, Paratha or Poori. It can even pair up with jeera Rice or Pulao as a side.
This Sweet corn ki sabzi is a very simple and easy recipe. The best part of the dish is it gets prepared very quickly without any hassle. It requires very common and regularly used ingredients to get prepared.
I have learnt this recipe for Sweetcorn from one of my friends in PG during my early working days. One day, when I came late from office, she cooked Corn Ki Sabzi and Rotis for both of us. I just loved the preparation and got the recipe from her.
When I prepared Corn Ki Sabji for the first time for my family, they admired the preparation. Now it has become one of our most frequently prepared Indian curry recipe. The best part of the dish is that it is light and very healthy.

Recipe for Sweet corn
Recipe for sweet corn are like backbone to the Vegan world. Vegan people are hugely dependent on some specific vegetables to prepare awesome dishes and sweet corn is one of them. Sweet Corn is a very versatile vegetable. It is sweet in taste with a bit of crunch. It is a very healthy veggie which can be adopted very easily to our regular diet.
You can have it in many forms like baked, roasted, boiled, stir fried, cooked and even raw. It is a very good option for preparing salad too. In fact, this magical ingredient has superb contribution in Indian cuisine.

Sweet corn recipe Indian are very popular in Vegetarian recipes in India. Many delectable curries are prepared with sweetcorn and Corn ki sabji recipe is one of them.
Corn ki sabji with step by step photos and instructions have been provided in the ‘Instructions’ section of the recipe. Before directly jumping into the recipe, let me share few interesting facts about corn and the recipe.

How to make Corn ki sabji?
To prepare the Corn ki sabji, first I have cut and cleaned all the vegetables. I have used Onion, Tomato, Bell Pepper and Cilantro other than Sweet Corn.
In this recipe with sweet corn, I have used frozen Corn kernels which you can directly cook with masalas. But fresh Sweet Corn can also be used for the recipe. Fresh sweet corn kernels or Makai ka dana would require to be boiled before using for the recipe.
I have added Cumin powder, Coriander powder and Garam masala for flavouring up the Sweet corn dry curry. I have not used Green Chillies in this dish. Instead of that, I have used red Chilli powder. If you prefer more heaty taste, then you can add some chopped green Chillies according to your desire taste.
At the end, I have added Lemon juice. It gives the dish a refreshing flavour and a bit of tanginess. It marries up very nicely to the sweetness of Corn and makes the dish perfectly balanced.

Ingredients:

  • 1 cup Sweet corn kernels, boiled
  • 1 large Onion, thinly sliced
  • 1 Tomato, deseeded and chopped
  • 1 Green bell Pepper, medium diced
  • 2-3 tablespoons chopped Cilantro
  • ½ Lemon
  • ½ tsp Turmeric powder
  • ½ tsp Chilli powder
  • ¾ tsp Cumin powder (Jeera)
  • ½ tsp Coriander powder (Dhania)
  • ¾ tsp Garam masala powder
  • Salt to taste
  • Oil for cooking

Instructions:
  1. If you are using fresh Sweet corn, then pressure cook it for 2 whistles and keep it aside and if you are using frozen Corns, then skip this step.
  2. Add Oil into the pan in high flame.
  3. Once the Oil is hot, add the sliced Onions and cook it for 2 minutes in medium high flame until it becomes translucent.

  4. Add Sweet Corn and cook it in medium flame for 3-4 minutes.

  5. Add Bell Peppers and mix it well.

  6. Cover the pan and cook it in medium low flame for 2 minutes.
  7. Add Tomatoes and cook it for a minute.

  8. Add Salt, Chilli powder and Turmeric powder and give a nice mix.

  9. Cover the pan and cook it in low flame until the vegetables become tender. Stir occasionally.
  10. Stir occasionally.
  11. Add Coriander powder, Cumin powder into the pan and mix it well.

  12. Cover the pan and let it cook for a of minute in low flame.
  13. At the end sprinkle Garam masala powder, chopped Cilantro and give a nice mix.

  14. Switch off the flame and put the pan down.

Serving Instruction
Transfer the Corn Ki Sabji into a serving plate. Squeeze some Lemon juice on it and serve hot or warm to enjoy the best taste. Pair up the Curry with Sweet corn with any Indian bread or rice.
