Hello friends, today I have come with another exciting and healthy recipe Choy sum Potato Stir Fry with Garlic. In this preparation, Choy sum and Potatoes are stir fried in Sesame oil with some Garlic and Black Pepper. It can be an excellent side with grilled Tofu or Cottage Cheese, grilled Chicken and even with some baked Beans or Chickpeas.
It is an exceptionally easy to cook recipe which requires very less effort and time to be prepared. To prepare this simple dish, only few number of ingredients are required.
Though Choy sum is mostly used in Chinese cuisine, but it can be used to prepare any Asian dishes like soup, curries, dry curries and many more. There is no bar to create new dishes with any vegetable.
In fact, I have tried some Indian curries with this vegetable and it came out amazingly delicious. I am surely going to share these recipes with you very shortly but today, before sharing Choy sum Potato Stir Fry with Garlic recipe, let me share some interesting facts about Choy sum.

What is Choy sum?
Choy sum is a green leafy vegetable which is mostly used in Chinese cuisine. It is also known as Chinese flowering Cabbage. It is a member of genus Brassica which belongs to mustard family.

How to cook Choy sum?
Choy sum are little crunchy in texture like Broccolis and Broad Beans and it takes a little time to get tender.
Many people like the crunch of the vegetable but many prefers to eat them tender and soft. For that, you need to spend some more time to get it cooked.
For the best result, always blanch them for some time before going for stir fry them. It will give tender and juicy texture to the vegetable if you prefer it.
Tip: If you notice any yellow leaf in Choy sum then discard that leaf. It is not suitable for eating.

Choy sum are excellent source of Vitamin A and Vitamin C which are beneficial for our vision and protect us from various diseases.
Choy sum are full of fibres which are very good for our digestive system and boosts our immune system too.

How to cook Choy sum Potato Stir Fry with Garlic?
In this preparation, I have used Garlic powder and ground Black Pepper for flavouring. If you don’t have Garlic powder, no need to worry. You can use fresh Garlic paste or minced Garlic instead of that.
I have prepared this dish in Sesame oil. It gives an excellent flavour to the dish.
I have not used any Chilli powder or Chilli flakes in this preparation but if you like to add some spicy kick to the dish then you can add some.

Ingredients:

  • 1 Choy Sum, washed and roughly chopped
  • 2 Potatoes, peeled and cut into wedges
  • ½ teaspoon Garlic powder
  • ½ teaspoon ground Black Pepper powder
  • Salt to taste
  • Sesame oil for cooking

Instructions:
  1. Add the chopped Choy Sum in boiling water.
  2. Boil them for 3-4 minutes until the stems get tender.
  3. Drain the water and keep the Choy Sum aside.
  4. Add Oil into a yok.

  5. Add Potatoes and toss them nicely.

  6. Cook them for 5 minutes in medium flame and stir occasionally.
  7. Cook them until the Potatoes gets tender.
  8. Add Choy Sum (Step 3), Black Pepper, Garlic powder, Salt and give a nice mix.

  9. Cook them in high flame for a minute.
  10. Stir continuously so the vegetables get coated properly.

  11. Switch off the flame.

Serving Instruction
Transfer the Choy sum Potato Stir Fry with Garlic out in a serving bowl or plate. Serve immediately for the best taste and texture. Enjoy the yummy and healthy greens with your family and friends.
