Bati chorchori is a brilliant recipe that is cooked in a unique technique of cooking which was invented in the kitchens of Bengal. In this recipe, Broccolis are cooked with Potatoes, Tomatoes, Bell Peppers and Peas in Mustard oil without using any spice and water. It is an absolute comfort food and ridiculously easy to prepare.
Bati Chorchori is hugely popular among Bengalis and specially Phulkopir Bati Chorchori during winters. Broccoli Bati chorchori is one of the variations of Phulkopir Bati Chorchori. In this recipe, I have added Peas, Bell Peppers and Tomatoes to make the dish colourful and healthier.
As everyone knows, Potatoes are the best friend of Bengalis and any Bengali dish is incomplete without Potatoes. Whether it is Macher jhol, Mangsher jhol or Chanar dalna, Potatoes are always there to enhance the taste of the dishes. The story continues to be the same even with Bati Chorchori.
To cook Broccoli Bati chorchori, I have not used any whole spice or ground spice other than Turmeric powder and Chilli powder.
I have used Mustard oil to prepare this dish like traditional recipe. It gives a pungent flavour to the dish and tastes better than any other oil. To prepare a perfect Bati chorchori, no water is used in the preparation. So, you would need a bit of more oil as considered to any other normal preparations.
I have added Sugar in this dish. It enhances the taste of Bati Chorchori. Bengalis and Gujrati’s are well known for adding of sugar in curries.
Difference between Chorchori and Bati Chorchori
Though both the terms sound similar, but the techniques of cooking are different from each other. Both are brilliant ways of cooking and results delicious dishes.
I have already shared the recipe of Sheem-Data Chorchori (Bengali Style mixed vegetable in Mustard Sauce) where I have mentioned the tips and tricks to prepare perfect Chorchori.
Chorchori is nothing but a Bengali style of cooking mixed vegetable. It does not have any strict rules or recipe for its preparation. It is cooked with different kind of seasonal vegetables. Sometimes with fishes too. It completely depends on the availability of vegetables in your freeze. In ancient times, people used to prepare this dish with all the left-over vegetables. Sometime people use Mustard seeds paste for the preparation of Chorchori but not always.
Bati Chorchori is a different technique of cooking vegetables. In this case, all the vegetables are taken into a Bati i.e. a large mixing bowl and only Salt, Turmeric powder and Mustard oil are added to the bowl. After mixing all the ingredients properly, everything is transferred to a pan which has a lid to cover. Then the vegetables are cooked without using any other spices or water. It is a slow cooking process which is cooked in lowest flame using cover.
How to eat Broccoli Bati Chorchori?
It is a pure Bengali delicacy and goes awesome with hot steamed rice. A piece of raw Onion and green chilli take the dish to a different level. The flavour of Mustard oil in the dish would loop you in the authenticity of Bengal. It is an absolute comfort food which never gets old and people never get bored.

Ingredients:
- 1 medium Broccoli, cut into florets
- 1 large Tomato, diced
- 1 large Potato, diced
- ½ Red Bell Pepper, diced
- ½ Green Bell Pepper, diced
- 4 tablespoons Peas, fresh or frozen
- 3-4 tablespoons Cilantros, chopped
- 2 Green Chillies
- ½ teaspoon Turmeric powder
- ½ teaspoon Chilli powder
- 1 and ½ teaspoons Sugar
- Salt to taste
- 4-5 tablespoons Mustard oil
Instructions:
- Cut and wash all the vegetables and keep them aside.
- Take a large mixing bowl and add Broccoli florets in it.
- Add the other vegetables one by one into the mixing bowl.
- Add chopped Cilantros, Salt, Turmeric powder, Chilli powder and oil into the bowl.
- Mix all the ingredients thoroughly.
- Take a pan and put it in low flame.
- Transfer the mixture (Step 5) into the pan and cover it with lid.
- Cook it in low flame for 10 minutes.
- Take off the lid and give a nice stir.
- Cover the pan and cook them for another 5 minutes.
- Add Sugar and give a nice mix.
- Cover the pan and cook them until all the vegetables become tender.
- Cook them for another 5 minutes. Do not add water.
- Check the vegetables. If they are not yet done then cover the pan and cook them for another couple of minutes.
Serving Instruction
Transfer the Broccoli Bati chorchori into a serving bowl. Serve immediately for best result with piping hot steamed rice and enjoy the BANGALIANA, I mean the authenticity of Bengal.
