I am a huge fan of Chinese and Indo-chinese cuisine and whenever I go to a Chinese restaurant, I always make sure to order some fried rice and chilli chicken as the main course. According to me, most of the Bongs do the same. After reading the whole menu card, end up by ordering fried rice and chilli chicken. I am pretty much sure many of you are on the same side with me. Isn’t it??
I have visited multiple Chinese restaurants and in each of these restaurants the taste of veg fried rice recipe is little bit different from the other. Many restaurants go heavy with soya sauce but does not use Ajinomoto because of its health-related controversy. Few restaurants use Ajinomoto i.e. monosodium glutamate (MSG) which dominates the other flavour of the fried rice recipe. I personally don’t prefer Ajinomoto and always mention to skip it before ordering food in any restaurant.
I have tried to prepare Chinese fried rice restaurant style multiple times at home but failed to match with the flavour and texture of the restaurant bought ones. Finally, after so many attempts, I have managed to prepare veg fried rice recipe which matches the standard of veg fried rice restaurant style in every aspect. Today, I am going to share my full proof veg fried rice recipe with you with all the minute details to get the perfect output.
I have been preparing this vegetable fried rice recipe from the past two years and it never failed me at all. I have prepared this fried rice recipe for many get-togethers and kitty parties and always received admiration for the dish.

Veg fried rice is a very simple and easy recipe. The beauty of the dish is that it is not an immutable recipe. You can add so many variations by adding different types of veggies into it. The things which matter to prepare a perfect fried rice recipe is correct technique and right proportion of ingredients. If you are using left over rice for Veg fried rice recipe then nothing can be rapid than this rice recipe. In fact, it could be a perfect option for surprised guests or when you have jiffy to cook.
Veg fried rice recipe with step by step photos and instructions have been provided in the ‘Instructions’ section of the recipe. If you follow the step precisely then you will get perfect veg fried rice which will taste better than take away. But before directly jumping into the recipe, let me share few basic tips to prepare a perfect veg fried rice recipe.

Vegetables for fried rice to be used
There is no hard and fast rule to pick up vegetables for a veg fried rice recipe. But ideally carrots, peas, bell peppers are used for the rice recipe other than onions, spring onions and garlic. I have used these components to prepare the vegetable fried rice recipe.
But if you want to go heavy with the vegetables then you can add French beans, mushrooms, cauliflower florets for the recipe.

Can I use frozen vegetables for fried rice?
The answer is Yes you can. Frozen vegetables also work fine but you would need to evaporate the extra moisture from the veggies before adding the rice into it or else your fried rice will get sticky. Thawed vegetables give better result for fried rice recipe though it is time consuming.

Rice variety to be used for fried rice
For preparing fried rice recipe always use medium grain rice. Most of the people prefer brown rice, jasmine rice for fried rice preparation. These grains help to prepare fluffy and well-made fried rice.
If you are a regular white rice consumer like me then you can go for Sona Masoori rice. You will get amazed by the result of the dish. It gives you the perfect fluffy texture and absorbs all the flavour of the dish amazingly.

Rice variety not to be used for fried rice
Don’t go for Basmati rice while you are planning to prepare fried rice recipe. Basmati rice is ideal for pulao and biryani but not for veg fried rice recipe. Basmati Rice is very soft in texture and has its own flavour which does not go well with Chinese rice preparations. I have tried it once but did not come up great.
Don’t go for short grain rice like Gobindo bhog, Tulsi bhog or sushi rice because they have tendency to get sticky while mixing.

Best way to cook rice for fried rice
Try to use previous day’s leftover chilled cooked rice for fried rice. This will give you the best texture for this dish.

If you don’t have left over rice, then cook the rice and spread it on wide trays and cover it. Then put them into the fridge for at least 30 minutes to cool down completely or else you can cool it in the freezer for 10-15 minutes. But keep your eyes on the clock because the rice should not get frozen.

Utensils to be used for fried rice
Yok is the ideal utensil to prepare any fried rice recipe. But it’s not always available in every house. If you don’t have yok, always use wide pan where you can stir the rice with ease.
Try to go for non-stick pan. In normal utensils, the rice may stick to the bottom of the pan.

How to make fried rice?
To prepare the veg fried rice recipe, I have used left over rice. But many people do not prefer to eat leftover food. For them, I suggest cooking the rice and then spreading it on wide trays or plates. After this, cover it with cling film. Then put them into the fridge for at least 30 minutes to cool down completely. If you are in hurry, then it can also be cooled it in the freezer. It hardly takes 10-15 minutes to cool down completely. But keep your eyes on clock because the rice should not get frozen.
I have used carrots, peas, red bell peppers, green bell peppers for the veg fried rice recipe other than onion, spring onion and garlic.
First, I have taken a non-stick pan and added sesame oil into the pan. Then I have added chopped garlic and cooked it till light golden in colour. After this, I have added the chopped onions and cooked them till translucent. Then I have added the spring onion whites and give a nice toss before adding the carrots. Then I have added the carrots and frozen peas and cooked them in high flame for 3-4 minutes until the carrots loses its crunch. After this, I have added the bell peppers and cooked them in high flame for few more minutes until all the vegetables get soft.
Then I have added the seasoning, soya sauce, vinegar into the pan mix with the veggies nicely. After that, I have added some butter into the pan before adding the cooked rice into the pan for frying. It gives a nice flavour to the rice and helps to get fried better without sticking to each other.
Then I have added ground black pepper powder, spring onion greens and mixed all the ingredients thoroughly. I have cooked the rice in high flame for another 3 minutes to get the perfect texture. Stir the rice on regular intervals of 20-25 seconds. Then switched off the flame and put the pan down.

Tips to prepare perfect fried rice
  • Always use cold rice to prepare fried rice. I personally use leftover rice.
  • Use correct proportion of veggies against rice. Addition of excess vegetable may spoil the texture of the dish. If you are using too many varieties of vegetables, then adjust the amount of each vegetable accordingly.
  • Use sesame oil to cook fried rice. It gives a nice aroma to the dish.
  • Add extra oil or butter before adding the cooked rice to fry. It gives better flavour and texture to the rice.
  • Always cook the rice in high flame or else you will not get the proper texture.
  • Don’t skip soya sauce and black pepper powder. These are the core ingredient to flavour up the fried rice.

Ingredients:

  • 3 cups cooked Rice, chilled
  • 1 large Carrot, small diced
  • 1/3 cup Peas, frozen or fresh
  • ½ green Bell pepper
  • ½ red Bell pepper
  • 1 white Onion, finely chopped
  • 1 tablespoon Garlic, finely chopped
  • 3-4 stalks of Spring onion greens, sliced
  • 3-4 stalks of Spring onion whites, sliced
  • 1 tablespoon Soya sauce
  • ½ tablespoon Vinegar
  • ½ teaspoon ground black Pepper
  • Salt to taste
  • Sesame Oil for cooking
  • 1 tablespoon Butter, to cook the rice
  • Some Spring onion greens for garnishing

Instructions:
  1. Put a pan on flame and let it become completely dry.
  2. Add oil into the pan and wait until the oil is hot.

  3. Once the oil is hot, add garlic and fry them till light golden in colour.

  4. Add onions and fry them in medium high flame for 2 minutes until it turns translucent.

  5. Add spring onion whites and give a nice toss. Cook them in high flame for few seconds.

  6. Add carrot, frozen peas and give a nice mix.

  7. Put the flame in medium high and cook it for another 3-4 minutes.
  8. Add green and red bell peppers and mix them nicely. Cook them in medium high flame until all the vegetables get cooked properly till soft.

  9. Add salt, soya sauce, vinegar one by one into the pan and mix it nicely. Cook them in medium flame for a minute.

  10. Make space in between the veggies and add butter into the pan.

  11. Add cooked cold rice, spring onion greens, black pepper powder into the pan and mix them properly.

  12. Cook the rice in high flame for another 2 and ½ to 3 minutes. Stir in between on regular intervals of 15-20 seconds.

  13. Switch off the flame and put the pan down.

Serving Instruction
Transfer the veg fried rice in a serving bowl or on serving plate. Serve immediately the hot fried rice to enjoy its best taste and texture. Pair up the dish with your favourite Chinese side dish and enjoy your spectacular meal.
