Aloo puff patties aka potato puff pastry is a delectable veg snacks recipe which is hugely popular in the subcontinents of India. It is one of the very popular Indian street food as well. These triangular divines are bursting with flavours along with the perfect outer crisp and melt in the mouth in every bite. In this preparation, puff pastry sheet pieces are stuffed with spicy potato-green pea filling and then baked till crispy golden in colour. Aloo puff recipe is mostly served as an evening snack with a cup of tea or coffee.

About the recipe

Aloo puff patties is a savour Indian patties recipe which is flavoured and slightly spicy. They are mighty crispy on the outside and with large air pockets inside. A single bite is the perfect combo of taste, crunch and burst of flavours. It is a very popular snack among students which you can easily get in many bakeries and cafes.

The recipe for aloo patty has always been one of my favourite Indian snacks recipe since childhood. I have grown up eating this crispy delight. I still remember how I and my elder brother used to ask our dad to get some aloo patties for evening snacks and we used to devour them with immense pleasure.

After coming to London, I started missing the taste of my country’s spectacular street food. One day, I was shopping in a supermarket and suddenly I noticed a readymade puff pastry sheet. After that, I didn’t waste a single moment and grabbed one to prepare Indian puff pastry with potato. This recipe tastes exactly like potato puff sold in a bakery.

This recipe for potato puff pastry is full-proof, and nothing can go wrong with it. I have used readymade pastry sheets which makes my job immensely easier. It is a huge hit in my family and they always ask me to prepare it frequently.

Aloo puff patties are very simple and easy to make. It only requires a few handfuls of ingredients to get prepared. All the ingredients used for the recipe are easily available in any supermarket. The best part of the recipe is that you can prepare it in larger batches without investing any extra time and effort. So, aloo patty is a great option as an appetizer or snack for occasions like small parties, family get-togethers etc.


Potato puff pastry ingredients

Puff pastry sheet: The primary ingredient of the recipe which provides taste, texture and body to the dish. I have used a readymade puff pastry sheet for the recipe. If you like to prepare puff pastry dough at home and make the recipe then go for it.

Potato: It is the primary ingredient of the stuffing. I have used boiled mashed potato to prepare the dry curry.

Green Peas: The addition of green peas enhances the taste of the stuffing.

Onion & ginger: These are the most important ingredients of the recipe which adds taste, texture and flavour to the curry.

Green chilli & coriander leaves: The addition of green chiili adds a heaty taste and the addition of coriander leaves adds a refreshing flavour to the curry.

Cumin seeds: I have used cumin seeds for tempering. It gives a nice flavour to the curry.

Ground spices: I have used turmeric powder, red chilli powder, coriander powder, chaat masala, and garam masala powder in the curry. I have used hing aka asafoetida too during the time of tempering.

Salt: It adds a savoury taste to the curry.

Aloo puff patties with step-by-step photos and instructions have been provided in the ‘Instructions’ section. If you follow the steps carefully, you will get the perfectly crispy potato puff pastry. I have included all the tips and tricks to prepare perfectly crispy pastry in a single attempt.



Tips to prepare perfect Potato puff pastry
  • Roll the puff pastry sheet once for better finishing.
  • Don’t add too much stuffing into each puff pastry or else the edge may get open during the time of baking.
  • You can adjust the amount of chilli for the stuffing according to your own preference.
  • Don’t forget to brush the puff pastry with milk before putting it into the oven. It gives a nice hue.

How to make Potato puff pastry?

To prepare the aloo puff patties, first we need to prepare the potato stuffing. To prepare the potato stuffing we need to boil the potatoes.

Wash 2 potatoes and put them in the pressure cooker with enough water. Close the lid of the cooker and cook them over medium flame till 2 whistles. Switch off the flame and allow the pressure cooker to release pressure. Cook the potatoes till al dente not mushy. Let the potatoes cool down till touchable. Then peel off the skin of the potatoes and mash them thoroughly either with a potato masher or with a fork. Keep it aside for later use.

Now, put a pan on flame and allow it to become completely dry. Then add oil into the pan and once the oil is hot, add the cumin seeds into the pan and let them crackle. Add hing aka asafoetida and give a quick mix.

Then add chopped onions into the pan and cook it on a medium flame for 6-8 minutes until it becomes soft and translucent.

After this, add ginger paste, chopped green chillies into the pan and mix it well. Cook it over low flame for 2-3 minutes until the raw smell disappears.

Then add the green peas into the pan and mix it well. Cover the pan and cook it over low flame for 5-6 minutes.

Now, add salt, red chilli powder, coriander powder, garam masala powder, chaat masala and give a nice mix. Cook it on low flame for another 2 minutes.

Add the boiled mashed potatoes and mix them thoroughly. Cook it on a medium flame for 3-4 minutes and stir it frequently.

Add chopped coriander leaves and mix them well. Turn off the flame and keep it aside to cool down to room temperature.

Then take out the puff pastry sheet and spread it over a butter paper. Roll it once all over with a rolling pin. Now, cut the pastry sheet into 4-inch square pieces.

Brush the edges of the puff pastry sheet with milk. Then add 2 tablespoons of stuffing to the pastry sheet piece and fold it into a triangular shape. Repeat the same process with the rest of the pastry sheet squares.

In the meantime, preheat the oven for 10 minutes 390°F/200°C/180°C Fan

Line the baking tray with parchment paper and make it ready. Transfer all the triangular aloo puff to the baking tray. Now brush all the aloo puff pastry with milk.

Place the baking tray in the middle of the preheated oven for 20 minutes. Take out the baking tray and allow it to cool off for 5 minutes. Now the aloo puff patties are ready to serve.

  • 2 Potatoes
  • 1 small Onion
  • ½ cup green Peas, fresh or frozen
  • 1 teaspoon Ginger paste
  • 1-2 green Chillies, finely chopped
  • 3-4 tablespoons Coriander leaves, chopped
  • ½ teaspoon Cumin seeds
  • ¼ teaspoon Hing aka Asafoetida
  • ½ teaspoon Turmeric powder
  • ½ teaspoon red Chilli powder
  • 1 teaspoon Coriander powder
  • 1 teaspoon Chaat masala
  • 1 teaspoon Garam masala
  • Salt to taste
  • 2 teaspoons Oil for cooking

Other ingredients
  • 1 sheet of Puff pastry
  • 2 tablespoons of Milk for brushing



Instructions:
  1. Wash 2 potatoes and put them in the pressure cooker with enough water. Close the lid of the cooker and cook them over medium flame till 2 whistles. Switch off the flame and allow the pressure cooker to release pressure. Cook the potatoes till al dente not mushy.
  2. Let the potatoes cool down till touchable and peel the skin off. Then mash the potatoes either with a masher or using your fingers. Keep it aside for later use.
  3. Now, put a pan on flame and let it completely dry. Then add 2 teaspoons oil to the pan.
  4. Once the oil is hot, add ½ teaspoon cumin seeds into the pan and let them crackle.
  5. Add ¼ teaspoon hing aka asafoetida and give a quick mix.
  6. Add chopped onions into the pan and cook it on a medium flame for 6-8 minutes until it becomes soft and translucent.
  7. Add 1 teaspoon ginger paste, 1-2 chopped green chillies into the pan and mix it well. Cook it over low flame for 2-3 minutes until the raw smell disappears.
  8. Add ½ cup green peas into the pan and mix it well. Cover the pan and cook it over low flame for 5-6 minutes.
  9. Add salt, ½ teaspoon red chilli powder, ½ teaspoon turmeric powder, 1 teaspoon coriander powder, 1 teaspoon garam masala powder, 1 teaspoon chaat masala and give a nice mix. Cook it on low flame for another 2 minutes.
  10. Add the boiled mashed potatoes (Step 2) and mix them thoroughly. Cook it on a medium flame for 3-4 minutes and stir it frequently.
  11. Add 3-4 tablespoons chopped coriander leaves and mix them well.
  12. Turn off the flame and keep it aside to cool down to room temperature.
  13. Take out the puff pastry sheet and spread it over a butter paper. Roll it once all over with a rolling pin. Now, cut the pastry sheet into 4-inch square pieces.
  14. Brush the edges of the puff pastry sheet with milk.
  15. Add 2 tablespoons of stuffing to each pastry sheet piece. Then fold it in a triangular shape.
  16. Repeat the same process with rest of the pastry sheet squares.
  17. In the meantime, preheat the oven for 10 minutes 390°F/200°C/180°C Fan.
  18. Line the baking tray with parchment paper and make it ready. Transfer all the triangular aloo puff to the baking tray.
  19. Now brush all the aloo puff pastry with milk.
  20. Place the baking tray in the middle of the preheated oven for 20 minutes. Take out the baking tray and allow it to cool off for 5 minutes.
  21. Now the aloo puff patties are ready to serve.


Serving Instruction

Transfer the aloo puff patties to the serving plate. Serve it warm to enjoy its best taste. Pair up the scrumptious snack with a cup of tea or coffee and enjoy.
