How to make fried rice?
Tips to prepare perfect fried rice
- Always use cold rice to prepare fried rice. I personally use leftover rice.
- Use correct proportion of veggies against rice. Addition of excess vegetable may spoil the texture of the dish. If you are using too many varieties of vegetables, then adjust the amount of each vegetable accordingly.
- Use sesame oil to cook fried rice. It gives a nice aroma to the dish.
- Add extra oil or butter before adding the cooked rice to fry. It gives better flavour and texture to the rice.
- Always cook the rice in high flame or else you will not get the proper texture.
- Don’t skip soya sauce and black pepper powder. These are the core ingredient to flavour up the fried rice.
Ingredients:
- 3 cups cooked Rice, chilled
- 1 large Carrot, small diced
- 1/3 cup Peas, frozen or fresh
- ½ green Bell pepper
- ½ red Bell pepper
- 1 white Onion, finely chopped
- 1 tablespoon Garlic, finely chopped
- 3-4 stalks of Spring onion greens, sliced
- 3-4 stalks of Spring onion whites, sliced
- 1 tablespoon Soya sauce
- ½ tablespoon Vinegar
- ½ teaspoon ground black Pepper
- Salt to taste
- Sesame Oil for cooking
- 1 tablespoon Butter, to cook the rice
- Some Spring onion greens for garnishing
Instructions:
- Put a pan on flame and let it become completely dry.
- Add oil into the pan and wait until the oil is hot.
- Once the oil is hot, add garlic and fry them till light golden in colour.
- Add onions and fry them in medium high flame for 2 minutes until it turns translucent.
- Add spring onion whites and give a nice toss. Cook them in high flame for few seconds.
- Add carrot, frozen peas and give a nice mix.
- Put the flame in medium high and cook it for another 3-4 minutes.
- Add green and red bell peppers and mix them nicely. Cook them in medium high flame until all the vegetables get cooked properly till soft.
- Add salt, soya sauce, vinegar one by one into the pan and mix it nicely. Cook them in medium flame for a minute.
- Make space in between the veggies and add butter into the pan.
- Add cooked cold rice, spring onion greens, black pepper powder into the pan and mix them properly.
- Cook the rice in high flame for another 2 and ½ to 3 minutes. Stir in between on regular intervals of 15-20 seconds.
- Switch off the flame and put the pan down.
