It is a spicy and flavoured scrambled egg recipe where eggs are cooked in butter with lots of onions, ginger-garlic, tomatoes, fragrant Indian spices and coriander leaves. This healthy, delectable and comforting delight is easy to make and gets prepared within 20 minutes. The recipe for egg bhurji could be a perfect option for weekday breakfast with bread or pav or for lunchbox with a pair of paratha or roti.

What is egg bhurji?

Egg burji recipe is basically an Indian scrambled egg which is spicy and loaded with flavours. It is also known as anda bhurji. It is a Hindi name where anda stands for eggs and bhurji means scramble.

Egg bhurji recipe is basically Indian style scrambled eggs where Indian ground spices, green chillies, ginger-garlic, onion, tomatoes are added.

Egg bhurji is quite similar to Paris breakfast recipe Akuri but is not same. Akuri is runnier in texture as compared to bhurji. The texture of anda bhurji recipe is much similar to paneer bhurji recipe.


How to eat egg bhurji?

Egg bhurji aka anda bhurji recipe is crazily popular all over India because of its irresistible taste and unique flavour. In every region, it is prepared in slightly different ways by changing the proportions or combination of spices.

In northern India, egg bhurji is mainly served with paratha, roti or with phulkas. In western India, especially in Mumbai, it is served with pav. Bhurji pav is one of the popular street foods of Mumbai. In south India, it is mainly served with rice or poori.

According to me, anda bhurji recipe is one of the most versatile egg dishes which can be served with your favourite main and can be used to prepare sandwiches, wraps, kathi rolls etc.

First of all, I am an Egg lover since my childhood, and I can have it in any form, except raw. My mom used to prepare variety of egg recipes to bring smile on my face. I am sure many egg lovers like me would have the same story to share. Today, I am going to dedicate this recipe to all the egg lovers. I am dead sure that this dish will be a feast to them.

Whenever I talk about anda bhurji recipe, it always makes me feel nostalgic. I have thousands of good memories with this super simple but scrumptious recipe. I still remember my college days when I used to go to our regular street vendors cart with my friends to have bhurji pav on regular basis. The street vendor used to prepare spicy hot egg bhurji in front of us and serve it to us with a pair of pav. It was absolute moreish.

But after finish my studies when I went to Bengaluru for job, I used to stay in a PG. There I used to cook my food on my own. To be very honest, anda bhurji was one of the most cooked dishes by me. It’s not that I was not a good cook but I was so fond of egg bhurji and it’s so easy to make that I repeated this recipe myriad time.

Egg bhurji recipe is a very simple and easy recipe. It requires minimal ingredients which are easily available in any Indian kitchen pantry. The best part of the dish is that it gets prepared quickly without investing much time and effort. It could be a protein rich wholesome breakfast for kids.

Tips to prepare perfect egg bhurji
  • For any bhurji recipe, it is very important to chop the veggies finely for perfect texture.
  • Crack all the eggs into a bowl and beat it with some salt before cooking. It gives better taste to the dish.
  • Add butter and oil both to cook the bhurji. It gives better flavour and taste to the dish.
  • Don’t skip the spices from the recipe. Each spice is important to flavour up the dish.
  • Addition of spices gives brown shade to the bhurji. You can skip the spices to make the bhurji look bright yellow in colour but it won’t taste great.

Egg bhurji ingredients

Eggs: The primary ingredient of the recipe which provides taste, texture and flavour to the dish.

Onions: Onions are one of the most important ingredients of bhurji recipe which provides taste and flavour to the dish. I have used finely chopped onions for the recipe.

Tomatoes: I have used chopped tomatoes for the recipe. It gives nice flavour, taste and texture to the dish.

Ginger-garlic: Both the ingredients are equally important to flavour up the dish and enhance the taste of the bhurji.

Green chillies & coriander leaves: Green chillies add heaty taste and coriander leaves add refreshing aroma to the dish.

Ground spices: For the ground spices, I have used turmeric powder, red chilli powder, coriander powder, cumin powder and garam masala powder. Each spice is equally important for the perfect flavour and taste of the anda bhurji recipe.

Salt: The basic ingredient of any savoury recipe which adds salty taste to the dish.

Butter: I have used unsalted butter to cook the recipe. It enhances the flavour of the dish and gives better taste.


Variation in egg bhurji

The basic egg bhurji recipe is prepared with onions, tomatoes, ginger-garlic and some spices. But there are many variations that can be done by adding different types of vegetables like carrots, mushrooms, peas, beans etc. You can add assorted vegetables to make the dish healthier.

You can even add cheese to make the dish heavier for breakfast.

You can adjust the spices and flavour it up according to your own choice. Other than basic spices, you can also use tandoori masala, achari masala, pav bhaji masala for the recipe. Many street food vendors also use pav bhaji masala to make the bhurji extra flavourful.


How to make egg bhurji?

To prepare egg bhurji recipe, first finely chop onion, tomatoes, ginger, garlic, green chillies, coriander leaves and keep them aside.

Take a wash bowl and then crack the eggs into the bowl. Check if there are any egg shells and remove if present. Add salt and beat the eggs thoroughly with a fork. Keep it aside.

Now put a pan on flame and allow it to become completely dry. Then add oil and butter both into the pan and allow it to bubble.

Add finely chopped onions into the pan and fry it in medium flame till translucent. Then add grated ginger and finely chopped garlic into it and cook it for another 3-4 minutes until the raw smell goes away. Add green chillies and give a nice mix.

Add finely chopped tomatoes and give a nice mix. Add salt, turmeric powder, red chilli powder and give a nice mix. Cook it over medium flame for 5-6 minutes until the tomatoes get mushy.

Then turn the flame low and add cumin powder, coriander powder, garam masala powder and give a nice mix. Cook it over low flame for another 1-2 minutes until the raw smell of the spices disappear.

Pour the egg mixture into the pan and mix it with the masala. Keep stirring the content in low flame until you get the desired consistency. If you like soft bhurji then stop cooking when the egg gets set. If you like perfectly cooked egg bhurji then cook further until the eggs are nicely cooked and fluffy. Then add finely chopped coriander leaves into the pan and give a nice mix. Switch off the flame and put the pan down.

Ingredients:

1 cup = 250ml

  • 4 Eggs
  • ½ teaspoon salt, to mix with eggs
  • 2 Onions, finely chopped
  • 2 Tomatoes, finely chopped
  • ½ tablespoon Garlic, finely chopped
  • 1 teaspoon Ginger, grated or finely chopped
  • 1-2 green Chilies, finely chopped
  • 2 tablespoons Coriander leaves, finely chopped
  • 1 teaspoon red Chilli powder
  • ½ teaspoon Turmeric powder
  • ½ teaspoon Cumin powder
  • ½ teaspoon Coriander powder
  • 1 teaspoon Garam masala powder
  • Salt to taste
  • 1 tablespoon Butter
  • 1 tablespoon Oil



Instructions:
  1. First finely chop onion, tomatoes, ginger, garlic, green chillies, coriander leaves and keep them aside.
  2. Take a clean bowl and then crack the 4 eggs into the bowl. Check if there are any egg shells and remove if present. Add ½ teaspoon salt and beat the eggs thoroughly with a fork. Keep it aside.
  3. Now put a pan on flame and allow it to become completely dry. Then add 1 tablespoon oil, 1 tablespoon butter into the pan and allow it to melt.
  4. Add finely chopped onions into the pan and fry it in medium flame for 4-5 minutes till translucent.
  5. Add 1 teaspoon grated ginger, ½ tablespoon finely chopped garlic into it and cook it for another 3-4 minutes until the raw smell goes away.
  6. Add finely chopped green chillies into the pan and give a nice mix.
  7. Add tomatoes and give a nice mix.
  8. Add salt, ½ teaspoon turmeric powder, 1 teaspoon red chilli powder and give a nice mix. Cook it over medium flame for 5-6 minutes until the tomatoes get mushy.
  9. Turn the flame low and add ½ teaspoon cumin powder, ½ teaspoon coriander powder, 1 teaspoon garam masala powder and give a nice mix. Cook it over low flame for another 1-2 minutes until the raw smell of the spices disappear.
  10. Pour the egg mixture (Step 2) into the pan and mix it with the masala. Keep stirring the content in low flame until you get the desire consistency. If you like soft bhurji then stop cooking when the egg gets set. If you like perfectly cooked egg bhurji then cook further until the eggs are nicely cooked and fluffy.
  11. Add 2 tablespoons finely chopped coriander leaves into the pan and give a nice mix.
  12. Check the salt and add more if required. Switch off the flame and egg bhurji is ready to serve now.


Serving Instruction

Transfer the egg bhurji recipe in a serving bowl or on a serving plate. Serve hot or warm to enjoy its best taste. Relish the egg recipe with pav, chapathi or any kind of Indian flat bread and enjoy the dish.
