Ingredients:

  • 4 Apples, any sweet variety
  • 1/3 cup + 2 tablespoons Sugar, as per taste
  • 12-15 Cashew nuts
  • ¼ teaspoon Cardamom powder (Elaichi)
  • 1 pinch or 1/8 teaspoon of Cinnamon powder (Dalchini)
  • 7-8 Saffron streaks (Kesar)
  • 2 tablespoons Ghee (Clarified butter)

Instructions:
  1. First wash the apples and cut each apple into four pieces. Remove the core from each piece with the help of a knife. Then grate them with the help of a grater.

  2. Keep the grated apples aside on a separate plate. The apple will become dark in colour due to its direct contact with air. No need to worry.

Note: If you have food processor then peel off the skin of the apples and then put it into the food processor to grate.

  3. Put a pan on flame and let it become completely dry.
  4. Add 2 tablespoons ghee and allow it to melt.

  5. Add 12-15 cashew nuts into the pan and fry them till golden. Keep the cashew nuts aside.

  6. Add the grated apples (Step 2) into the pan and give a nice mix.

  7. Cook it in high flame for couple of minutes until the apple releases its juice. Stir it continuously.
  8. Put the flame on medium low and cook it for 10-12 minutes until the apples get soft but not mushy. Stir on regular intervals.
  9. Add a pinch of cinnamon powder into the pan and give a nice mix.

  10. Add sugar into the pan and mix it well.

  11. Add 7-8 saffron streaks into the halwa and stir it nicely.

  12. When the sugar melts, the halwa becomes watery and the saffron streaks induce flavour and slight colour into it.
  13. Stir the apple halwa continuously over medium flame until the extra moisture evaporates. It takes around 5-6 minutes to get the perfect texture.
  14. Put the flame in low and add ¼ teaspoon cardamom powder into the pan. Give a nice mix.

  15. At the end, add the fried cashew nuts (Step 5) and mix it well.

  16. Switch off the flame and put the pan down.
