But before going further, I would want to let you know that this vanilla ice cream cake neither looks like an ice cream and not even a melted ice cream cone is inverted on the top of the cake. This is a cake recipe with ice cream in batter. Yes, I have used vanilla ice cream to prepare the cake base. I have replaced the liquid ingredients of cake with melted vanilla ice cream and outcome of the cake recipe is wonderful.

I have kept this vanilla ice cream cake recipe simple and basic without using any filling or frosting. But you can cherish the cake with your favourite frosting, filling or dressing and decorate it.

If you are looking for an instant vanilla cake recipe then nothing can be better than this cake recipe. Even if you are new to the journey of preparing eggless cake recipes then you are at the right place. This eggless cake recipe vanilla is rapid, delectable with crusty outside which everyone loves about it.

This cake recipe with ice cream is a super easy and an effortless recipe which is perfect for novice. It requires very limited ingredients to get prepared. I have used only 6 ingredients to prepare it out of which 2 ingredients are optional. Even it does not require any fancy equipment. What you need is just a whisker to prepare the instant cake recipe.

To prepare the cake recipe with ice cream, you can use any flavoured full fat ice cream other than vanilla ice cream. You can prepare any ice cream flavoured cake following this same recipe. But make sure the ice cream is not a low-fat or low-calorie ice cream because the low-fat ice cream or dairy free ice cream does not work for the recipe.

Ingredients list for the recipe

All-purpose flour: Yes, it is an all-purpose flour cake recipe. Sometimes, it is difficult to get cake flour in kitchen pantry. So, I have come up with this light and fluffy cake recipe using all-purpose flour.

Vanilla ice cream: It provides richness, flavour and taste to the cake recipe. This vanilla ice cream has replaced butter and condensed milk from a normal, eggless cake recipe.

Caster sugar: It gives sweetness to the cake.

Baking powder: It helps the cake to rise and make it lighter.

Vanilla extract: This is optional but gives extra flavouring to the cake.

Choco chips: The addition of semi-sweet Choco chips is completely optional, but it enhances the taste of the cake.


How to make vanilla ice cream cake?

To prepare the vanilla ice cream cake recipe, first keep the ice cream out of the fridge and allow it to melt completely. Then measure all the other ingredients and keep them aside. Take all-purpose flour, baking powder and sieve them together.

Grease an 8 inches cake tin with butter and line the bottom with wax paper. Make the cake tin ready before preparing the batter so that you can immediately pour the batter without investing time.

Preheat the oven for 10 minutes at 160°C Fan/180°C Electric/Gas 4.

Take a large bowl and add 2 cups of melted vanilla ice cream into it. I have used my homemade vanilla ice cream recipe without egg for the recipe. If you like, you can check the recipe.

Then add 1/3 cup sugar, 1 teaspoon vanilla extract into the bowl and whisk it for 2-3 minutes with a whisker. Add the sieved flour mixture into the batter in 3 portions and mix it nicely with a spatula using cut and fold method. Make a smooth, airy and lumps free batter with the ingredients. Add ½ cup semi sweet Choco chips into the batter and mix it well.

Pour the cake batter into the prepared cake tin and sprinkle some extra Choco chips over the top. Transfer the cake tin into the middle of the preheated oven for 30-35 minutes to bake the vanilla ice cream cake. For me, it took exactly 35 minutes. But sometimes the duration may vary due to difference in heat of oven.

Check the cake with the help of toothpick or skewer. If it is not done, then bake it for another couple of minutes and check again. Once it is done, transfer the cake tin on wired racks for 15-20 minutes to cool down. Then you can insert knife through the edges of the cake to demould it.

Ingredients:

1 cup = 250 ml

  • 2 cups melted Vanilla ice cream, full fat
  • 1¼ cup All-purpose flour
  • 1/3 cup Sugar
  • 1 teaspoon Vanilla extract (Optional)
  • ½ tablespoon Baking powder
  • ½ cup semi sweet Choco chips (Optional)



Instructions:
  1. Preheat the oven at 180°C/160°C Fan/Gas 4.
  2. On the other hand, grease an 8-inch diameter cake tin with butter and cut a piece of parchment paper to fit the bottom of the tin. Keep the cake tin aside.
  3. Place a sieve on a large mixing bowl. Sieve 1¼ cup all-purpose flour, ½ tablespoon baking powder together and keep it aside.
  4. Take a large bowl and add 2 cups of melted vanilla ice cream into it. Then add 1/3 cup sugar, 1 teaspoon vanilla extract into the bowl and whisk it for 2-3 minutes with a whisker.
  5. Add the sieved flour mixture (Step 4) into the batter in 3 portions and mix it nicely with a spatula using cut and fold method. Make a smooth, airy and lumps free batter with the ingredients.
  6. Add ½ cup semi sweet Choco chips into the batter and mix it well.
  7. Pour the cake batter into the cake tin (Step 2) and sprinkle some extra semi sweet Choco chips over the top.
  8. Put the cake tin into the middle of the preheated oven for 30-35 minutes. For me, it took exactly 35 minutes to get baked.
  9. Go for a toothpick test. Take a toothpick and put it inside the centre of the Cake to check whether it is done or not. If the toothpick comes out clean, then baking is done if not then bake the cake for another couple of minutes.
    Note: But sometimes the baking duration may vary due to difference in heat of oven.
  10. Take the cake tin out of the oven and put it on a grill.
  11. Allow it to cool off for 15-20 minutes.
  12. Demould the cake and remove the wax paper.
  13. Place the cake on a plate and allow it to cool down completely before cutting.


Serving Instruction

Transfer the vanilla ice cream cake on a serving plate. Serve this delectable cake as dessert with frosting or simply as a companion with a cup of tea.


How to store Vanilla ice cream cake?

It is always better to have it within 24 hours after cooling down. You can store it in an airtight container for 3 days in a cool dry place.
