What is Bread Upma?

Honestly, bread does not require any introduction worldwide. Upma is basically a savoury porridge prepared with roasted rava, veggies, spices, nuts and herbs. It is a South Indian staple breakfast recipe which is prepared in almost every house in South India.

Bread upma is totally different from rava upma in taste and texture. But still, it is called upma, maybe because the same tempering is used for both recipes. South Indian bread upma recipe does not have a porridge-like consistency. In this preparation, toast bread is cut into small pieces and then tossed with onion, tomato, spices and herbs. All the bread pieces are tender and soaked with masala which melts in the mouth.

Bread upma recipe is mostly served as a comforting breakfast with a cup of tea or filtered coffee. It does not require any side or condiment to relish. It can also be served as a brunch or evening snack.

I am a huge fan of South Indian food and always try different dishes of this cuisine. Upma, dosa, idli, uttapam etc. have occupied the top places on my list of favourites. When I was working in Bengaluru, I always used to go to a South Indian tiffin centre for breakfast and order bread upma or rava upma recipe at least twice a week. I think at that period, I got addicted towards it and its soothing flavour.

Apart from South India, I have seen crazy demand for bread upma in Maharashtra and a few parts of northern India too. After my marriage when I shifted to Pune, I saw lots of tiffin centres to sell bread upma recipes in the morning for breakfast. Initially, I was surprised to see the heavy demand for South Indian breakfast in the north. But later I understood that the South Indian breakfast recipe has spread its wings all over the nation with its extraordinary taste and flavour.

Reasons behind the popularity of Bread Upma

How to make Bread Upma?

To prepare bread upma, first toast the bread so the raw smell goes away. Take a dry pan and add the bread slices in a single layer. Then toast it over medium flame for 1-2 minutes from both sides till light brown patches appear. Then transfer the bread slices to a separate plate. Repeat the same process to toast the rest of the bread slices. If you have a toaster then you can use it instead of a tawa or pan to toast.

Then tear the bread into small pieces or cut them into small pieces and keep them aside. If the sides of the bread slices are too hard then discard them.

Chop the onion, tomatoes, coriander leaves and keep them aside.

Put a pan on flame and allow it to become completely dry. Add some oil to the pan and allow it to dry.

Once the oil is hot, add mustard seeds to the pan and allow it to crackle. Then add urad dal, cumin seeds for tempering and fry them on medium flame till the urad dal turns pinkish.

Then add asafoetida (hing), curry leaves, grated or finely chopped ginger, chopped green chillies and mix them nicely. Cook it over low flame for 20-30 seconds.

Add finely chopped onion and fry them over medium flame for another 5 minutes till translucent.

Then add chopped tomatoes into the pan and mix it well. Cook it over low flame for 3-4 minutes.

Add some water to the pan and mix it well. Cook the masala over low flame for a minute.

Then add the bread slices into the pan and mix it well so each piece of bread gets coated evenly with the masala. Cover the pan and cook it over low flame for 2 minutes.

Add chopped coriander leaves and give a nice mix. Turn off the flame and put the pan down.
