This dish is also known as Cauliflower Manchurian because Cauliflower is called Gobi in Hindi. It can be prepared in two different ways.
  • Gobi Manchurian Dry
  • Gobi Manchurian with Gravy
Both the preparations are real treats for our taste buds. Gobi Manchurian Dry is served as a starter or appetizer and Gobi Manchurian with Gravy is served as a side with Fried rice or Hakka noodles.
Gobi Manchurian Dry recipe is the one that I am going to share with you today. It is a fabulous combination of crispy Gobi in spicy thick sauce which makes it famous all over the nation. This appetizer is a huge hit in street stalls, hotels, restaurants, line hotels etc. There is always a separate menu for vegetarians in all parties and Gobi Manchurian gets the first preference to be a starter in most of the places.
I am a Cauliflower lover and always experiment new things with this fleshy vegetable in my kitchen. Whenever I visit India, I always please my appetite with this salivating appetizer of street stalls. After shopping, standing next to the road-side stalls and having crispy hot Gobi Manchurian is one of the beautiful experiences in my life.
I always take interest in Vegan Starter because most of my good friends are vegetarian and they always expect to have good vegan food when they visit my place. Hence, Gobi Manchurian has occupied the top place in the list.
After moving to the UK, I had the craving to munch some spicy Chinese snacks and so my journey started to prepare this delish. Now Gobi Manchurian is one of the most frequently prepared snacks of our house. Each family member gets delighted when they get the news of me preparing Gobi Manchurian in my kitchen.

Cauliflower recipe
Cauliflower recipes are like backbone to the Vegan world. Cauliflower is one of the most versatile vegetables that I have ever seen in my life. It has a soothing flavour with a beautiful texture. You can have it in many forms, like baked, roasted, boiled, stir fried, cooked and even raw. It is a very good option for preparing salads and soups rather than curries and bhajis. But amazingly, it always tastes superb in any of these preparations.

How to make Gobi Manchurian?
For the Gobi Manchurian recipe, first I have prepared the batter. I have used both all-purpose flour and corn flour for this. The all-purpose flour gives a thick coating and cornflour provides the crispiness to the dish. The consistency of the batter should not be too thick or thin. It should be moderate.
I have added some spices like black Pepper, Chilli powder and Salt into the flour to make the batter. It gives a nice flavour and taste to the Cauliflower nuggets.
I have dipped the Cauliflower pieces into the batter and deep fried them. In most of the restaurants and street food corners, Cauliflower are always deep fried for Manchurian preparation. It is the key step to get the crispy Cauliflower Manchurian recipe.
Many people blanch the cauliflower florets before frying. But according to me, if you have fresh and tender Cauliflowers then you can directly fry them by dipping in the batter. I have done the same for the recipe.
For the Cauliflower Manchurian masala, I have used both Onions and Spring Onions. It gives the best flavour to the dish. First, I have fried the chopped Garlic and then added the Onions, Ginger paste and Green Onions, one by one. I have used orange Bell Peppers for the recipe, but you can use whichever you like. It can be green, red or yellow, does not matter.
I have used Soya sauce, Chilli sauce, vinegar and Tomato ketchup to flavour up the dish. I have used green Chillies too in the recipe. It gives a spicy hot kick to the dish. At the end, I have added some spring Onion greens too for enhancing the flavour of the dish.
In this preparation, I have not used any thickeners for the sauce. If you like, you can mix some Cornflour with water into a separate bowl and pour it at the end before switching off the flame.

Ingredients:


For batter
  • ½ cup All-purpose Flour
  • 3 tablespoons Cornflour
  • ½ teaspoon red Chilli powder
  • ½ teaspoon grounded Black Pepper
  • Salt to taste
  • Water as required

For Cooking
  • 1 medium Cauliflower, cut into florets
  • 1 Onion, finely chopped
  • 3 stalks of Spring Onions, sliced
  • 4-5 cloves of Garlic, finely chopped
  • 1 teaspoon Ginger Paste
  • ½ orange Bell Pepper, medium diced
  • 1 green Chilli, chopped
  • 1 teaspoon Soya sauce
  • 1 teaspoon Chilli sauce
  • 3 tablespoons Tomato sauce
  • 2 teaspoons Vinegar
  • Salt to taste
  • Oil for cooking

Instructions:
  1. Take all-purpose Flour into a mixing bowl.

  2. Add Cornflour into it.

  3. Add Salt to taste.

  4. Add red Chilli powder into the bowl.

  5. Then add Black Pepper powder into it and give a nice mix.

  6. Add little water at a time and mix it.

  7. Make a smooth batter.
  8. Add Cauliflower florets into the batter and coat it nicely.

  9. At the same time, put a pan on Stove and add Oil to fry the Cauliflower.

  10. Once the Oil is hot, add the coated florets of Cauliflower and fry them in medium flame.

  11. After 2-3 minutes turn them with the help of a turner.

  12. Fry them evenly till golden brown.
  13. Transfer the fried Cauliflowers on a tissue lined plate.

  14. Take the excess oil out of the pan or add 1 ½ tablespoons of oil into a different pan.
  15. Once the oil is hot, add Garlic into the pan and fry them till golden.

  16. Add Onions and sauté in high flame for 2-3 minutes till it has becomes translucent.

  17. Add Ginger paste and mix it well.

  18. Cook it in medium flame until the raw smell goes away.
  19. Add solid parts of the Spring Onions into the pan and give a mix.

  20. Cook it in high flame for a minute. Stir frequently.
  21. Add Bell Peppers, green Chillies and mix it well.

  22. Add Salt into the pan and give a nice mix.

  23. Cook it in medium high flame for 2 minutes.
  24. Add Vinegar, Soya sauce and mix it properly.

  25. Add Chilli sauce, tomato sauce and mix it nicely.

  26. Cook it in low flame for a minute.
  27. Add the cauliflower nuggets (Step 13) and toss it until they get coated with the sauce evenly.

  28. Sprinkle some crushed black Pepper and green parts of spring onions into the pan.

  29. Give a nice mix and switch off the flame.

Serving Instruction
Transfer the Gobi- Manchurian recipe on a serving plate. Garnish with some chopped Spring Onions. Serve hot or warm to enjoy the best taste. Serve the luscious dish as snack or appetizer to your family and friends.
