Chicken Pulao with Leftover Chicken is one of the most reliable and brilliant ways to use any leftover or extra pieces of cooked Chicken to prepare a fresh complete meal. In this preparation, Rice is cooked with Onion, Garlic, Carrots, Peas and grilled Chicken slices in some whole and ground spices. This one pot meals can be served as lunch or dinner and the best part is it does not require any sides for accomplishment.
Yesterday, I cooked some grilled Chicken which tastes superb next day after getting warmed in oven. But I decided to prepare something new and unique dish with those extra Chicken pieces. Finally, I came up with the quick idea to prepare Chicken Pilaf a one pot meal.

Chicken pulao is a very renowned Chicken and Rice Recipe which is hugely famous in the subcontinents of Asia.
It is known as Chicken Pilaf in the USA and Chicken Pilau in the UK.

Now a days Leftover Chicken recipe are in high demand. There are three main reasons behind it.
  1. Wasting food is a big crime. It’s always best to use it in any way.
  2. It stops to eat the same repetitive dish next day.

Chicken Pulao with Leftover Chicken is a very quick and easy recipe and gets prepared within half an hour. If you already have cooked Chicken, then I am sure nothing can be easier than this recipe for you. You would require very limited and regular ingredients to prepare this delectable dish.

What kind of Chicken to be used for the recipe?
To cook Chicken Pulao with Leftover Chicken, there is no hard and fast rule to use only grilled Chicken. In fact, cooked Chicken, baked Chicken, grilled Chicken, roasted Chicken, boiled Chicken or leftover chicken curry can be used for this recipe.
It is even fine to use raw Chicken too. Just season them with Salt, Pepper, Garlic and shallow fry them. All in all, this is a full proof recipe which can never go wrong.

What kind of Rice gives best result for the dish?
I have used Basmati rice for this preparation. Basmati Rice has its own aroma which goes superb with the dish and the thin and long grains of this rice makes the dish more attractive and eye catchy.
You can also use other varieties if rice like sona masuri, jasmine etc. But, Basmati rice gives best result for this dish.
Tip: For the best texture of Basmati rice, always soak them in normal water for half an hour and then drain the water. Don’t oversoak them or else rice may become soft and can break while cooking.

Ingredients:

  • 1 cup of Basmati rice
  • 2 Grilled Chicken breast, medium sliced
  • 1 large Onion, thin sliced
  • 3-4 cloves of Garlic, finely chopped
  • 2 tablespoons Green Peas
  • 1 Carrot, small diced
  • 1 Green Chilli
  • ½ tablespoon Ginger-Garlic Paste
  • 2 Cloves
  • 2 Cardamoms
  • 1-inch Cinnamon stick
  • 1 Bay leaf
  • ½ teaspoon Turmeric powder
  • ½ teaspoon Chilli powder
  • 1 teaspoon Cumin powder
  • ½ teaspoon Coriander powder
  • ¾ teaspoon Garam masala powder
  • 1 teaspoon Clarified Butter (Ghee)
  • Salt to taste
  • Oil for cooking
  • 1 and ¾ cups of Water for cooking

Instructions:
  1. Wash the Basmati rice and soak it in water for 30 minutes.

  2. Strain the water and keep it aside.

  3. Put the pan on flame and let the pan become dry.
  4. Add Oil into the pan.
  5. Once the Oil is hot, add Bay Leaf, Cinnamon stick, Cardamoms, Cloves and let them crackle.

  6. Add chopped Garlic and fry them till golden.
  7. Add Onions, green Chilli and fry them until the Onions become translucent.

  8. Add Ginger-Garlic paste and give a nice mix.

  9. Cook them in medium flame for 2 minutes until the raw smell goes away.
  10. Add Carrots and give a nice mix.

  11. Cover the pan and cook them in low flame for 2-3 minutes.
  12. Add Peas and mix it well.

  13. Cover the pan and cook it in low flame until the Carrots become tender.
  14. Add the Chicken pieces into the pan.

  15. Add Salt, Turmeric powder, Chilli powder and give a nice stir.

  16. Add Cumin powder, Coriander powder, Garam Masala powder and mix it well.

  17. Add Clarified Butter (Ghee) and mix it well.

  18. Add water and give a nice stir.

  19. Cover the pan and cook them in high flame until the water simmers.
  20. Put the flame in low and add soaked rice (Step 2) into the pan.

  21. Cover the pan and cook them in medium high flame for 5 minutes.

  22. Stir the rice very gently once or twice and cover the pan again.
  23. Cook them in lowest flame for 4-5 minutes and switch off the flame. The duration of cooking may vary due to quantity, quality of rice and temperature of the hob. Always check the rice before switching off the flame.

    Tip: Basmati rice is very delicate. Over mixing can break the rice. Always handle the rice with light hands.


Serving Instruction
Transfer the portions of Chicken Pulao with Leftover Chicken on serving plates. Serve immediately for the best taste. Serve hot or warm and enjoy your quick meal.
