Vegan Chilli Beansprouts is one of my healthiest and delectable dishes which is inspired by Chinese cuisine. It is the amalgamation of Beansprout, Peppers, Onions, Garlic, cilantros, Soya sauce and ground spices. It is an excellent side which can be served with Noodles, fried Rice and salad.
It’s a very quick and easy recipe which gives extra ordinary result. To prepare this exciting dish, very limited and common ingredients are required. But before jumping into the recipe, I would like to share few facts of Beansprouts.

What are Beansprouts?
Beansprouts are culinary vegetables which are hugely used in Chinese, Korean and Thai cuisine for fried Rice, Spring Rolls, stir fries, salad and soups. It is mostly cultivated and consumed in East Asia. They can be grown by watering them till we get long roots. They must be kept away from direct sunlight.
The two most consumed Beansprouts are Green caped Moong Beans and Yellow caped Soya Beans.

Health benefits of Beansprouts
Beansprouts have more nutritional value than fresh vegetables and that’s the reason they are so beneficial for our health. They are full of vitamins, minerals, protein and fibre.
  1. Beansprouts are full of antioxidants which helps to get rid of chronic diseases like heart problems, diabetes and sometimes cancer too.
  2. It helps to lower bad cholesterol in our body.
  3. The minerals like potassium, magnesium and fibre helps to control the blood sugar level of our body.
  4. They are full of fibres and protein which promotes weight loss.

Yesterday, I had grabbed a pouch of green caped Moong Beans and today, suddenly I had the craving for Chinese food. Though beansprouts are very often used in Chinese preparations, but I have decided to prepare something different from Spring Roll and Soup.
Then I have come up with the idea to prepare this Vegan Chilli Beansprouts. This mouth-watering dish is yet another successful experiment coming out directly from my kitchen. My family loved the preparation and upon their positive approval, I have decided to share this recipe with you.
In this preparation, I have diced the Onions and separated the layers during the time of frying. I have added Ginger-Garlic paste and freshly chopped Cilantros for flavouring.
I have washed the Beansprout thoroughly before adding into the pan. There is no need to chop them for this recipe.
Other than Beansprouts, I have also used orange Bell Peppers in this dish. They have sweet taste and soothing smell which complements the taste of the dish.
I have preferred to use smoked Paprika powder instead of chilli powder in this preparation. It gives a Smokey flavour to the dish. Any chilli preparation is incomplete without Soya Sauce and Chilli Sauce. In this case, I went with the flow and added Chilli sauce, Soya sauce and Tomato ketchup to the dish. Last but not the least, I have used freshly crushed Black Peppers for better and improved flavouring. I have not added any extra water to prepare this dish.

Ingredients:

  • Green caps Moong Sprout, 200 Grams
  • 1 Large white Onion, medium diced
  • 1 orange Bell pepper, cut into thick strips
  • 2 tablespoons Cilantros, chopped
  • 1 teaspoon Ginger-Garlic paste
  • ½ teaspoon Smoked Paprika powder
  • ½ teaspoon Coarsely ground Black Peppers
  • 1 teaspoon Chilli sauce
  • ½ tablespoon Soya sauce
  • ¾ tablespoon Tomato ketchup
  • Salt to taste
  • Oil for cooking

Instructions:
  1. Put the pan on flame and let it dry.
  2. Add Oil into the pan.

  3. Once the Oil is hot, add Onions into the pan.

  4. Cook them in medium lame until the onions become translucent.
  5. Separate the layers of Onion slices with the help of a wooden spatula.
  6. Add Ginger-Garlic paste and give a nice mix.

  7. Cook them in medium flame until the raw smell of Ginger-Garlic goes away.
  8. Add Beansprouts and mix them thoroughly.

  9. Cook them in medium high flame for couple of minutes.
  10. Add Bell peppers and mix them properly.

  11. Cook them in high flame for a minute and stir continuously.
  12. Add Salt, smoked Paprika powder and give a nice mix.

  13. Cook them in medium high flame for a minute.
  14. Add Chilli sauce, Soya sauce and stir them nicely.

  15. Cook them in medium flame for 1-2 minutes.
  16. Add Tomato ketchup and give a nice mix.

  17. Cook them in high flame for a minute.
  18. Add ground black Pepper mix it in the sprouts evenly.

  19. At the end add chopped Cilantros and mix it properly with rest of the ingredients.

  20. Cook them in high flame for a minute and stir continuously.

  21. Switch off the flame and put the pan down.

Serving Instruction
Transfer the the Vegan Chilli Beansprouts on a serving plate. Garnish it with chopped Cilantros. Serve immediately hot or warm for best taste. Serve the Vegan Chilli Beansprouts with fried Rice or Noodles and enjoy the meal.
