Churumuri recipe is a popular south Indian street food that is also known as masala mandakki. It is a healthy, vegan and gluten-free puffed rice snacks of Karnataka which can be prepared within 10 minutes. In this preparation, crispy puffed rice is mixed with veggies like onion, tomato, grated carrot, coriander leaves, spices, peanuts, lemon juice and some coconut oil. This low-fat snack recipe is loved by all age groups.

There are different varieties of puffed rice snacks prepared all over India. North India’s Bhelpuri and East India’s Jhal muri are the most popular versions of it. Though churumuri recipe is not as popular as them but it is very popular in South India. In Mysore and many other places, street vendors place their carts at the corner of the street and instantly prepare different types churumuri and serve. They used to add different types of toppings like masala peanut, sev, savoury mixture etc.

Other than being tasty and healthy, one of the most important reasons behind the popularity of the dish is that it is economical. In exchange for a small amount, you get a good portion of the puffed rice snacks which makes you feel full for longer.

Churumuri recipe Kannada is even prepared in South Indian households regularly. In fact, during summer they add grated or small pieces of raw mango to add a sour taste and refreshing flavour.

I always prefer to prepare Indian snacks recipes at home. It not only makes the dishes yummier but gives me inner satisfaction too. I serve my handmade snacks recipes to the elders and kids of my family without a pinch of hesitation. A homemade snack is undoubtedly much healthier than the one bought from somewhere else. The hygiene maintained by a few street vendors is very low. My family just loved my homemade churumuri recipe and whenever they have a craving for it, they ask me to prepare it rather than going outside to eat it.

Masala mandakki is very simple and easy to make. It gets prepared very quickly and can be prepared in big portions which makes it a perfect snack for any get-together or picnic. To save time and effort, you can mix all the veggies and spices and make the dish partially ready. Then you can add the puffed rice and peanuts in front of people and serve them immediately. It’s a matter of a few minutes to make a plate of churumuri if all the ingredients are ready.

Tips to prepare perfect Churumuri

To prepare this Indian snack recipe, the most common problem that people face is that it gets soggy. To make a crispy churumuri few things need to be taken care of.

  • Always use crispy puffed rice or Murmure for the recipe. You can even dry roast the puffed rice on a medium flame for some time to make it crispier. I always do that.
  • Always cut the veggies and make every ingredient handy before preparing.
  • Mixing all the ingredients of churumuri must be done very quickly. The more time you take to prepare it, the sooner the puffed rice will gradually become soft and soggy.
  • Always serve the churumuri immediately after preparing it without wasting any time.
  • If you are preparing this dish for kids then you can skip green chillies and red chilli powder from the recipe.
  • The addition of coconut oil gives a nice flavour to the dish. Please don’t skip it. Somehow if you don’t have coconut oil then you can use melted ghee aka clarified butter for the recipe.

How to make Churumuri?

To prepare churumuri recipe, it is very important to assemble all the ingredients before you start plating it.

Put a pan on medium flame and allow it to become completely dry. Add the puffed rice into the pan and dry roast them for 3-4 minutes until they turn super crispy. Stir it continuously for even roasting. Transfer the puffed rice to a separate bowl or else if it sits on the hot pan then may get brown.

Then finely chop onions, tomatoes, coriander leaves and green chillies. Then grate carrots and keep them aside for later use.

First, I have taken a large mixing bowl to prepare the churumuri recipe. Then transfer puffed rice into it.

Then add black salt, salt, red chilli powder, turmeric powder, and coconut oil, one by one into the bowl and mix it thoroughly so each puffed rice gets coated nicely. Add roasted peanuts and mix it well.

Now, add all the veggies- chopped onion, tomato, coriander leaves, green chillies and grated carrots, one by one into the bowl. Add lemon juice into the bowl and mix it quickly. Sprinkle some sev on the top.

Immediately transfer the churumuri into a bowl and sprinkle some sev, roasted peanuts, coriander leaves and serve it.

  • ¼ teaspoon Turmeric powder
  • ½ teaspoon Chilli powder
  • ½ teaspoon black Salt aka kala namak
  • Salt to taste
  • 1 tablespoon Coconut oil
  • 1-2 tablespoons Sev for sprinkling



Instructions:

  7. Add 1 tablespoon lemon juice into the bowl and mix it quickly.
  8. Sprinkle 1 tablespoon sev and mix it.
  9. Immediately, transfer the churumuri into a bowl and sprinkle some sev, roasted peanuts, coriander leaves for garnishing and serve it.


Serving Instruction
