Hello friends, today I have come up with a fresh and new recipe – One Pot Chicken-Cilantro-Rice with Leftover Chicken. It is a brilliant way to use any leftover or extra cooked Chicken. In this preparation, Rice is cooked in Cilantro paste with Onion, Garlic, Tomatoes and grilled Chicken slices. It is a one pot meal and does not require any sides for accomplishment.
Yesterday, I cooked some grilled Chicken which tastes superb next day after getting warmed in oven. But I decided to prepare something new and unique dish with those extra Chicken pieces and finally came out with the brilliant idea to prepare a one pot meal.
One Pot Chicken-Cilantro-Rice with Leftover Chicken is a very quick and easy recipe and gets prepared within half an hour. If you already have cooked Chicken, then I am sure nothing can be easier than this recipe. You would require very limited and common ingredients to prepare this delectable dish.

In this preparation, I have not used any whole spices for tempering. I have used readymade meat masala powder for flavouring. This spice has perfectly balanced flavour which goes outstanding with the dish and adds more flavour to the Chicken.
For One Pot Chicken-Cilantro-Rice, I have made a paste of fresh Cilantro leaves, Garlic cloves, green Chillies and Tomatoes for the masala. Cilantro paste gives better taste and aroma than chopped Cilantros for this recipe. I have also fried some Onion and then cooked the masala with Chicken.

What kind of Chicken to be used for the recipe?
To prepare this One Pot Chicken-Cilantro-Rice, there is no hard and fast rule to use only grilled Chicken. In fact, cooked Chicken, baked Chicken, grilled Chicken, roasted Chicken, boiled Chicken, any one of these are fine with this recipe.
It is even fine to use raw Chicken too. Just season them with Salt, Pepper, Garlic and shallow fry them. All in all, this is a full proof recipe which never go wrong.

What kind of rice gives best result for the dish?
I have used Basmati rice for this preparation. Basmati rice has its own aroma which goes superb with the dish and its thin and long grains of rice makes the dish more attractive and eye catchy.
You can also use other varieties if rice like sona masuri, jasmine etc. But Basmati rice gives best result for this dish.
Tip: For the best texture of Basmati rice, always soak them in normal water for half an hour and then drain the water. Don’t oversoak them or else rice may become soft and can break while cooking.

Ingredients:


For the masala paste
  • A handful of Cilantro
  • 1 Tomato, deseeded and diced
  • 1 Green chilli
  • 4-5 cloves of Garlic, peeled

Rest of the ingredients
  • 1 cup of Basmati rice
  • 2 Grilled Chicken breast, medium sliced
  • 1 large Onion, thin sliced
  • 2 teaspoons Meat masala
  • Salt to taste
  • Oil for cooking
  • 1 and ¾ cups of Water for cooking

Instructions:
  1. Wash the Basmati rice and soak it in water for 30 minutes.
  2. Strain the water and keep it aside.
  3. Discard the thick stems and roots of the Cilantros and wash them thoroughly.
  4. Put the Cilantro leaves, green Chilli, Tomato, Garlic into a jar of mixer grinder.

  5. Grind them for a minute until they become smooth paste. Add 2 tablespoons of water if required.

  6. Put the pan on flame and let the pan become dry.
  7. Add Oil into the pan.
  8. Once the Oil is hot, add Onions and fry them until they become translucent.

  9. Add the Cilantro paste (Step 5) into the pan and give a nice mix.

  10. Cook them in medium flame for a couple of minutes.
  11. Add the sliced grilled Chicken and mix them thoroughly.

  12. Cover the pan and cook them for 4-5 minutes in low flame. Stir occasionally if required.
  13. Add Meat Masala powder, salt and mix them nicely.

  14. Cook them in low flame for a minute.
  15. Add water and put the flame in high.

  16. Once the water simmers put the flame in low and add rice (Step 2).

  17. Cover the pan and cook them in medium high flame for 5 minutes.
  18. Stir the rice very gently once or twice and cover the pan again.
  19. Cook them in lowest flame for 4-5 minutes and switch off the flame. The duration of cooking may vary due to quantity, quality of rice and temperature of the hob. Always check the rice before switching off the flame.Tip: Basmati rice is very delicate. Over mixing can break the rice. Always handle the rice with light hands.


Serving Instruction
Transfer the portions of One Pot Chicken-Cilantro-Rice on serving plates and garnish with cilantro. Serve immediately for the best taste. Serve hot and enjoy your meal.
