Salmon in Apricot Sauce is one of the deadliest combinations of taste and health. In this recipe, the seasoned Salmon fillets are slowly cooked in Butter. The Apricot sauce served in this dish is the amalgamation of Apricot puree, freshly chopped Apricots, Garlic, Soya sauce and Lemon juice with some herbs and spices. It is mostly served as main course for lunch or dinner.
Salmon in Apricot Sauce is a very quick and easy preparation which can be prepared in minutes, with minimal effort. It can easily make your guests’ jaw hit the floor. To prepare this delectable dish, you would only need a handful of easily available ingredients.
I had Salmon for the first time in one of the reputed restaurants in London. I loved the flavour of the fish. I must accept that I have slowly been addicted to various Salmon preparations from then onwards.
Salmon in Apricot Sauce is a very special dish for me. It has not only helped me please my surprise guests many times but has also been able to amaze them with its unique taste. Specially during summers, when fresh Apricots rule the pantry of each house. But before jumping into the recipe, let me share few interesting facts about the “Hero” of the dish.

How to choose the best Salmon?
If you are going for a fresh whole fish
  • You must check the eyes of the fish first. The eyes should be clear and bright and not sunken.
  • The skin should be glossy and bright.
  • The body texture of the fish must be firm rather than droopy.
If you are going for fillets
  • The flesh of the fillet should have bright orange-red shade with nice marble like fibre.
  • There should not be any rancid smell.

Health benefits of Salmon
  • Salmon is the powerhouse of Omega 3 fatty acid which is very effective to reduce inflammation. It helps to control blood sugar level and many other diseases.
  • It is full of protein which helps our body to protect our muscles and bones.

How to perfectly pan fry Salmon fillets?
To perfectly pan fry Salmon, few things need to be taken care of.
  • Always pat dry the salmon filets with kitchen towels before adding seasoning.
  • Always fry the skin side down of the fillet first then turn the opposite side.
  • While frying the skin side down the skin is supposed to shrink. Press the fillet gently from the top to resist that.
  • Always fry the filets in medium low or low flame.
  • Don’t overcook the fish or fry them for a long period. It will lose its proper texture.

In this preparation, first I have seasoned the salmon filets with Salt, black Pepper and few drops of Lemon juice. Then I have taken a pan and fried the Salmon filets from both sides in butter.
To prepare the major element of the dish i.e. Apricot sauce, I have used both chopped fresh apricots and apricot puree. I have added Garlic, Soya sauce, black Pepper, smoked Paprika powder and dry Parsley for flavouring.
In this dish, I have also used fresh chopped Garlic. But you can also use Garlic powder instead of that. The garlicy flavour goes amazing with the sauce.
I have used Lemon juice, Salt and Sugar to the sauce to give a perfect balance of taste that complements the fish.

How to prepare Apricot Puree for the recipe?
  • To make the Apricot puree, first put the Apricots in boiling water and blanch them for a couple of minutes.
  • Then peel off the skin of the Apricots with the help of fingers and destone them too.
  • After this, transfer them into a mixing jar and grind them until they become smooth in texture.

  • They are low in calories and full of Vitamin C and Vitamin A. They are very good for our eyes and skin.
  • The minerals of the fruit help to control blood pressure and it is good for our heart too. Both dry and fresh Apricots are good for our health and both are easily adoptable in our regular diet.

Ingredients:


To season the Salmon
  • 2 salmon fillets, 220 grams
  • Pinch of crushed black peppers
  • ¼ teaspoon Salt
  • 1 teaspoon Lemon juice

Rest of the ingredients
  • 1 cup Apricot puree
  • 2-3 tablespoons ready to eat Apricot, peeled and chopped
  • 3-4 cloves of Garlic, finely chopped
  • ½ Lemon
  • 1 teaspoon Soya sauce
  • ½ teaspoon crushed Black Pepper
  • ¼ teaspoon smoked Paprika powder
  • ½ teaspoon Dry Parsley leaves
  • 1 tablespoon Sugar
  • Salt to taste
  • 1 cube of unsalted Butter, for frying the Salmon fillets
  • Olive oil for cooking
  • ¾ cup Water (This quantity may vary according to your desired consistency)

Instructions:
  1. Pat the Salmon fillets with kitchen tissue to remove the excess moisture.
  2. Season them with Salt, Pepper and Lemon juice.

  3. Take a pan and add 1 Butter cube in medium flame.

  4. Swirl it over the pan and let it melt and spread evenly.

  5. When the Butter starts bubbling add the Salmon fillets on the pan.

    Note: First put the skin side down to the pan.

  6. Cook them in medium low flame for 3-4 minutes. While the skin of the start shrinking, gently press over the fillets with the help of a turner for some time to restrict shrinking.
  7. Fry them till the skin become crispy and golden.
  8. Then turn the other side of both the fillets and fry them in lowest flame for 2-3 minutes.

  9. Transfer the Salmon fillets on a plate.

  10. On the other hand, put the fresh Apricots in boiling water and boil them for couple of minutes.
  11. Then rinse them in cold water and peel off the skin and destone them with the help of your fingers.

  12. Transfer them into a mixing jar of a grinder.

  13. Grind them until they become smooth puree.

  14. Add some Olive Oil into the same pan in medium high flame.

  15. Once the Oil is hot, add chopped Garlic and fry them till golden.

  16. Pour the Apricot puree (Step 13) into the pan.

  17. Cook them in medium low flame for 2-3 minutes till raw smell disappears.
  18. Add Soya sauce and mix them thoroughly.

  19. Cook them in low flame for a minute.
  20. Add smoked Paprika, dry Parsley and mix them nicely with the puree.

  21. Add water and mix them thoroughly. Make sure that there are no lumps.

  22. Once the water simmers, add Lemon juice and give a nice stir.

  23. Add black Pepper, Salt, Sugar and mix nicely.

  24. At the end, add fresh Apricot pieces and mix them nicely.

  25. Cook them in low flame for 1-2 minutes until the sauce thickens.

  26. Switch off the flame and keep the pan down.

Serving Instruction
Transfer the Pan-Fried Salmon on a serving plate and serve with Apricot sauce. Garnish with some fresh parsley leaves. Serve immediately for best result. Always serve Salmon in Apricot Sauce hot or warm and enjoy the taste of divine.
