Kacha kola bhaja aka crispy kacha kolar chips is a very popular and comforting kacha kola recipe among Bengalis. It is a crispy chips recipe prepared with raw banana aka green banana. In this preparation, raw bananas are peeled and thinly sliced. Then they are soaked in seasoned water and deep fried till crispy. It is an excellent side and goes superb with dal and rice.

What is Kacha Kola bhaja?

Kacha kola bhaja is a Bengali delicacy and it’s a Bengali name. Here the word ‘Kacha kola’ means ‘raw banana’ and ‘Bhaja’ means ‘Fry’. In short, it’s a raw banana fry recipe.

Banana is one of the most popular fruits around the world and it can be easily available at any place. Raw bananas are small to medium in size with thick smooth green peels.

As a Bengali, I grew up having different varieties of kacha kola recipe and kacha kolar chips is one of my favourites. I have learned this traditional recipe from my mother. I still remember when my dad brought raw bananas from the market, I always asked my mom to prepare crispy kacha kolar chips. They are my all-time favourite.

Kacha kola bhaja is a simple and easy recipe. It requires only three basic ingredients to prepare the dish and all are easily available in any Bengali kitchen pantry. The difficulty level of cooking this dish is low.

Benefits of raw Banana

How to make Kacha Kola bhaja?

To prepare kacha kola bhaja, first cut the two ends of the raw banana and peel them nicely. Then cut them into thin slices. Raw bananas release starchy fluid. So, transfer the slices to cold water immediately.

Then take another bowl and add cold water to it. Add some salt, turmeric powder into the water and mix it well. Pour the raw banana slices into the salt-turmeric water and soak it for 10 minutes. Then drain the slices and pat dry them in a kitchen towel or tissue.

Now, put a pan on flame and allow it to become completely dry. Add enough oil to deep fry the raw banana slices. Once the oil is hot, turn the flame to low and add the banana slices into the oil. Stir them continuously and fry them evenly till light golden in colour. Strain the excess oil and transfer the kacha kolar chips to a tissue-lined dish.

Sprinkle some salt and toss the chips and now it’s ready to serve.

  • ½ teaspoon Turmeric powder
  • 1 teaspoon Salt
  • Vegetable Oil to deep fry

  1. First, cut the two ends of the raw banana and peel them nicely.
  2. Cut them into thin slices.
