Vegetable Raita is an Indian salad dressing which is prepared by spicy whisked Yogurt. In this preparation, grated Carrots, Cucumbers, Onions, Tomatoes, chopped Cilantros and green Chillies are mixed in whisked Yogurt with some spices and salt. It is mostly accomplished with Biryanis, Pulao and other flavoured spicy rice items.
Vegetable Raita is not only a condiment which balances the taste of spicy meal, but it makes the meal yummier too. In most of the restaurants and hotels, Vegetable Raita is served with Biryanis to complete the meal just like both are incomplete without each other.
It is one of the quick and easy recipes that I have ever seen in my life. The best part of this palatable dish is that it does not require to be cooked. The time-consuming part of the recipe is to cut the vegetables. But, if you have a food processor then it will take hardly 5 minutes to get ready.

Types of Raita
There are more than hundred varieties of Raitas that are prepared in India. Vegetable Raita, Boondi Raita, Onion Raita, Cucumber Raita are very famous and frequently served in marriages, parties etc.
There is no hard and fast rule to prepare Raita. You can add anything you like and go for permutation-combination with the ingredients to prepare different varieties of Raitas.

Benefits of consuming Vegetable Raita
Yogurt contains probiotics, which is very good for our digestive system and helps us to get rid of constipation, bloating etc. While we eat spicy food like pulao or biryani, it balances the taste of the spice with its sourness and cooling effect. It also helps our digestive system to digest these spicy foods.
Apart from this, it contains fresh raw vegetables like Carrots, Cucumbers and Tomatoes, which not only enhances the taste of the meal, but also that each of the vegetables have its own health benefit.

How to prepare a perfect Vegetable Raita?
The most important part of preparing a perfect raita is to use good quality Yogurt. It should not be watery.
First, the Yogurt should be whisked thoroughly before adding to the salad.
Always use fresh, juicy and tender vegetables to prepare Vegetable Raita. Dry and old vegetables do not taste good in Raita.
I always grate Carrots when using it for Raita because they are comparatively harder than Tomatoes and Cucumbers. So, to balance the bite of raita, I always prefer them to be grated rather than chopped.
I have used salt, Kashmiri red Chilli powder, which is less hot and beautiful in colour, Black Pepper and roasted Cumin and Fennel seeds powder into the Vegetable Raita. These spices give a soothing and refreshing flavour to the dish.
I have added a little sugar in this Raita which is optional, and you can skip it. According to me, a little bit of sweetness goes superb with the sourness of Yogurt and with the tanginess of tomatoes. You must give a try.

Ingredients:

  • 1 cup refrigerated Yogurt (Dahi)
  • 1 red Onion, finely chopped
  • 1 Tomato, deseeded and finely chopped
  • 1 medium Carrot, peeled and grated
  • 1 medium Cucumber, peeled and grated
  • 2 tablespoons Cilantro, chopped
  • 2 Green Chillies, chopped
  • ¼ teaspoon Chilli powder
  • ½ teaspoon Ground Black Pepper
  • ½ teaspoon Roasted Cumin-Fennel seeds powder
  • 1 teaspoon Sugar
  • Salt to taste

Instructions:
  1. Add the Yogurt into a mixing bowl and whisk it thoroughly until it becomes velvety smooth.
  2. Transfer all the chopped and grated vegetables into a large bowl.

  3. Pour the whisked Yogurt on it.

  4. Add Chilli powder, ground Black Pepper, Salt, Sugar and roasted Cumin-Fennel seeds powder into the bowl and mix them thoroughly. Make sure no lumps are there.

    Note: To prepare the roasted Cumin-Fennel seeds powder, take two portions of Cumin seeds and one portion of Fennel seeds. Dry roast them in medium low flame for a minute until the aroma starts coming from the seeds. Then let them cool off. Transfer the seeds into the jar of a grinder and grind them to smooth dust.


Serving Instruction
Transfer the Vegetable Raita into a bowl. Always serve chilled Raita for the best taste with Biryani or Pulao rice.

I only thought that it is very hard to make raita. But it is so easy that I can make daily and have it in both lunch and dinner.
