Tahini is a smooth, thick, creamy and unique flavoured recipe prepared with sesame seeds. It is a versatile condiment which is basically used as a flavour inducer or flavour enhancer because of its nutty aroma. It is one of the most essential components of Mediterranean, middle eastern cuisine which is used to prepare myriad recipes. But the limelight falls on the fact that it is an important ingredient for world-famous dip recipes hummus and baba ganoush. Yes, tahini is one of the most essential components of these two signature dishes.
Tahini recipe is basically sesame paste mostly prepared with hulled sesame seeds. But other varieties of sesame seeds which are easily available in market like unhulled, sprouted, toasted, raw can also be used to prepare tahini of different flavour, texture, taste and colour. But the traditional tahini recipe is prepared with white hulled sesame seeds because it comes smoother in texture and with minimal or no bitterness.

This homemade tahini recipe is prepared with toasted hulled sesame seeds, oil and salt. But the addition of salt and oil is completely optional. Just you need either a good blender or a food processor to prepare it. That’s all.
The best part of the tahini recipe for hummus is that after preparing it you can store it for months in refrigerator. So, there is nothing wrong to prepare it in large amount. I always go for large amount and for that, I buy sesame seeds in bulk bin from supermarkets to make the recipe more reasonable.
It is always a fun to prepare such unique and utterly easy recipe at home just in exchange of spending few pennies and tiny effort. I can assure you that after trying this homemade tahini recipe, you are never going to buy it from outside.
Difference between tahini and tahini sauce
Many people think tahini paste and tahini sauce are both the same. Though they are close to each other but are not the same.
Tahini paste is a thick paste of sesame seeds which can be diluted with oil. No extra flavour is added to it.
On the other hand, tahini sauce is a flavoured sauce prepared with tahini paste, lemon juice and other flavouring components like black pepper, garlic or parsley etc. You can induce other tastes in it according to your own choice like salt, maple syrup or sugar, chilli flakes etc.

Tips to prepare perfect Tahini
- I always prefer to use white hulled sesame seeds for the recipe. Tahini prepared with white hulled sesame seeds are smoother in texture and less bitter in taste.
- Dry roast the sesame seeds before preparing the tahini. This step increases the nutty aroma of the dish.
- Always allow the toasted sesame seeds to cool down completely before grinding.
- Always use high power grinder or food processor to prepare tahini.
- If your blender is not able to grind the sesame seeds to a smooth paste, then addition of oil can make the job much easier for you.
- Sesame paste aka tahini is too thick and stiff in texture like any other nutty butter. Addition of oil can provide you the desired consistency.
- Tahini is slight bitter in taste. Addition of salt helps in reducing the bitterness.

As I have already mentioned above, any variety of sesame seeds like hulled, unhulled, sprouted, toasted, raw can be used to prepare tahini of different flavour, texture, taste and colour. But the traditional tahini recipe is prepared with white hulled sesame seeds which makes the tahini smoother in texture with either minimal or no bitterness.
Can I use blender to prepare tahini?
Yes, you can. It’s just a myth that you need a food processor to prepare tahini. In fact, I have prepared my homemade tahini recipe using blender. If you face any difficulty during the time of grinding the sesame seeds, just add some oil and the process will become much easier.
Why my tahini becomes stiff after refrigerating?
If you prepare the tahini without using oil, then the tahini paste will be too thick in texture. After refrigerating the tahini, it will become stiff. Addition of some oil during the time of preparing the tahini can provide you the desired consistency.
What type oil to be used for the recipe?
Any flavoured or light flavoured oil can be used for the recipe like sesame oil, avocado oil, rapeseed oil, grapeseed oil and even sunflower oil can also be used for the recipe. Few people even enjoy strong flavoured extra virgin olive oil for the recipe.
Is it necessary to toast the sesame seeds to prepare tahini?
No, it’s not. You can skip the step and directly blend the raw sesame seeds to a paste. But toasting the sesame seeds enhances the nutty aroma of the tahini recipe easy. I always recommend toasting the sesame seeds for the recipe.
Can I toast sesame seeds in oven?
No. Sesame seeds are very tiny, so it has the high risk of getting burnt. It is always better to toast them on stove top.
Can I use kosher salt for the recipe?
Yes, you can. Kosher salt can be used instead of regular salt. Salt is just added to enhance the taste of tahini. But you can skip it too.
How to store tahini?
Take an airtight, sterilized or washed and completely dry container to store the tahini. I always prefer glass container for it. You can pour it into the container and store it into the refrigerator for 2 months.
My tahini gets separated after refrigerating. What should I do?
It may happen if the tahini sits for long into the refrigerator. The oil may get separated from the paste. Just stir the tahini nicely with a spoon. Then close the lid of the container and refrigerate it.
Can I freeze tahini?
You can freeze it and thaw it before use. But the taste and texture will not be the same. I suggest not to freeze it.
How to make homemade tahini?
To prepare the homemade tahini recipe, first take a wide dry pan. Then add hulled sesame seeds in it and dry roast them over medium low flame for 3-4 minutes until its colour slightly get changed and a nutty aroma comes out of it.
Spread the sesame seeds on a separate dry plate to allow it to cool down completely to room temperature.
Then take a jar of a grinder and add the sesame seeds into it. Close the lid of the jar and pulse it in high speed for around 1-2 minutes to a paste. Initially, it will be crumbly in texture. Scrap the sides and pulse it to a paste. The paste would be too stiff and won’t be pourable like market bought tahini.
At this stage, add some oil to get the desired consistency. Add oil, salt into the jar and close the lid again. Pulse it to a smooth paste and your tahini is ready. Store it a clean dry container and refrigerate it.
