Babycorn Manchurian is one of the most succulent and famous vegan Indochinese recipes worldwide. In this preparation, Babycorn fritters are cooked in sauces with Onions, Spring Onions, Garlic and Bell Peppers. It is a crispy and spicy Babycorn snack which is mostly served as snacks or starter.
Today, I was craving to munch some spicy chinese snacks. When I checked my refrigerator, I found Baby Corns, which were stored for the past 3-4 days. I decided to prepare some spicy starter with these baby corns rather than any usual curries and nothing could be a better option than Babycorn Manchurian.
Recipe for baby corn Manchurian is very quick and easy. This Indochinese delish requires very limited and regular ingredients to get prepared. It can be prepared in two ways.

  • Baby corn Manchurian with gravy
Both the preparations taste amazing. Today, I will share the dry version of Baby corn Manchurian, which is renowned as a crispy appetizer.
I am a Baby Corn lover and can have it in any form. Whenever I go to any restaurant, I always order at least one Baby Corn starter. For most of the Vegetarians in India, other than Indian cottage cheese (Paneer) and Mushrooms, Baby Corns are widely popular as a main course and snacks.

Babycorn recipe
Babycorn recipes are like backbone to the Vegan world. Baby Corn is a very versatile vegetable. It has a slight sweet taste with a bit of crunch. You can have it in many forms, like baked, roasted, boiled, stir fried, cooked and even raw. It is a very good option for preparing salads and even soups. It tastes superb in any of these preparations.

How to make Baby corn Manchurian?
For the babycorn Manchurian preparation, first I have prepared the batter. I have used all-purpose flour for this. Few people use corn flour or Arrow-root to prepare the batter as well. You can use any one of these according to your own preference. The consistency of the batter should not be too thick or thin. It should be moderate.
I have added some spices, salt and ginger garlic paste into the flour to make the batter. It gives a nice flavour and taste to the babycorn nuggets.
I have dipped the babycorns in the batter and deep fried them. In most of the restaurants and street food corners, babycorns are always deep fried for Manchurian preparation. It is the key step to get the crispy babycorn Manchurian.
For the babycorn Manchurian Masala, I have used both Onions and Spring Onions. It gives the best flavour to the dish. First, I have fried the chopped Garlic and then added the Onions and Green Onions, one by one. I have used red Bell Peppers for the recipe, but you can use whichever you like. It can be green, orange or yellow, does not matter.
I have used Soya sauce, Chilli sauce and Tomato ketchup to flavour up the dish. I have not used any ground spice for the masala. At the end, I have added some spring onion green too for enhancing the flavour of the dish.

Ingredients:


For batter
  • ¼ cup All-purpose Flour
  • ½ teaspoon red Chilli powder
  • 1 teaspoon Ginger-Garlic paste
  • ¼ teaspoon grounded Black Pepper
  • Salt to taste
  • Water as required

For Cooking
  • 125 grams of Baby corn
  • 4 cloves of Garlic, finely chopped
  • 1 Onion large, finely chopped
  • 2 stalks of Spring Onions, sliced
  • ½ red Bell Pepper, medium diced
  • 1 teaspoon Soya sauce
  • 1 teaspoon Chilli sauce
  • 2.5-3 tablespoons Tomato sauce
  • Salt to taste
  • Oil for cooking

Instructions:
  1. Take all-purpose Flour into a mixing bowl.

  2. Add Black Pepper powder into the bowl.

  3. Then add red Chilli powder into it and give a nice mix.

  4. Add Ginger-Garlic paste into the flour.

  5. Mix all the Ingredients and add little water at a time and mix it.

  6. Make a smooth batter.

  7. Add Salt and mix it well.

  8. Add Baby Corns into the batter and coat it nicely.

  9. At the same time, put a pan on Stove and add Oil to fry the Baby Corns.

  10. Once the Oil is hot, add the coated Baby Corns and fry them in medium flame.

  11. After 2-3 minutes turn them with the help of a turner.

  12. Fry them evenly till golden brown.
  13. Transfer the fried Baby Corns on a tissue lined plate.

  14. Take the excess oil out of the pan or add 1 ½ tablespoons of oil into a different pan.

  15. Once the oil is hot, add Garlic into the pan and fry them till golden brown.

  16. Add Onions and sauté in high flame for 2-3 minutes till it has becomes translucent.

  17. Add solid parts of the Spring Onions into the pan and give a mix.

  18. Cook it in high flame for a minute. Stir frequently.
  19. Add red Bell Peppers and mix it well.

  20. Cook in medium high flame for 2-3 minutes.
  21. Add Soya sauce and mix it properly.

  22. Add Chilli sauce, Tomato sauce and mix it nicely.

  23. Cook it in low flame for couple of minutes.
  24. Add salt and give a nice stir.

  25. Add the Baby Corn nuggets (Step 13) and toss it until they get coated with the sauce.

  26. Put the flame in high and add the hollow green parts of the Spring Onions into it.

  27. Give a nice mix and switch off the flame.


Serving Instruction
Transfer the Babycorn Manchurian on a serving plate. Garnish with some chopped Spring Onions. Serve hot or warm to enjoy the best taste. Serve the luscious dish as snack or appetizer to your family and friends.
