Sooji Ki Kheer is an extraordinarily easy-to-cook and succulent Indian dessert which does not require any special occasion to be prepared. It is an amalgamation of roasted Rava, Milk, Sugar, dry fruits and Cardamom powder. It is not only consumed as dessert but also served with Poories as delicious tiffin or snacks.
I have sweet teeth and I know many of you are like me. Sometimes, I have sudden craving for sweet dishes and this dessert always helps in rescuing me. Even children normally love sweets and this dish will be a treat to them. For Moms, it will be an instant dessert to bring big smile on their little ones’ faces.
I have learnt to cook this dessert from my mother. I still remember my school days, how she used to pack my tiffin box with this yummy Kheer and Poories and how gladly I used to share my tiffin box with my friends to bring smile to their faces too.
During Navaratri and Diwali, this dessert works great. Since my childhood, I have seen my Mom prepare many traditional desserts during these two festivals like Kesar Phirni, Chawal ki Kheer, Gajar ka Halwa and many more which takes a little longer to cook. But this instant dessert always used to bring happiness and relief on her face.
Reason behind its popularity
- To prepare Sooji Ki Kheer, very limited ingredients required. Most of the ingredients are always available in every Indian house pantry.
- To prepare this iconic dessert, it hardly takes 15-20 minutes without any hassle. For this reason, it is a great option for sudden guests.
- It is a very popular dessert for festive season too. Usually during festivals, we need to prepare multiple numbers of desserts and such quick as well as delicious dessert helps a lot to reach the goal.
- It has a very smooth and creamy texture and it is very easy to digest.
- It is one of the best options to introduce as solid food for babies. You would just need to add less Sugar and skip the dry fruits and turn it into a healthy baby food.
- It is one of the delicious and smart ways to make the growing children consume Milk without any hassles.
- It is easy to eat for people of old ages too because of its smooth texture.
How to cook perfect Sooji Ki Kheer?
- It is very important to select correct Rava for Sooji Ki Kheer. There are two types of Rava or Semolina available in the market. One is fine like dust and the other one is a bit coarse. I always use the second type for this dessert. It gives the perfect texture to the dish.
- Always roast the Rava before adding into the Milk. It resists the Sooji Ki Kheer to become soggy and sticky and helps to bring best texture to the dish.
- You can roast the Rava in any edible Oil like Olive oil, vegetable oil and Sunflower oil but the clarified Butter (Ghee) goes best with the recipe. It gives perfect aroma to the dish.
- Use full fat Milk rather than skimmed Milk. It helps to make the Kheer creamier.
- Always use a heavy bottom pan to cook this dessert. Otherwise, the milk may stick to the bottom of the pan.
I have used Cashews, Raisins and Almonds to the Sooji Ki Kheer. But you can add any of your favourite dry fruits. I have used refined white Sugar to sweeten the dish.
In this preparation, I have used Cardamom powder instead of Cardamom pods. You can use any one of these but make sure to discard the Cardamom pods before serving. A sudden bite of Cardamom pods can make your guests or friends unhappy and may waste all the efforts at once.

Ingredients:
- Whole milk, 500 ml
- 4 tablespoons of Sooji (Semolina)
- 2 tablespoon Raisins (half of the amount to be used for garnishing)
- 2 tablespoons Cashews
- 1 tablespoon Almond, for garnishing
- 5 tablespoons of Sugar, (Add according to preferred taste)
- ¼ teaspoon Cardamom powder (Elaichi powder)
- Clarified Butter (Ghee) for cooking
Instructions:
- Take the Milk in a heavy bottom saucepan and bring it to boil.
- When the Milk starts boiling, put the flame in low and stir occasionally.
- On the other hand, add Ghee into a different pan and let it melt.
- Add Cashews, Raisins into the pan and fry them for few seconds in low flame.
- Take them out on a plate and keep aside.
- Add the Rava (Semolina) into the pan and roast them in low flame till its colour turns light brown and a nutty flavour comes out.
- Cook it for 2-3 minutes and stir continuously. Otherwise, the Rava will not get roasted evenly and may burn from the bottom.
- Add the roasted Rava into the Milk (Step 2) and stir vigorously. Otherwise, lumps may occur.
- Cook it for a couple of minutes till it thickens in low-medium flame.
- Add Raisins and Cashew nuts (Step 5) and give a nice mix.
- Add Sugar and stir until the Sugar gets dissolved.
- Put the flame in low and cook until you get the perfect consistency.Note: Sooji Ki Kheer thickens after cooling down to room temperature or chilled.
- At the end, add Cardamom (Elaichi) powder and mix it thoroughly. Make sure that there are no lumps.
- Switch off the flame and keep the pan down.
Serving Instruction
Let the dessert cool down. Transfer the Sooji Ki Kheer in serving bowls. Garnish with Raisins and Almonds. Serve as dessert or pair up with Poories to serve as tiffin or snacks. Enjoy the healthy dessert with family and friends.
