They are the combination of grated Zucchini, Onion, Garlic with some all-purpose flour, Eggs and seasonings which are shallow fried in pan. They are yummy and at the same time very healthy. It is one of the most desired summer snack recipes which is mostly served with any simple dip like sour cream or mayonnaise etc.
Zucchini Fritters is a perfectly balanced dish which has the superb combination of health and taste. It is a full proof and reliable recipe which is a great option for surprise guests too. Its outer body is crispy and is soft from inside. It is a very quick and easy recipe.
I have seen Zucchini (Courgette) for the first time only after coming to the UK. They are easily and hugely available in every super market or vegetable shop during summers. So, one day, I bought a pair of Zucchinis to prepare baby food for my princess. My cooking journey with Zucchini started from that day onwards. I have already prepared many exciting dishes with this vegetable and Zucchini Fritters is one of them.
Zucchinis are not the primary choice of vegetables and most of the people consider it as a dull-tasted vegetable because its full of water. But I am sure this Zucchini Fritters will change your opinion about the vegetable drastically.

What is Zucchini?
Zucchinis are summer squash with very thin edible skin. They are also known as Baby Marrow and Courgette. It is a very famous squash which is used to prepare savouries in different continents.
How to use Zucchini?
Zucchinis are one of the very versatile squashes and they are used in numbers of preparations. It can be eaten as raw, boiled, baked, roasted, deep fried, stir fried and many more.
They are used in soups, sandwiches, salads, fritters and even in pastas. In Asia, it is also used in preparing curries, mixed vegetables etc.
They are very easy to digest ad hence very frequently used in baby foods.

Fritter Recipe can be prepared either by baking or shallow frying. But an ideal Fritter is always shallow fried to get the outer crisp.

How to get the outer crisp for Zucchini Fritters?
For this Courgette Fritters, first I have grated the Zucchinis and transferred them into a colander. If you have food processor then, without any hesitation, run on it.
Zucchinis are full of water and too much watery element can ruin the fritters. So, I have placed the grated Zucchini into a colander and tossed it with salt nicely. I have rested it for some time and then transferred them on a cheese cloth. I have squeezed out the water with help of my hands. You will be amazed to check out the quantity of water that it releases. Separating the water from Zucchini is the key step for the outer crispy body for these fritters.
How to make Zucchini Fritters?
I have dumped the squeezed Zucchinis in a mixing bowl and then added Garlic, Onions.
On the other hand, I have mixed some Baking Powder with all purpose flour before adding to the Zucchinis. Baking powder helps to build the outer crisp.
Then I have added this mixture of all-purpose flour and baking powder to the grated Zucchini along with some seasoning and salt. I have mixed all these evenly and nicely. At last I have added lightly beaten Eggs and mixed the batter thoroughly until they amalgamate perfectly. This step is very important for a perfect fritter. The consistency of the batter should not be too thick or too runny. It should be moderate.
Then I have shallow fried them in medium flame from both the sides.

Ingredients:
- 2 Medium Zucchini, grated
- 1 small Onion, chopped
- 3 cloves of Garlic, chopped
- ¼ teaspoon ground Black pepper
- ¼ teaspoon dried Coriander
- 1 large Egg
- ¼ tablespoon All-purpose flour
- 1 teaspoon Baking powder
- 1 ½ teaspoon Salt, to toss the grated Zucchini
- ½ teaspoon Salt to taste
- 3-4 tablespoons Oil for cooking
Instructions:
- Wash the Zucchini and trim both the edges.
- Either grate them with a Grater manually or run them into food processor.
- Take the grated Zucchini into a colander and place in the sin or over a plate.
- Add 1 ½ teaspoon of salt into it and toss it properly.
- Let the Zucchini rest for 10 minutes.
- On the other hand, line a cheese cloth over a mixer bowl.
- Transfer the salted Zucchini (Step 5) into the cheese cloth and squeeze out the excess water.
- Take the squeezed Zucchini into a mixing bowl.
- Add chopped Onions.
- Add chopped Garlic into it and give a nice mix.
- Then add ground Black Pepper into the bowl.
- In a bowl, take ¼ cup of all-purpose flour and 1 teaspoon baking powder and mix it properly before adding into the mixture.
- Then add the flour mixture (Step 12) into the mixing bowl.
- Mix the batter nicely and evenly. Make sure no lumps are there.
- Add the beaten Egg into the mixture and mix it nicely.
- At the end season with Salt, dry Coriander and give a final mix.
- Take a wide non-stick pan and add 3-4 tablespoons of oil into it.
- Put the flame in medium and let the oil become hot.
- Pour the batter into the pan in portions with the help of a large spoon.
- Spread the mixture lightly with the help of spoon and make them flat rounds.
- Fry them in medium flame for 3-4 minutes until the corners become crisp.
- Flip them and cook for another 3-4 minutes until they become crispy from outside.
- Transfer them on a plate lined with kitchen tissue.
Serving Instruction
Transfer the Zucchini Fritters on a serving plate. Serve immediately to enjoy the best taste. Serve hot or warm with your favourite dip and enjoy the healthy tempting snack.
