Rajasthani cuisine is a royal cuisine influenced by Rajputs. This cuisine has an expertise in long-lasting food which can be consumed without heating. This kind of food is suitable for the arid region, that’s why, Rajasthani food is rich with huge ranges of succulent pickles, chutneys, papad and snacks. Rajasthani cuisine contains different varieties of food including non-vegetarian dishes, vegetarian dishes and even Jain dishes which are no onion no garlic recipes. Aam ki launji recipe is one of the asset recipes of this incredible cuisine.
In India, life becomes quite lethargic during summers due to extreme heat and scorching sun. Only one thing which provides refreshment during those days is the king of fruits – ‘Mangoes’, with its incredible flavour and supreme taste. Mangoes are one of the most versatile fruits in this earth. Whether its ripe or unripe does not matter. Both the varieties are used to prepare different collection of epic recipes including beverages, curries, chutneys, pickles, snacks and of course desserts.
Aam ki launji or Kairi ki launji is more than a simple raw mango recipe Indian and it gets prepared very easily. It requires few basic and regularly used ingredients to get prepared. This sweet and tangy delight gets prepared very quickly without investing much time and effort. It can be a great addition to enhance the taste of your regular meals during summer.
Whenever I talk about mangoes, it takes me to my childhood memories. We used to visit to my maternal grandparents’ house every year during summer vacations. It is there that we had dozens of mango trees in the garden. We all the cousins used to stone and collect fresh mangoes from there. I still remember how my grandpa used to give a carton full of mangoes to my mom while returning from there. It feels so nostalgic to chew the cud of those Golden days!!
My mom used to prepare different varieties of raw mango chutneys with green mangoes, especially the Bengali specialities.
First time I have tasted Aam ki launji or kairi ki launji recipe was in my college hostel. One of my Marwari roommates had brought this spicy delight from her home and offered me to have some. I just loved the preparation. I got to know about the recipe in details for her.

What is Aam ki launji?
Aam ki launji or kairi ki launji is a spicy, sweet and tangy relish of Rajasthan prepared with Green mangoes, sugar or jaggery, chilli powder and some specific spices. Many people refer it as a sweet pickle, and many also refer it as spicy chutney. It is more than a condiment and is normally served with flat breads as a side. It is also accompanied with Rice and Dal.
Aam ki launji recipe with step by step photos and instructions have been provided in the ‘Instructions’ section of the recipe. But before directly jumping into the recipe, let me share few interesting facts about the recipe and the key ingredient.

How to make aam ki launji?
To prepare Aam ki launji, first I have peeled the green mangoes and cut them into wedges lengthwise. I have removed the kernel too from the mangoes.
There are huge varieties of green mangoes available in market during summer. Any variety of mango is fit for this recipe. But try to pick green mangoes which are lesser sour. It helps to add lesser sweetener during the time of cooking the recipe for aam ki launji.
I have sweetened the aam ki launji with sugar. But jaggery can also be used for the recipe. It’s completely dependent on your personal preference and availability of the ingredient. The addition of jaggery makes the kairi ki launji darker in shade. But the taste of the dish will remain equally delicious.
Aam ki launji recipe is spicy and full of flavours. I have used some whole spices like cumin seeds, fennel seeds and nigella seeds for the tempering of the dish. Other than these, I have added cumin powder, coriander powder and garam masala powder for the flavouring of the dish.
I have used generous amount of red chilli powder to make the launji spicy. I have also added turmeric powder and black salt in this preparation. Turmeric powder gives a nice colour to the Aam ki launji recipe and on the other hand, black salt enhances the taste and flavour of the dish. I have added ½ cup of water for the thick spicy gravy and sticky texture.
But the best part of the Aam ki launji recipe is that there is no rule for preparing it. You can adjust the amount of any of the ingredients according to your choice. You can adjust the amount of red chilli powder for your preferred choice heaty taste. If you prefer less or more spicy taste, then you can adjust the amount of whole as well as ground spices. If you don’t like tang, then you can increase the amount of sugar or jaggery. If you like dry kairi ki launji then you can skip water too. In every house, it is prepared differently according to their preferred taste.

Ingredients:

  • 2 medium Green Mangoes, peeled and cut lengthwise
  • 1/3 cup Sugar (Quantity may vary according to preferred taste)
  • ½ teaspoon Salt
  • ¼ teaspoon Black Salt
  • ¼ teaspoon Cumin seeds
  • ¼ teaspoon Fennel seeds
  • ¼ teaspoon Nigella seeds
  • ½ teaspoon Turmeric Powder
  • ½ teaspoon Chilli Powder
  • ½ teaspoon Cumin Powder
  • ½ teaspoon Coriander Powder
  • ¼ teaspoon Garam masala Powder
  • ½ cup water
  • 1½ to 2 tablespoons Oil, for cooking

Instructions:
  1. First peel the green mangoes and cut them lengthwise in wedges. Wash and keep them aside.
  2. Put a pan on flame and let it become completely dry.
  3. Add oil and wait until the oil is hot.

  4. Add cumin seeds, fennel seeds and nigella seeds into the pan and let them crackle.

  5. Add the green mango pieces into the pan and give a nice mix.

  6. Add salt, turmeric powder, red chilli powder into the pan and give a nice mix.

  7. Cover the pan and cook it in lowest flame for 2 minutes.
  8. Add black salt, cumin powder, coriander powder, one by one into the pan and give a nice mix.

  9. Cover the pan and cook it in lowest flame for a minute. Add 1 tablespoon of water if required to cook the spices.
  10. Add ½ cup of water into the pan and give a nice stir.

  11. Cover the pan and put the flame in high until the water simmers.
  12. Put the flame in low and cook it for 5-6 minutes with lid until the mangoes get tender.
  13. Add sugar into the pan and mix it nicely.

  14. Cook it in medium high flame for couple of minutes until the gravy becomes thick.
  15. Add garam masala powder at the end and mix it very nicely.

  16. Cook it in high flame for few more seconds.

  17. Switch off the flame and put the pan down.

Serving Instruction
Serve the aam ki launji as a side with rotis, parathas, stuffed parathas or with rice-dal and make your regular meal more exciting and delicious.

How to store aam ki launji?
Aam ki launji has a long life and it can be stored for a long duration of time. If you have not added water into the recipe then you can store it in refrigerator for 3 months in an airtight container. If you have added water to the recipe then you can store it in refrigerator for 7-10 days in an airtight container.
