Vanilla Cake is one of the recipes that most of the people love to start their baking experiences with, while trying to bake a cake. It is soft, spongey, fluffy and off course, has the heavenly essence of Vanilla. It can be used to prepare cupcakes too. In fact, for many beginners, it is one of the easiest and safest recipe that can be used as base cake for any flavoured frosting. This is the main reason of its huge fan following. Even it tastes amazing without frosting.
Basic Vanilla Cake is a simple and one of the easiest cake recipes. The best part of this recipe is that you don’t need a hand blender to prepare this. I know for many beginners it’s a big challenge to bake a soft and fluffy Vanilla Cake. According to me, this recipe is the best way to start your Cake-baking journey. I have used my mixer grinder to mix the ingredients as that requires quite lesser effort. You can also use Spatula to mix the ingredients as well.

I have prepared this cake basically as a companion with a cup of tea. I have not gone for a moist base this time. In this recipe, I have not used milk. I have used only Eggs and edible Oil (or melted Butter) as liquid contents for this recipe. It gives a perfectly soft, fluffy and bouncy texture which you are going to love.
The very first time I prepared this cake was when my daughter turned one-year old. She was absolutely delighted when she took her first bite of the cake. It is our family tradition of cake-cutting the homemade cake first on our birthdays. So, we tried to follow the same. I learnt this recipe from my Mom.

Ingredients:

  • 1 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1 cup Caster sugar
  • 1 cup Oil or melted Butter
  • 3 Eggs, at room temperature
  • 2-3 teaspoons Vanilla essence

Instructions:
  1. Preheat the oven at 180 degree.
  2. On the other side, grease the cake tin and cut a piece of parchment paper to fit the bottom of the tin.

  3. Sieve the flour and Baking powder together and keep it aside.
  4. Take the Eggs into the jar of mixer grinder and blend it for a minute.

  5. Pour the Sugar and blend it until Sugar gets dissolved.

  6. Add Oil and blend it for another minute.
  7. Pour the mixture into a mixing bowl.

  8. Add half of the Flour into the mixture first and mix it with a spatula.

  9. Mix it with cut and fold method. In this way your batter will remain airy.
  10. Then add rest of the Flour and mix it with same process.
  11. Add Vanilla essence and mix it well.

  12. Pour the mixture (Step 2) into the tin.

  13. Put the cake tin into the middle of the oven for 25 minutes.

  14. Go for a toothpick test. Take a toothpick and put it inside the Cake to check whether it is done or not.

  15. If the toothpick comes out clean, then baking is done.
  16. Take the Cake tin out of the oven and put on a grill.
  17. Allow it to cool for half an hour.
  18. Take the Cake out of the tin and remove the wax paper.
  19. Place it on a plate and cut it.

Serving Instruction
Transfer the pieces of joy on a serving plate with a cup of Tea or Coffee and spend quality time with your family and friends.

Yes, off course. You can even make it in pressure cooker using salt. I tried it too and it came out pretty well.
