Fruit custard recipe is one of my favourite and it always drives me to my childhood memories. My mother used to prepare this dessert once or twice a year during summer season. She used to serve a chilled bowl of fruit custard topped with nuts, whipped cream and it was almost impossible to resist.
Today, I have prepared the fruit custard using the readymade custard powder which is easily available in any supermarket. Now-a-days, there are different flavours of custard powder available in the market. Vanilla, mango and mixed fruit flavours are among the most popular ones. I have used the basic custard powder with vanilla flavour for the recipe.
I have used sugar as sweetener to prepare the custard sauce. If you are avoiding sugar then you can use jaggery instead of sugar. But you need to take care of one thing, add the jaggery when the custard sauce is warm. Milk may curdle if you add jaggery while the custard sauce is hot. Other than that, you can use maple syrup or honey after cooking the custard sauce, and once it cools down.
How to make Custard powder at home?
If you don’t have custard powder then you can prepare it at home. Custard powder is nothing but corn flour or arrowroot powder. You can replace the custard powder with 3 tablespoons of corn flour and to enhance the taste of the custard recipe add 3 tablespoon of milk powder. You can use any essence like vanilla for flavouring. Readymade custard powder has got some colour. You can use a tiny pinch of turmeric powder to add colour to the home-made powder. If you use a very small amount of turmeric then it won’t make any difference in taste and flavour.
There is no hard and fast rule to prepare a fruit salad with custard recipe. You can add any choice of fruit for this recipe but try to avoid citrus fruits. Because we all know that the combination of milk and citrus fruits is not very pleasant. I prefer to avoid adding oranges, mandarin, grapefruit etc. I choose to cut the fruits in small bits so that many varieties of fruits can come in one spoon. I love to add sweet fruits like mangoes, apples, grapes, pears and slightly tangy fruits like berries, pomegranate so that different flavours and taste can burst in a single bite.

Ingredients to prepare Fruit Custard
Milk: It is one of the primary ingredients of the recipe. It provides body to the dessert. I have used full fat milk for the recipe.
Custard powder: I have used vanilla flavoured readymade custard powder for the recipe. It adds texture, flavour and taste to the dessert.
Sugar: It adds sweetness to the dessert. You can use other sweetener as well like maple syrup, jaggery, honey etc.
Apple: The addition of apples gives a crunchy bite to the dessert.
Pear: The addition of pear adds sweetness and favour to the dessert.
Grapes: You can use any variety of grapes like green, red, and black for the recipe. But always try to use a seedless variety for the recipe.
Strawberries & Blueberries: These berries add flavour, taste, colour, and texture to the fruit dessert. You can use any other berries like raspberries, blackberries etc.

Tips to prepare perfect Fruit Custard
- Use full cream milk to prepare the custard sauce for better taste.
- Always mix the custard powder with little bit of warm milk separately. Lumps may occur if you mix it in hot milk.
- Always add the custard mixture into hot milk not in boiled milk. Or else lumps may occur.
- After adding the custard into the milk, stir it continuously or else lumps may occur.
- You can adjust the amount of sugar in custard according to your taste.
- Strain the custard sauce after cooling it down for smoother texture.
- After washing the fruits pat dry them. We don’t want any extra moisture.
- Cut the fruits to bite-size to make them easy to eat.
- Use fresh and good quality fruits for the recipe.
- Always use a seedless variety of grapes for the recipe.
- Make sure the strawberries don’t have any bruises.
- Always add the fruits once the custard comes down to room temperature.
- Refrigerate the fruit custard for at least 3 hours before serving for better taste.
How to make Fruit Custard?
To prepare a perfect fruit custard recipe, first wash all the fruits nicely and pat dry them. Cut the fruits – apple, pear, strawberries, blueberries, grapes into small bite-size pieces and keep them aside. Then take 3 tablespoons of custard powder into a small bowl and keep it aside.
To prepare the custard, put a pan on medium flame and add 500ml of milk into it. Once the milk becomes warm, taking out ¼ cup of the milk separately and mix it with the custard powder thoroughly. Make sure no lumps are there. Add ⅓ cup sugar into the milk and mix it well. Allow the milk to become hot. Once the milk is hot, turn the flame to lowest and pour the custard-milk mixture slowly into the pan and stir it continuously. Whisk the mixture frequently and cook it on low flame until it turns thick in texture. When the back of a spoon gets coated nicely, and yet thick and slightly runny, you need to turn off the flame. Put the pan down from the hob and whisk it more for some time to make the custard smoother.
Set a sieve on a mixing bowl and strain the custard mixture to get rid of any lumps. Allow the custard to come down to room temperature. Then add all the chopped fruits into the custard sauce and mix it. Cover the bowl and refrigerate the fruit custard for at least 2-3 hours to chill. Now, your delicious fruit salad with custard recipe is ready to serve.
